- Melt butter in a large skillet over medium heat. Add bell peppers and onions; cook and stir until crisp-tender. Step 2
- Add beans, broth and seasoning; stir. Bring to a boil. Step 3
- Stir in rice and cover. Remove from heat. Let stand for 5 minutes. Fluff with a fork. Serve with pepper sauce, if using. Recipe Tip To turn this dish into a quick, complete meal, add 2 cups of diced ham or cooked sausage at the same time as the broth.

Steps:
- Place the beans in a large bowl or pot and cover with water by 2 inches. Let soak for 8 hours or overnight. Drain and set aside.
- In a large pot, heat the bacon grease over medium-high heat. Add the tasso and cook, stirring, for 1 minute. Add the onions, celery and bell peppers to the grease in the pot. Season with the salt, pepper, and cayenne, and cook, stirring, until the vegetables are soft, about 4 minutes. Add the bay leaves, parsley, thyme, sausage, and ham hocks, and cook, stirring, to brown the sausage and ham hocks, about 4 minutes. Add the garlic and cook for 1 minute. Add the beans and stock or water, stir well, and bring to a boil. Reduce the heat to medium-low and simmer, uncovered, stirring occasionally, until the beans are tender and starting to thicken, about 2 hours. (Should the beans become too thick and dry, add more water, about 1/4 cup at a time.)
- Remove from the heat and with the back of a heavy spoon, mash about 1/4 of the beans against the side of the pot. Continue to cook until the beans are tender and creamy, 15 to 20 minutes. Remove from the heat and remove the bay leaves.
- Serve over rice and garnish with green onions.
TEX MEX RED BEANS AND RICE

- Bring water to a boil in a small saucepan. Add rice, cover and simmer 20 minutes, stirring occasionally.
- When rice is done, remove it from the stove top. To a medium skillet over medium high heat add oil and bacon and cook 3 minutes to crisp edges of bacon. Add onions and cook 3 minutes to soften. Add beans to heat through, then stir in cooked rice. Season rice and beans with cayenne sauce, salt and pepper, to your taste. Serve rice and beans from the skillet.

EASY RED BEANS AND RICE

MIKE'S GREAT RED BEANS AND RICE
This is probably the best Red Beans and Rice you will ever have. Everytime i make it my family just devours. It's really great with hot sauce and corn bread.

Steps:
- Brown hamburger and onions.
- Pour in chicken broth.
- Then mix in the red kidney beans, kielbasa, garlic, Cajun seasoning and cayenne pepper.
- Bring to boil and let simmer for 60 minutes.
- Cook one cup of rice and when done mix into pot.
- Mix the flour and cold water to make a slurry and pour into pot to thicken sauce.
- Serve and enjoy.

This is different from traditional red beans and rice recipes as it is not spicy. I love red beans and rice but needed a version my kids would eat, I knew it had to be big on flavor but not be spicy at all. So I came up with this and we all enjoyed it.

- Rinse beans and then put then in a large pot. Then chop up your onion and bacon and mince your garlic then add this all to the pot of beans. Cover with water and bring to a boil. After it comes to a boil reduce to a simmer and at this point chop and add your smoked sausage, beef boulion, and the tomato paste then continue to simmer covered for 2-3 hours.
- Prepare the rice as directed on box or bag of rice. The 1 cup of rice I listed will make 4 servings.
- You may add the cooked rice to the beans when they are done if you like. We just served our beans over the rice. Also salt your water when you first start cooking the beans it tastes better then doing it after. And if your beans get to thick just add a little more water or beef broth to thin them a bit. If you use beef broth I would cut back on salt or use low sodium beef broth. Hope you enjoy them!
