MEXICAN CREAM CHEESE SHRIMP DIP
Take your usual cocktail sauce shrimp dip up a notch with this Mexican Cream Cheese Shrimp Dip recipe. It's perfect for any get together or party!

Steps:
- Combine cooked shrimp, red onion, cucumber, tomatoes, cilantro and jalapeno in a mixing bowl. Toss to combine.
- In a separate bowl, whisk together lime, tomato juice, ketchup, hot sauce and Kosher salt.
- Pour tomato mixture over fresh veggies, toss gently to combine.
- Cover and refrigerate for 1-24 hours.
- Toss to refresh when ready to serve. Drain excess liquid.
- Spoon on top of softened cream cheese.
- Top with freshly chopped avocado and scallions and serve with saltine crackers and/or tortilla chips.

MEXICAN-STYLE SHRIMP COCKTAIL
Here's a tasty twist on a classic starter. This dish combines deliciously diverse Mexican flavors, from fresh cilantro to authentic hot sauce. The textural contrast of crunchy jicama and creamy avocado makes this a uniquely tasty cocktail sauce for any poached seafood.

- Bring 1 quart (1L) of salted water to a boil. Add the shrimp and let the water return to a simmer and poach for an additional minute or two. Scoop the shrimp out and place onto a rimmed baking sheet and chill 30 minutes. The shrimp can be made a day in advance and chilled until ready to serve.
- For the sauce, stir together the ketchup, lime juice, the Mexican hot sauce, olive oil and cilantro in a large bowl. This step can be completed a day in advance, stored in the refrigerator in an airtight container.
- In a small strainer, rinse the onion under cold water, then shake off the excess liquid, and add to the sauce. Peel, dice and add the jicama; dice and add the cucumber. Stir in the chilled shrimp and the avocado right before serving.
- Garnish with lime and serve with tostadas, chips, or saltine crackers.
SHRIMP DIP WITH CREAM CHEESE
This tasty spread, prepared with softened cream cheese, is a beautiful pale salmon color. A teaspoon of Worcestershire sauce provides just the right amount of zest.

This is a great recipe for parties and family gatherings. You can make it as spicy as you like, by changing the type of salsa you use. The best salsa to use is one that is chunky. I serve my dip with corn chips. I got the idea by attending a party where salsa was simply poured over blocks of cream cheese.

- Whip softened cream cheese in a food processor for approximately 2 minutes, or until fluffy and no lumps are present.
- Add salsa and cilantro leaves.
- Blend again for approximately 1 minute, until mixture is an even color.
- Add shrimp and mix only long enough to incorporate into mixture (over mixing will cause shrimp to break up into small pieces).
- Transfer mixture to glass bowl or serving dish and refrigerate for approximately one hour.
- Garnish with a few cilantro leaves.
- Serve chilled with corn chips.

I first tried something similar to this in San Antonio and could never find a recipe that really recaptured what I had there. I experimented and finally came up with this. Anyone who has tried it has begged for the recipe. Try it with tortilla chips!
