Raw Corn Variation 2 oz. Fresh Corn Milk (see directions below) Kernels from 1 Ear of Fresh Sweet Corn 1½ oz. Exotico® Blanco 1 oz. Fresh Lime Juice ½ oz. Orange Liqueur ¼-½ oz. Agave Syrup (depending on your sweetness preference) ½ Jalapeño
for Muddling (optional) ¼ oz. Fresh Cilantro
for Muddling (optional) ½ oz. Coarse Salt Mixed with ½ oz. Chili Pepper
for Rimming the Glass Fresh Corn Kernels
Edible Blooms and Pinch of Salt/Chili Mixture
for Garnish

Steps:

  • Corn Milk Directions: Slice all kernels from one ear of corn and toss them in a food processor. Process until liquified, about 30 seconds, then strain the mixture through a fine mesh strainer. Discard solids. Yields approximately 2 oz. Margarita Directions: Run a lime slice around the edge of the glass and dip it in the salt/chili pepper mixture. Fill the glass with ice. If you want cilantro or some jalapeño heat, muddle one or both ingredients in the bottom of your shaker. Add ice, followed by the corn milk, Exotico® Blanco Tequila, lime juice, orange liqueur, and agave syrup and shake until chilled. Strain into the prepared glass. Garnish with corn kernels and edible blooms, plus a pinch of the salt/chili mixture.

4 ears corn, with husks
lukewarm water, as needed
2 tablespoons sea salt
2 grated lime zest
¼ cup butter, melted
2 teaspoons chili powder

Steps:

  • Peel back the husks of each ear of corn, leaving them attached at the bottom. Remove the corn silk strings around the kernels. Return the husks back around the corn. Soak corn in a bowl of lukewarm water for 1 hour.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Mix salt and lime zest together in a bowl.
  • Remove corn from water and peel back husks, keeping them attached at the bottom. Pat corn dry using paper towels, leaving the husks wet. Brush the corn with melted butter and sprinkle lime salt and chili powder over the entire surface of each cob of corn.
  • Cook corn on the preheated grill, turning occasionally, until tender, about 25 minutes.

2 tablespoons corn oil
1/2 cup mayonnaise
1 teaspoon chili powder
1 teaspoon garlic salt
Freshly ground black pepper
1 lime, quartered

Steps:

  • Preheat a grill pan. Rub corn with oil and place on the grill pan, turning corn so all sides are charred, about 6 to 10 minutes. Meanwhile, mix together mayonnaise, chili powder, garlic salt, and black pepper. Remove corn from grill and brush with the mayonnaise mixture. Serve with lime quarters to squeeze over corn.

6 tablespoons unsalted butter
¼ cup crumbled Cotija cheese
¼ cup chopped fresh cilantro
2 teaspoons chili powder
2 limes, juiced

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place corn, in husks, directly on the oven rack.
  • Roast in the preheated oven until tender and cooked through, 40 to 45 minutes.
  • Peel down husks and rub each ear of corn with 1 tablespoon butter. Sprinkle each with Cotija cheese, cilantro, chili powder, and lime juice. Serve.

This fast to prepare side dish takes on the flavors of elote, a popular Mexican favorite!

2 tablespoons olive oil
2 (16 ounce) packages frozen corn
¼ cup crumbled cotija cheese
¼ cup minced red onion
2 tablespoons finely chopped cilantro
3 tablespoons mayonnaise
2 tablespoons sour cream
2 tablespoons lime juice
½ teaspoon ground cumin
½ teaspoon smoked sweet paprika
¼ teaspoon chili powder
¼ teaspoon salt
1 pinch ground coriander

Steps:

  • Heat a 14-inch skillet over medium-high heat. Add olive oil and swirl to coat the bottom of the skillet. Spread frozen corn evenly across the skillet; do not stir. Cook corn for approximately 8 minutes.
  • Meanwhile, combine mayonnaise, sour cream, lime juice, cumin, paprika, chili powder, salt, and coriander in a large bowl. Set aside.
  • Check the corn; it should be slightly charred. If not, allow to continue cooking for 4 more minutes (stirring is fine at this point.)
  • Once corn is sufficiently browned/charred, transfer to the bowl with dressing and toss to coat. Add cotija cheese, red onion, and cilantro and mix until well combined. Serve immediately.

2 tablespoons olive oil
1/2 cup mayonnaise
2 to 3 teaspoons chili powder
6 tablespoons Cotija cheese
1/2 cup fresh cilantro leaves

Steps:

  • Carefully peel back corn husks to within 1 in. of bottoms; remove silk. Brush corn with oil. Rewrap corn in husks; secure with kitchen string. Place in a Dutch oven; cover with cold water. Soak 20 minutes; drain., Grill corn, covered, over medium heat 25-30 minutes or until tender, turning often. Peel back husks. Spread mayonnaise over each ear; sprinkle with chili powder, cojita cheese and cilantro. Squeeze lime wedges over corn before serving.
