MEXICAN BREAKFAST CASSEROLE
Steps:
- Roast the peppers by placing them on an open gas flame, turning them frequently with tongs until all sides are charred black, about 7 to 10 minutes. (Alternately, the peppers can be roasted under a broiler, or on top of a gas or charcoal grill.) Place the blackened peppers in a plastic or paper bag, and let rest until cool enough to handle, about 15 minutes. Peel the peppers, split in half lengthwise, and remove the seeds and the stems.
- Butter a 9 by 13-inch baking dish. Spread the chiles in a flat layer across the bottom of the dish.
- In a large skillet, cook the sausage over medium-high heat, stirring to break up the meat, until browned. Add the onions and bell peppers, and cook, stirring, for 4 minutes. Add the garlic and chili powder, and cook, stirring, for 1 minute. Remove from the heat.
- In a large bowl, whisk the eggs and half-and-half with the hot sauce, salt and black pepper.
- In another bowl, combine the green onions, cilantro, jack, and cheddar, and mix well.
- Spoon 1/3 of the sausage mixture over the chiles in the dish, top with 1/3 of the tortilla quarters, and 1/3 of the cheese mixture. Repeat layering, ending with a cheese layer. Pour the egg mixture over the ingredients. Let rest, covered, in the refrigerator for at least 6 hours, or overnight.
- Preheat the oven to 350 degrees F.
- Bake until bubbly and golden brown, and a knife inserted into the custard comes out clean, about 1 hour and 10 minutes to 1 hour and 15 minutes. Remove from the oven and let rest 10 minutes before serving. Serve with sour cream and picante sauce.
MEXICAN FIESTA CASSEROLE
I adopted this recipe in February 2005. While I'm not much of a casserole person, this one looks to be pretty good.

FIESTA BREAKFAST BAKE
I get a kick out of making breakfast for a crowd when I have weekend guests, and my family also loves breakfast for dinner. I created this dish by combining my family's favorite southwestern flavors in an all-in-one-pan recipe.-Whitney Gilbert, Smithville, Missouri

Now add the Ground Beef or Turkey to the sauté pan and brown the meat. Drain then add the Taco Mix and the Water and heat until thickened. Remove the pan from the heat and cool slightly. 4. In a small bowl combine the Sour Cream and the Fiesta Nacho Cheese Soup, set aside. 5. Add the Corn and the Rice to the bowl with the Peppers and Onion. 6. Now stir the Soup mixture in with the Corn and Rice mixture. Add 1 Tablespoon of the Chopped Cilantro into the mixture as well. 7. Spray a 9 x 13 baking dish with nonstick cooking spray. Transfer the Rice and Corn mixture into the bottom of the pan and spread into an even layer. 8. Next spread the Ground Beef or Ground Turkey mixture evenly over the first layer. 9. Cover the baking dish with foil and pop it into the preheated oven and bake for 30-40 minutes. All ovens cook differently so check at 20 minutes. You want the Casserole to be heated through and slightly bubbly. 10. When the Casserole is done remove it from the oven, remove the foil and evenly spread the Cheese on top of the Casserole. 11. Bake an additional 10-15 minutes or until the Cheese is melted. 12. Remove the Casserole from the Oven and sprinkle the Cilantro, Black Olives and Tomatoes on top. 13. Wait 5-8 minutes before serving. If you cut into the Casserole right away, it can fall apart, just like lasagna! ~ Serve this Casserole with a side of Sour Cream.
