SCRAMBLED EGGS WITH CHORIZO

Steps:
- Heat a medium nonstick pan over medium heat and add chorizo. Cook, using the back of a spoon to break it up, until cooked through, about 2 to 3 minutes. Add eggs and cook stirring occasionally, until set, about 3 more minutes. Serve garnished with scallions, cilantro, and sour cream.
MEXICAN CHORIZO & EGG SCRAMBLE
I make this fairly often. It's good, easy, and quick...great anytime of the day. I've used chorizo and sausage with equal success and I've used black beans, pinto beans, and kidney beans in replace of the refried...I just like the chorizo better and the refried beans work well. Great on it's own or as a breakfast burrito filler...ENJOY!

Steps:
- Remove casings from chorizo (if any) and cook thoroughly in large pan.
- Add Rotel's, beans, and eggs.
- Cook over med-high heat stirring often until eggs are cooked.
- Add cheese, cover and let sit over low heat until melted.
- Top as wished or wrap up in a tortilla and ENJOY!

- Heat chorizo in oil, fry until browned, drain off any excess oil; add onion cook 2-3 min., then add chilies.
- Beat eggs well and cook scrambled style in a medium sized skillet,when almost done, fold in cheese, chorizo mixture & lastly cilantro leaves.
- The meat/egg mixture can be served as is with avacado and salsa on the side or rolled in a flour tortilla, burrito style garnished with avacado & salsa.

- If using Spanish chorizo, finely chop, then cook in oil in a 12-inch nonstick skillet over moderate heat, stirring, until browned, 4 to 5 minutes. If using Mexican chorizo, remove from casings and cook (without oil) in skillet, stirring and breaking up meat, until bubbling and completely separated, 4 to 5 minutes.
- Whisk eggs together in a bowl and stir into chorizo. Cook, stirring, until eggs are scrambled and just set, about 5 minutes. Serve immediately.

- Heat a medium-size skillet at medium high heat. While the skillet is getting hot, crumble the chorizo apart to help you cook it evenly. You can also do this once the chorizo is already cooking in the frying pan.
- Add the crumbled chorizo and cook evenly. The time you will cook the chorizo for will be about 4 minutes. If you still have pieces of chorizo that are bigger than others, try to break them apart with a wooden spoon to make them small. This will help them cook evenly.
- Once the chorizo is cooked, crack the eggs and add them to the frying pan, but do not stir them at first. Season the eggs and chorizo with salt. Wait for about one minute, then proceed to scramble the eggs. Gently stir the eggs to combine them with the chorizo. Keep cooking and stirring until the eggs are done to your liking. I like my eggs cooked tender, and that takes less than 2 minutes.
