- Season meat well with salt and pepper. Dredge in flour and shake off. In a large skillet with a tight-fitting lid, melt butter. Add beef and brown on all sides. Add onions, carrots, and broth and bring to a boil. Cover, reduce heat to low, and simmer for 1 hour. Remove lid and add halved Brussels sprouts. Increase heat to medium-high and bring to a boil. Stir in sauce mix and simmer for 3 minutes, or until sauce thickens. If sauce becomes too thick, thin with a little water. Meanwhile, microwave potatoes according to package directions. Serve hot beef and vegetables over heated mashed potatoes.

- Cook ground beef in a skillet until lightly browned, using fat if necessary. Add onion, celery, and green pepper. Cook until onion is soft and translucent. Blend in flour, then add hot water in which bouillon cube has dissolved. Cook and stir until slightly thickened. Add remaining ingredients. Cover. Simmer over low heat for 30 minutes. Serve over fluffy rice, fried noodles, or mashed potatoes.
CHICKEN FRICASSEE
Steps:
- In a large Dutch oven, heat the oil. Brown the chicken and set aside.
- Preheat oven to 375 degrees F.
- In the same pan add more oil, if necessary, and add the peppers, onions, and garlic. Cook until the vegetables start to soften and caramelize, about 5 minutes. Add the ground cumin, coriander, and cayenne. Cook for another 5 minutes. Remove the pepper mixture and puree until smooth in a food processor and set aside.
- In the same pan, add the chicken back in, along with the malanga, green plantain, and calabaza. Pour in the chicken stock and the pureed pepper mixture (sofrito). Cover and cook in the oven until the chicken is falling off the bone and the vegetables are tender, about 1 hour.
- Serve garnished with chopped cilantro.

- In large skillet, heat olive oil over high heat, add diced potatoes and fry until golden.
- Add onions fry for two more minutes, add ground beef fry until golden brown and cooked through.
- Add celery, green pepper and cabbage, cook for a few minutes.
- Add seasoning, salsa, water, cover and simmer for 15 minutes.
- Incorporate sour cream.
- Serve with a dollop of sour cream and chopped chives.

MEXICAN BEEF SUPREME
My boyfriend is from Mexico and he whipped this up one night and it turned out great. Beef, onions, garlic and peppers cooked in a delicious salsa verde sauce. Serve with rice, beans and tortillas. You may also add some sour cream to the sauce to make it creamier or add it after as a garnish.

- Heat olive oil in a large skillet over medium-high heat. Add the onion, and cook for a few minutes, then stir in the beef, and garlic. Cook, stirring frequently until meat is evenly browned.
- While the meat is cooking, stir together the lime juice, jalapeno, cilantro and green onion. When the meat is browned, stir in the cilantro mixture and oregano. Pour in the salsa, cover and cook for about 10 minutes, stirring occasionally, until the meat is cooked through.
