CHORIZO HASH BROWNS

Chorizo Hash Browns image

Provided by Marcela Valladolid

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 7

2 russet potatoes, peeled
1/2 cup all-purpose flour
2 eggs
6 ounces raw beef chorizo
1/2 small white onion, chopped
Salt and freshly ground black pepper
1 cup oil or as needed, for frying

Steps:

  • Using a box grater or shredding blade of a food processor, shred the potatoes. Rinse until the water is clear. Drain. Dump the shredded potatoes onto a clean kitchen towel. Squeeze to remove all excess water. Add the shredded potato into a large mixing bowl along with the flour and eggs. Mix well.
  • Cook the chorizo in a large nonstick skillet over medium heat, breaking any lumps, until it begins to crumble and is cooked through. Add the onions and saute until translucent, about 3 minutes. Season with salt and pepper. Add the chorizo-onion mixture to the shredded potatoes. Mix to combine.
  • Heat about 1/4 inch of oil in a large, heavy skillet over medium-high heat. When the oil is sizzling hot, place the mixture in separate piles like pancakes. Cook until nicely browned on the bottom, then flip over and brown on the other side. It should take 3 to 5 minutes per side. Transfer hash browns to a paper-lined plate and drain. Season with 1/2 teaspoon pepper and serve immediately.

Time 30m

Yield 4 servings

Number Of Ingredients 10

1 lb. lean ground beef
1/3 cup chopped onions
1 clove garlic, minced
1 can (8 oz.) tomato sauce
1 tsp. chili powder
1 Tbsp. butter
1 Tbsp. oil
4-1/2 cups ORE-IDA Shredded Hash Brown Potatoes
1 large tomato, sliced
1 cup KRAFT Mexican Style Finely Shredded Four Cheese

Steps:

  • Brown meat with onions and garlic in large saucepan; drain. Return meat mixture to pan. Stir in tomato sauce and chili powder. Bring to boil; simmer on medium-low heat 10 min. or until most the liquid is cooked off, stirring occasionally.
  • Meanwhile, melt butter with oil in large ovenproof nonstick skillet on medium-high heat. Stir in potatoes; spread to form even layer on bottom of skillet. Use back of spatula to press potato mixture onto bottom of skillet. Cook 5 min. on each side or until golden brown on both sides, reducing heat if potatoes are browning too quickly.

Time 30m

Yield 4

Number Of Ingredients 8

12 ounces uncooked chorizo sausage
¼ cup chopped onion
2 teaspoons vegetable oil

MEXICAN HASHBROWN POTATO CASSEROLE

Mexican Hashbrown Potato Casserole image

This is the first recipe of my own that I've shared with anybody. This is a great, easy casserole that uses up that partial bag of frozen hashbrowns in your freezer. Tastes really good and is very flexible. Any ingredient can be substituted or omitted and quantities are flexible to taste. As a vegetarian, I made it veggie...but you can easily brown ground beef or chicken and add it to the mixture before baking. I hope you enjoy it!
