ROUND WHOLE WHEAT LOAVES

Round Whole Wheat Loaves image

Honey lends a mildly sweet taste to this hearty golden brown bread that everyone enjoys. For holidays, Mom often formed the dough into crescent rolls that baked up beautifully.

Provided by Taste of Home

Time 1h

Yield 2 loaves.

Number Of Ingredients 10

4-1/2 cups all-purpose flour
1-1/2 cups whole wheat flour
2 packages (1/4 ounce each) active dry yeast
3/4 cup warm water (110° to 115°)
1 cup warm 2% milk (110° to 115°)
3/4 cup shortening
1/2 cup honey
2 teaspoons salt
3 eggs
1 teaspoon butter, melted

Steps:

  • In a large bowl, combine the flours; set aside. In a large bowl, dissolve yeast in warm water. Add the milk, shortening, honey, salt and eggs. Beat in half of the flour mixture until smooth. Stir in enough remaining flour mixture to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into round loaves. Place each loaf on a greased baking sheet. Cover and let rise until doubled, about 35 minutes. , With a sharp knife, make a deep X in top of each piece of dough. Bake at 375° for 30-35 minutes or until golden brown. Remove from pans to wire racks; brush with melted butter. Cool completely.

MEMORIES OF PROVENCE WHEAT LOAF

Memories of Provence Wheat Loaf image

I bought some Herbes de Provence, and adapted this recipe to make use of them. This makes a light wheat loaf and the taste and fragrance of the herbs really comes through. I often bake this as rolls for sandwiches. Prep time very approximate.

Provided by duonyte

Categories     Yeast Breads

Time 3h30m

Yield 1 loaf, 12 serving(s)

Number Of Ingredients 8

1/3 cup extra virgin olive oil
2 teaspoons herbes de provence
3 1/3 cups bread flour
1 cup whole wheat flour
2 1/4 teaspoons salt
1/4 ounce active dry yeast (1 pkg. or 2 tsp)
1 3/8 cups warm water
cornmeal, for dusting baking sheet

Steps:

  • Place the herbs in a small dish and pour in the olive oil. Allow to steep for at least 15 minutes, and the longer, the better.
  • Place all remaining ingredients except cornmeal in your bread machine following sequence recommended by manufacturer.
  • Start the dough cycle. As the dough mixes, drizzle on the olive oil until incorporated. The dough should form a smooth ball: add small amounts of flour or water (or additional olive oil) until the dough looks right - the exact proportions depend on many factors. Allow to rise in bread machine.
  • Remove from machine, punch down. If making a loaf, form into an oval loaf and place on cornmeal-dusted baking sheet. Cover and allow to rise until doubled. (If making rolls, cut into 8 to 12 pieces, depending on the size you want, and shape as desired. Place on cornmeal-dusted baking sheet, cover, and allow to rise until doubled).
  • Preheat oven to 375 deg. F.
  • Place in oven and bake for app. 40 minutes or until bread tests done. (Rolls will bake 20 to 30 minutes, depending on size - keep an eye on them).
  • You know you should let a loaf cool before cutting into it; but when you make rolls, one can always be sacrificed to the cause!
  • Note: I imagine you could bake this in the bread machine, although I've never done so. I'd do it on a basic white setting with medium crust.

2017-02-09 One quibble about the name of this bread: it’s not a whole wheat bread. It has rye flour. I dunno. Anyway, I thought I should try it since I did review Michael Pollan’s book, Cooked..
