1 can (14-1/2 oz.) fat-free reduced-sodium chicken broth
1 cup milk
1/2 tsp. onion powder
3 slices OSCAR MAYER Bacon, cooked, crumbled and divided
1 cup KRAFT Shredded Sharp Cheddar Cheese, divided
1 green onion, sliced, divided
1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream

Steps:

  • Microwave potatoes in large microwaveable bowl on HIGH 5 min., stirring after 2-1/2 min. Stir in broth, milk and onion powder. Microwave 10 min., stirring after 5 min. Carefully smash potatoes with potato masher.
  • Reserve 2 Tbsp. each bacon and cheese, and 1 Tbsp. onions for topping. Stir remaining bacon, cheese and onions into soup.
  • Serve soup topped with reserved bacon, cheese, onions and sour cream.

Other than canned chicken noodle, grilled cheese, and other "easy on the tummy" foods, potato soup is one of those things I'm enjoying because it's not spicy. This microwave recipe is relatively fast and pretty good. It's very basic and is a great "starter" recipe to be altered in any way.

2 cups potatoes, cubes peeled and raw
1/2 cup finely chopped onion (we sometimes use the dehydrated minced onion)
1 cup water
1 1/2 cups half-and-half
1 tablespoon butter
1/2 teaspoon salt
1/8 teaspoon pepper
4 slices favorite cheese, thin slices (optional)
bacon (to garnish) or chives (to garnish)

Steps:

  • Microwave potatoes, onion and water on high 8 to 10 minutes until potatoes are tender.
  • Cover and let rest 5 minutes. Mash potatoes with a fork into large pieces. This does help thicken the soup.
  • Add remaining ingredients except cheese and cook on high 5 to 8 minutes to serving temperature.
  • Garnish with cheese and bacon or chives.

  • Put 1 3/4 pounds baby potatoes in a pot and cover with water. Add 2 bay leaves, 2 garlic cloves and a big pinch of salt; bring to a boil. Reduce to a simmer and cook until the potatoes are tender, 20 to 25 minutes. Drain, discarding the bay leaves and garlic. Toss the potatoes with 2 tablespoons olive oil, transfer to a baking sheet and smash with a spatula or measuring cup. Drizzle with more olive oil and season with salt and pepper. Steps:

  • Scrub the potato, and prick several time with the tines of a fork. Place on a plate.
  • Cook on full power in the microwave for 5 minutes. Turn over, and continue to cook for 5 more minutes. When the potato is soft, remove from the microwave, and cut in half lengthwise. Season with salt and pepper, and mash up the inside a little using a fork. Top the open sides with butter and 2 tablespoons of cheese. Return to the microwave, and cook for about 1 minute to melt the cheese.
  • Top with remaining cheese and sour cream, and serve.

1 lb small red potato
2 -4 tablespoons olive oil
Lawry's Seasoned Salt, to taste (optional)
salt and pepper, to taste (optional)

Steps:

  • Scrub potatoes and pat dry. Prick each one twice with the tip of a sharp knife. Arrange in the microwave in a circle. Microwave on high until tender, approximately 4 minutes, but will vary depending on microwave and size of the potatoes. (I use my automatic "Potato" setting.).
  • Line cookie sheet with foil (I prefer no-stick). Place cooked potatoes on cookie sheet and gently 'smash' by pressing down with the back of a spatula. Drizzle olive oil over them, turning to coat. Sprinkle with seasoning salt or salt and pepper to taste.
  • Roast at 400°F for 20-30 minutes until golden brown and crispy, depending on desired degree of doneness. Turning halfway through. Serve hot.
  • Note: it only takes about 20 minutes in my convection oven if I roast them while they are still hot from the microwave. If they have cooled, it takes longer.
