SQUASH CASSEROLE
This creamy crowd-pleasing side dish features summer squash, carrot, stuffing mix and cheese baked in a creamy sauce. Crispy on top and creamy in the center, this favorite side dish is a winner on any menu.

Steps:
- Mix stuffing and butter. Reserve 1/2 cup stuffing mixture and spoon remaining into a 2 quart shallow baking dish.
- Mix soup, sour cream, yellow squash, zucchini, carrot and cheese. Spread over stuffing mixture and sprinkle with reserved stuffing mixture.
- Bake at 350 degrees F for 40 minutes or until hot.

- Preheat oven to 350 degrees F.
- Saute squash, onion, and pepper in a saute pan with olive oil until squash is soft. Add salt and white pepper. Put into a casserole dish. Mix the cheese and 1/2 cup of bread crumbs into the casserole dish with the vegetables. Sprinkle remaining 1/2 cup of bread crumbs on top of casserole. Bake until golden brown.

Steps:
- Saute squash and onion in olive oil; drain and put hot mixture in a bowl.
- Add egg, butter, mayonnaise, sugar, 1/2 cup cheese, cracker crumbs, garlic salt, salt and pepper; mix all together.
- Top with remaining 1/2 cup cheese and bake at 350 degrees for 20-30 minutes.

SQUASH CASSEROLE
Standard Southern treatment for yellow squash - delicious comfort food. It takes one "sleeve" of saltine crackers to make up the 1 1/2 cups of crushed saltines - depending on how finely you crush them and pack them down this amount may vary a bit. The recipe form won't let me put in "one sleeve of saltines", but that is the amount to use. Some people like a lot of pepper in their squash - if you like things less spicy I'd stick with the 1/2 teaspoon amount.

Steps:
- Preheat oven to 350 degrees.
- Place squash & onion in a large pot. Add 1/4 cup water. Cover & cook over medium heat, stirring often. Cook until squash is no longer white and hard in the center of the slices - about 5 to 10 minutes. Drain the squash well.
- When squash is tender, turn into mixing bowl. Mix with butter or olive oil and add salt and pepper.
- Mix in the milk, cheese and the saltines. Add garlic powder and tabasco. Mix well.
- Turn into baking dish greased w/ Pam. Top with bread crumbs.
- Bake @ 350 for 40 minutes.
- Let stand for 5 minutes before serving.
- ***This can also be cooked in the microwave. Place the mixture in a microwave-safe dish with a cover. Cover and bake on high for 10 minutes. Let sit for 5 minutes before serving.***.

- Bring a large pot of water to a boil, and add squash and onions. Boil for 5 minutes or 7 minutes if vegetables were frozen. Drain and set aside.
- Melt butter in pot over medium heat. Add flour; cook, stirring constantly for 1 minute. Very gradually add milk while constantly whisking. Cook, stirring constantly, until mixture is thickened and bubbly.
- Remove from heat; add cheese, salt, and pepper, stirring until cheese melts. Add in squash mixture, and stir well.
