Baked Breakfast Potatoes image

We love to have these breakfast potatoes on Saturday mornings with our eggs. Very tasty, easy to make, and filling!

10 medium red potatoes, cubed
½ yellow bell pepper, chopped
½ red bell pepper, chopped
½ onion, chopped
½ cup chopped fresh basil
½ tablespoon minced garlic
2 tablespoons olive oil, or as needed
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon paprika
½ cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Grease a large nonstick baking dish.
  • Combine potatoes, bell peppers, onion, basil, and garlic in a large mixing bowl. Lightly coat with olive oil. Sprinkle salt, black pepper, and paprika on top and toss to coat. Place in a single layer onto the prepared baking dish.
  • Bake in the preheated oven until potatoes are golden brown and soft, 45 minutes to 1 hour. Remove from the oven and mix in Cheddar cheese. Return to the oven and bake for an additional 5 minutes. Serve.

4 medium potatoes, with peel
4 tablespoons butter
7/8 ounce taco seasoning
1 lb lean ground beef
1/2 cup chopped onion
2 cups salsa
1 cup red pepper, chopped
1 cup monterey jack cheese, grated

Steps:

  • Cut potatoes into bite-size pieces and place in greased casserole dish.
  • Melt butter. Stir in taco seasoning.
  • Pour over the potatoes and stir to coat well.
  • Bake uncovered at 425 degrees Fahrenheit for 40 minutes.
  • Stir -- bake 10 minutes longer.
  • Brown and crumble beef; add onion and cook until soft -- then drain.
  • Stir in salsa and chopped peppers.
  • Pour over potatoes.
  • Top with grated cheese.
  • Bake uncovered for 10 minutes.

  • Cook the sausage in a large sauté pan over medium-high heat until browned, crumbling the sausage as it cooks. Use a slotted spoon to transfer the sausage to a clean plate, reserving a tablespoon or so of grease in the sauté pan. (Or if there is no grease remaining, add a tablespoon of oil to the pan.)
  • Add the onion and pepper and sauté for 5 minutes, stirring occasionally, until softened. Add the garlic and sauté for 1-2 minutes more, stirring occasionally, until fragrant.
  • Add in the salsa, beans, corn, cumin, salt, cooked sausage, and stir until the mixture is completely combined. Remove pan from the heat, and set aside.

  • Dice up the potatoes into bite sized chunks, somewhere between 1/4" and 1/2" wide. Dice up the poblano and 1/2 onion into slightly smaller sized chunks (be sure to discard the poblano seeds.)
  • In a mixing bowl combine the potatoes, poblano, 1/2 onion, 4 whole peeled garlic cloves, 2 tablespoons olive oil, 1 teaspoon salt, and freshly cracked black pepper. You can optionally add 1/2 teaspoon of hot chili powder.
  • Spread the mixture into an even layer on a baking sheet. (I line the baking sheet with parchment paper for easier cleanup but cooking them directly on the pan will crisp them up more.)
