A twist on classic elotes, this Mexican Street Corn Pasta Salad is full of all the traditional flavors with a few fun twists! It's sweet from the corn, smoky from the spices, and loaded with amazing textures and flavors thanks to bow tie pasta, black beans, peppers, and fresh herbs! The perfect summer side dish.

1/2 cup mayo
1/2 cup sour cream
1/4 cup lime juice (plus more to taste)
2 teaspoons garlic powder
2 teaspoons ground cumin
2 teaspoons chili powder
1 teaspoon smoked paprika
1/2 teaspoon cayenne (omit if you don't like spicy)
1 1/2 teaspoons salt (plus more to taste)
1 (16 oz) box bow tie pasta ( cooked al dente according to package directions)
2 (15 oz) cans corn (drained)
1 (15 oz) can black beans (rinsed and drained)
1 red bell pepper (diced)
1 green bell pepper (diced)
1/2 cup crumbled feta or cotija
1/4 cup chopped cilantro
2 tablespoons sliced green onions
1/4 cup or more reserved pasta water (if needed)

Steps:

  • Whisk together mayo, sour cream, lime juice, garlic powder, cumin, chili powder, smoked paprika, cayenne, and salt in a very large bowl.
  • To the bowl, add in pasta, corn, beans, bell peppers, feta, cilantro, and green onions.
  • Stir to combine.
  • Cover and chill in the fridge until ready to serve.
  • Taste and re-season with salt, lime juice, etc. if necessary. If dressing seems too thick, thin it out with reserved pasta water.
  • Serve and enjoy!

1 lb uncooked pasta
1 tablespoon butter
3 ears fresh sweet corn, husks removed
1/2 cup mayonnaise
1/4 cup chopped fresh cilantro leaves
1 package (1 oz) Old El Paso™ original taco seasoning mix
1 can (4.5 oz) Old El Paso™ chopped green chiles
1/4 cup crumbled queso fresco cheese

Steps:

  • Cook and drain pasta as directed on package. Cool 10 minutes.
  • While pasta is boiling, heat 10-inch skillet over high heat. Add butter and corn to skillet. Char the corn on each side, about 10 minutes total. Cut corn off cobs; place in large bowl.
  • Add cooked pasta to bowl. Top with remaining ingredients. Stir well to combine.
  • Refrigerate about 4 hours or until chilled before serving.

I'm not sure where in Mexico this is eaten, but it doesn't matter, it's good! Adapted from Gourmet magazine (2006). I find the cotija cheese in super Walmart (or use feta). Cook time is estimated for cooking of corn.

¼ cup crumbled Cotija cheese
¼ cup chopped fresh cilantro
2 teaspoons chili powder
2 limes, juiced

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place corn, in husks, directly on the oven rack.
  • Roast in the preheated oven until tender and cooked through, 40 to 45 minutes.
  • Peel down husks and rub each ear of corn with 1 tablespoon butter. Sprinkle each with Cotija cheese, cilantro, chili powder, and lime juice. Serve.

This Mexican street corn pasta is THE BEST! It's full of cherry tomatoes, black beans, sweet corn, a little bacon, and a deliciously creamy sauce.

12 ounces dry pasta (gluten-free, if needed)
4 strips bacon
3 cups corn ((see notes))
4 green onions (chopped (Greens and whites separate))
1 tablespoon chili powder
1 teaspoon black pepper
½ teaspoon sea salt
15 ounce can of black beans (drained and rinsed)
2 cups cherry tomato halves
½ cup sour cream
¼ cup mayonnaise
½ cup chopped cilantro
½ cup crumbled queso fresco or feta cheese
¼ cup lime juice

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook according to package directions until al dente. Reserve 1 cup of the cooking water then drain the pasta. Return the pasta to the pot and toss with a little olive oil to prevent the pasta from sticking together.
  • While the pasta is cooking, cook the bacon in a large frying pan over medium heat until crispy. Remove from the pan and crumble when it's cool enough to touch.
  • Remove all but 2 tablespoons of the bacon oil from the pan. Increase the heat to medium-high then add the corn and stir so that it is coated in the oil then let it cook undisturbed for 4-5 minutes, or until some of the kernels become golden on the bottom. Add the white and light green parts of the green onions, chili powder, pepper, and salt to the pan and stir.
  • Add the black beans and cherry tomatoes to the pan and cook until they're warm. Add the sour cream and mayonnaise and stir until warm, about 1 minute.
  • Add the corn sauce to the pot with the pasta and add the cilantro, cheese, and lime juice. Stir well then season to taste with more salt and pepper, if needed. If the pasta seems a little too thick, use some of the reserved pasta water to loosen it.

Now, thanks to a few hearty additions, you can turn this street snack into a filling dinner! Bell pepper, jalapeño, and paprika infuse this pasta with not-too-spicy chili flavor, while sweet corn and penne balance the heat. Then pasta is swirled with cream sauce, cream cheese, and pepper jack for a dreamy take on a traditional fave-right from the comfort of your own casa!

1 unit Bell Pepper
1 unit Jalapeño
13.4 ounce Corn Kernels
6 ounce Penne Pasta
1 teaspoon Garlic Powder
1 teaspoon Dried Oregano
1 teaspoon Hot Smoked Paprika
4 ounce Cream Sauce Base
2 tablespoon Cream Cheese
½ cup Pepper Jack Cheese
2 teaspoon Cooking Oil
1 tablespoon Butter
Kosher Salt
Pepper

Steps:

  • • Bring a medium pot of salted water to a boil. Wash and dry produce. • Core, deseed, and finely dice bell pepper. Drain corn and pat dry with paper towels. Mince half the jalapeño (whole jalapeño for 4 servings), removing ribs and seeds for less heat. Trim and thinly slice scallions, separating whites from greens.
  • • Once water is boiling, add penne to pot. Cook, stirring occasionally, until al dente, 9-11 minutes. Reserve 1⁄2 cup pasta cooking water (1 cup for 4 servings), then drain.
  • • While pasta cooks, heat a drizzle of oil in a large pan over medium heat. Add bell pepper and season with a pinch of salt and pepper. Cook, stirring occasionally, until tender, 5-7 minutes. TIP: If bell pepper starts to char, add a few splashes of water.
  • • Add a drizzle of oil, corn, jalapeño, scallion whites, garlic powder, and half the oregano (all for 4 servings) to pan with bell pepper. Cook, stirring occasionally, until fragrant, 2-3 minutes. • Remove from heat. Stir in half the paprika (all for 4). • Transfer 1⁄4 of the veggie mixture to a plate; reserve for serving.
  • • Return pan with remaining veggies to stovetop over low heat. Stir in drained penne, cream sauce base, cream cheese, half the pepper jack, half the scallion greens, and 1⁄4 cup reserved pasta cooking water. Cook, stirring, until cream cheese is just melted and pasta is coated in a creamy sauce. (For 4 servings, if pan is too small, carefully transfer everything to empty pot used for pasta.) • Remove from heat; stir in 1 TBSP butter (2 TBSP for 4) until melted. Taste and season generously with salt and pepper. TIP: If needed, stir in more reserved cooking water a splash at a time.
  • • Divide pasta between bowls. Top with reserved veggies and remaining pepper jack. Garnish with scallion greens and serve.

2 tablespoons olive oil
2 (16 ounce) packages frozen corn
¼ cup crumbled cotija cheese
¼ cup minced red onion
2 tablespoons finely chopped cilantro
3 tablespoons mayonnaise
2 tablespoons sour cream
2 tablespoons lime juice
½ teaspoon ground cumin
½ teaspoon smoked sweet paprika
¼ teaspoon chili powder
¼ teaspoon salt
1 pinch ground coriander

Steps:

  • Heat a 14-inch skillet over medium-high heat. Add olive oil and swirl to coat the bottom of the skillet. Spread frozen corn evenly across the skillet; do not stir. Cook corn for approximately 8 minutes.
  • Meanwhile, combine mayonnaise, sour cream, lime juice, cumin, paprika, chili powder, salt, and coriander in a large bowl. Set aside.
  • Check the corn; it should be slightly charred. If not, allow to continue cooking for 4 more minutes (stirring is fine at this point.)
  • Once corn is sufficiently browned/charred, transfer to the bowl with dressing and toss to coat. Add cotija cheese, red onion, and cilantro and mix until well combined. Serve immediately.
