ALL-PURPOSE MEXICAN SEASONING
Don't buy MSG-loaded Adobo, Sauzon, or store-bought fajita seasoning. Combine with oil and use it to marinate corn, chickpeas, potatoes, and beans for a crispy healthy snack, and it's also great for tacos, fajitas, quesadillas, and I swear by this seasoning for my arroz con frijoles. It works for other Latin American foods too.

SEASONED TATER TOTS (MEXI-FRIES)
I've found a few recipes online for Mexi-Fries, but few made them exactly like our local Taco Time restaurant. So I tried this recipe, and it's better than most other recipes I found online. It makes a quick and easy side dish to go with tacos or other simple Mexican dishes, or whenever you want to spruce up plain Tater Tots.

MEXICAN STIR-FRY
A tasty blend of peppers makes this skillet meal popular at Becky Taaffe's home in San Jose, California. "Not only have I prepared it for everyday meals, but also for church dinners, potlucks and family get-togethers. There are never any leftovers," she reports.
