MEXICAN FOUR CHEESE POTATOES AU GRATIN
Steps:
- Stir the queso, broth and cream in a medium bowl.
- Put half of the potatoes in a 2-quart shallow baking dish. Pour half of the queso mixture over the potatoes. Repeat with the remaining potatoes and queso mixture.
- Bake at 350 degrees F for 50 minutes or until the potatoes are tender. Let stand for 10 minutes.
MEXICAN POTATOES WITH CHEESE - PAPAS CON QUESO
This is another simple yet delicious authentic dish from Zacatecas Mexico that my mother taught me how to make! It is important to know that this recipe won't work well if you don't use queso fresco. You must use this type of cheese specifically for the recipe to incorporate well, other wise it wont come out. Makes a great side dish.

Steps:
- Bring jalapenos and tomatoes to a boil.
- In blender add water, onion, garlic, cumin, chicken bouillon powder, can of tomato sauce and blend well.
- Add boiled jalapenos and tomatoes and pulsate the blender 2 or 3 times just so that the tomatoes and the peppers are still chunky in the sauce. Set aside.
- In skillet fry the potatoes until they start to look translucent and remove from fire. It is very important you do this. Don't fully cook them or else they will end up like mulch latter.
- Transfer the semi cooked potatoes to a bigger sauce pot and pour the sauce.
- Add cheese and stir well. If needed at salt to taste and bring to a boil.
- Serve hot and enjoy with warm tortillas!

This recipe comes from "Preserved" by Nick Sandler and Johnny Acton. I haven't made it, but it sounds like a good vegetarian main dish or go with anything side dish. The recipe calls for 8 potatoes, but the authors fail to specify a size or weight. As there is no instruction to cut or slice the potatoes, my guess is that you'll need 8 medium potatoes or between 1 and 1 1/2 lbs, depending on how and what you plan to serve this with. - Mix the lemon juice and dried chillies in a bowl, season with salt and pepper, add the onion rings and leave to marinate until required (you could do this step more in advance if you like).
- Boil the potatoes in lightly salted water for about 15 minutes, or until cooked.
- While the potatoes are cooking make the sauce by combining all the ingredients except the olive oil in a blender; then heat the oil in a pan, add the blended sauce ingredients and simmer for about 5 minutes until the sauce thickens.
- TO ASSEMBLE THE DISH: drain the potatoes and place in a warmed serving dish, pour the sauce on top; drain the onion rings and scatter them and the chili strips over the top of the dish; garnish with hard-boiled eggs and olives.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 3-quart baking dish.
- Melt butter in a large saucepan over medium-high heat. Saute onion, garlic, and thyme in hot butter until onion is tender, 3 to 5 minutes. Whisk flour, salt, and black pepper into onion mixture.

- Preheat oven to 350F. Meanwhile on a gas stove on high or skillet heat chiles directly on flame until charred. Keep in plastic bag for 5 minutes. Peel chiles under cold water.
- Open on one side, remove seeds. Fill each poblano with 3 strips of the cheese. Sprinkle about 2 tablespoons shredded mozarella cheese on each chile. Place in 9x13-inch glass baking dish.

(Can be prepared 2 hours ahead. Let stand at room temperature. Cover and rewarm in 375°F oven about 20 minutes.) Remove from oven; let stand 15 minutes before serving.

- In a large skillet melt the butter over low heat. Blend in the flour, cumin, garlic, powder, and salt. Add all of the half and half at one time. Turn the heat up to medium-high and cook a couple of minutes until the mixture thickens and bubbles.
- Add 2 cups of the Mexican cheese and mix until the cheese is melted and blended in. Add the potatoes, peppers and onions mix in. Pour the potatoes into the prepared baking pan.
- Place in the preheated oven and bake for 1 hour and 10 to 15 minutes or until potatoes are tender. Remove the potatoes and top with the remaining 2 cups of Mexican cheese and continue to bake for about 10 minutes or until cheese is melted.
