A family recipe passed down from my Grandmother - this beef mix makes good hamburgers, and a pretty decent meatloaf. Use your imagination for different toppings (such as salsa or Campbells Pepperjack Cheese soup for your meatloaf) Both - freeze well for future use

1 lb hamburger
1/2 cup breadcrumbs
1 egg
1/2 teaspoon salt
1/2 teaspoon black pepper
1 onion, small diced
1 green pepper, diced
1/2 teaspoon dried sage
3/4 teaspoon ground cinnamon
1/2 teaspoon crushed red pepper flakes

Steps:

Mix all ingredients.
form into your hamburger patties, or meatloaf (it's your choice).

Ingredients

1 cup chopped onion
2/3 cup chopped celery
2/3 cup chopped green pepper
3 Tablespoons butter
2 pounds ground beef
2 to 3 teaspoons chili powder
2 teaspoons salt
1/2 teaspoon thyme
1/4 teaspoon pepper
1 6-ounce cans of tomato paste
1/2 cup catsup
2 cups water
2 teaspoons Worcestershire sauce
Dash Tabasco sauce
2 6-ounce packages corn chips
Shredded sharp American cheese

Steps:

In large skillet, cook onion, celery and green pepper in butter until tender, but not brown. Add beef, and brown lightly. Add remaining ingredients except chips and cheese. Simmer uncovered 1 hour, stirring occasionally. Serve on corn chips. Top generously with cheese.

Won Ton Wrappers
1 lb. bulk italien sausage
1 Cup bottled salsa
1 cup cheddar cheese, shredded
Sour cream and cilantro for garnish

Steps:

Brown sausage in small saucepan. Drain well of grease. Add salsa and chedder cheese and cook until cheese is melted. Spray miniature muffin tins with Pam or similar product. Place won ton wrappers in each cup. Add prepared meat. CAn be made ahead to this point and refrigerated. Bake in 350 degree oven for ten minutes. Take the won tons out of the muffin tins and place on cookie sheet - place back in oven for 10-15 minutes until outside of won tons are lighlty brown. Remove from oven, garnish with sour cream and cilentro.

4 large baking potatoes
1 pound ground beef
1 can (16 ounces) bold sloppy joe sauce
1/2 cup shredded cheddar cheese
3 green onions, thinly sliced

Steps:

Scrub and pierce potatoes; place on a microwave-safe plate. Microwave, uncovered, on high for 15-17 minutes or until tender, turning once., Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Stir in sloppy joe sauce; heat through. , Cut an "X" in the top of each potato; fluff pulp with a fork. Spoon meat mixture into potatoes; sprinkle with cheese and green onions.

1 (8 ounce) container sour cream
1 (9 ounce) can bean dip
0.5 (1 1/4 ounce) package taco seasoning mix
1/2 cup chopped green onion
10 drops Tabasco sauce
1 cup grated cheddar cheese
1 cup grated monterey jack cheese

Steps:

Preheat oven to 350º.
Mix all ingredients with half of the cheeses.
Place mixture in 13x9 pan and sprinkle with remaining cheeses.
Cover with foil and bake for 20 minutes.
Serve with tortilla chips.
