This triple-tested fruit recipe combines delicious flavours that make a perfect starter choice.

Number Of Ingredients 7

1 Ogen melon
1 honeydew melon
1 charentais melon
4 balls of crystallised stem ginger in syrup, drained and cut into matchsticks, plus 1tsp syrup
1 tbsp. port
4 tbsp. extra-virgin olive oil
2 tsp. lemon juice

Steps:

  • Halve each melon, scoop out the seeds, cut each half into four wedges and remove the skin. Put the wedges on a tray and chill until required. (Melon is best served slightly chilled, not very cold.)
  • For the dressing, put 1tsp ginger syrup into a bowl with the port, olive oil and lemon juice. Season with salt and freshly ground black pepper and whisk well.
  • Arrange the melon wedges in groups of three on a large platter, making sure each group has three different types of melon. Sprinkle with the crystallised ginger. Drizzle the vinaigrette over and serve. How to Make a Simple Melon Starter. This simple melon recipe is versatile can be made in advance of a dinner party and can be served as either a refreshing starter or with a pudding. Serves 4. Cut the melons in half using a sharp knife.

2 small honeydew melons
1 grapefruit, peeled and segmented
2 oranges, peeled and segmented
50g (2oz) of roasted unsalted peanuts
25g (1oz) of light brown sugar
¼ teaspoon of ground cinnamon
Sprigs of fresh mint garnish

Steps:

  • Cut the melons in half using a sharp knife.
  • Scoop out the melon seeds and discard them.
  • Remove the melon flesh from the melon skins and chop the melon flesh into 1 inch (2.5cm) squares.
  • Wash the melon skins and put aside to use later.
  • Put the squares of melon into a clean bowl.
  • Add the grapefruit and orange segments to the bowl containing the squares of melon and gently mix together.
  • Put the melon skins onto each of the 4 serving dishes.
  • Pile the melon, orange and grapefruit mixture onto the 4 melon shells so that there are equal amounts divided between the 4 melon shells.
  • Chop the peanuts and put into a clean bowl.
  • Add the sugar and cinnamon to the chopped nuts and gently mix together.
  • Sprinkle the peanut mix over the fruit.
  • Add some of the fresh mint to garnish.

Olive oil, for drizzling
Parsley, for garnishing

Steps:

  • Peel the melon, remove the seeds and cut into 8 slices.
  • Wrap each melon wedge with a slice of Parma ham.
  • Drizzle the dish with olive oil and sprinkle with parsley and pepper. Serve immediately.
