MICROWAVE GINGER CAKE
A yummy little treat for one (if you don't feel like sharing) prepared in the microwave. It's not very sweet on its own, but a little icing easily makes up for it!

Steps:
- Place butter in a microwave-safe mug. Heat in the microwave until melted, 10 to 20 seconds. Whisk in egg, brown sugar, white sugar, molasses, and vanilla extract.
- Mix whole wheat flour, wheat germ, ginger, cinnamon, baking soda, and salt together in a small bowl. Add to the mug; stir well until combined.
- Cook in the microwave in 40-second intervals until the top springs back when lightly pressed, about 1 minute 20 seconds.
- Whisk confectioners' sugar and water together in a small bowl to make icing. Invert cake onto a serving plate and drizzle icing on top.

This is my own version of the chocolate microwave mug cake. This chocolaty fudgy treat is truly decadent and great for nights when I need a yummy dessert that is ready in less than 10 minutes! Chocolate chips make this recipe even better.

Steps:
- Add 4 tbsp self-raising flour, 4 tbsp caster sugar and 2 tbsp cocoa powder to the largest mug you have (to stop it overflowing in the microwave) and mix.
- Add 1 medium egg and mix in as much as you can, but don't worry if there's still dry mix left.
- Add the 3 tbsp milk, 3 tbsp vegetable or sunflower oil and a few drops of vanilla essence and mix until smooth, before adding 2 tbsp chocolate chips, nuts, or raisins, if using, and mix again.
- Centre your mug in the middle of the microwave oven and cook on High for 1½ -2 mins, or until it has stopped rising and is firm to the touch.

- In a microwave-safe mug, microwave the butter until melted, about 30 seconds. Swirl around the sides of the mug.
- Add to the mug the sugar, milk, vanilla, and molasses; stir until smooth. Then stir in the flour, baking powder, cinnamon, ginger, salt, and black pepper until completely combined. You will want it to resemble a simple cake batter. If it’s too thick, add a bit of milk. If it’s too runny, add a bit of four.
- Microwave the cake for about 1 minute to 1 minute 30 seconds (90 seconds) depending on your microwave. Mine is done at 1 minute 15 seconds. Check to make sure it’s done, top with a dusting of confectioners’ sugar, ice cream, or whipped cream.

- Spray a microwavable mug with cooking spray and then mix together flour (or pancake mix), baking powder, ginger, milk, molasses and coconut oil inside. Add 1 tablespoon more milk, if needed for desired consistency. You want the batter to stay thick, but not dry.
- In a small bowl, whisk together brown sugar, cinnamon and a few dashes of ginger and sprinkle over the top of the mixture in mug. Use the tip of a sharp knife to swirl cinnamon mix into the top of the batter.
- Microwave on high for about 1 minute and 5 seconds. Take out of the microwave and if desired transfer muffin to a plate. Enjoy!
