CHRISTMAS TIME EGG NOG



Christmas Time Egg Nog image

This beverage is synonymous with the holidays and our simple recipe makes it a tradition worth bringing back.

5 large eggs eggs
⅔ cup granulated sugar
4 cups 2% milk
2 cinnamon sticks cinnamon sticks
½ teaspoon freshly ground nutmeg
½ teaspoon ground mace
1 pinch Pinch ground cloves
½ cup spiced rum
1 pinch Ground cinnamon

Steps:

  • In a large saucepan, whisk together eggs and sugar until well combined. Whisk in milk. Add cinnamon sticks, nutmeg, mace and cloves; place over medium heat and whisk gently for about 10 minutes or until mixture has small bubbles around the edge of pan and thermometer reaches 160 degrees F (71 degrees C).
  • Remove from heat and pour through fine mesh strainer into a large bowl. Whisk in rum (if desired) and cover with plastic wrap, directly on surface, and refrigerate for at least 4 hours or up to 2 days.
  • When ready to serve, sprinkle with cinnamon, if desired.

1 (5 ounce) can sweetened condensed milk
1 tablespoon white sugar
1 teaspoon vanilla extract
4 ½ cups milk
4 egg whites
1 fluid ounce rum
¼ teaspoon ground nutmeg

Steps:

  • In a large mixing bowl, beat egg yolks until they are thickened and light. Gradually stir in condensed milk, sugar, vanilla and milk. Beat the egg whites until stiff, then add them to the milk mixture. Stir rum into the mixture (to taste). Garnish with nutmeg.

1/2 cup half and half
1/4cup whole or reduced-fat (2%) milk
1/4 cup bourbon

Freshly grated whole nutmeg or ground nutmeg

Steps:

  • Whip first 5 ingredients in blender until foamy. Stir in ice. Strain punch into two 6-ounce glasses or mugs. Sprinkle with nutmeg and serve.

This came from a friend. I made this as written and it turns out beautifully every time. I always include a loaf of this bread in my Christmas crates that we make up for my family. I have included 3 variations I came up with. We love this bread toasted. Yes...toasted. What can possibly be wrong about toasted cake? Try it...you just might like it. Try it for breakfast instead of regular toast. This makes a large loaf and freezes beautifully.

1/2 cup packed brown sugar
1/2 cup white sugar
1 large egg
1/4 cup butter or 1/4 cup hard margarine, melted
1 1/2 cups eggnog
1 teaspoon rum or 1 teaspoon vanilla extract
3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
2/3 cup chopped pecans or 2/3 cup walnuts
1 cup cut mixed glace fruit

Steps:

  • Beat sugar and egg in mixing bowl.
  • Beat in melted butter.
  • Add eggnog and extract. Mix.
  • Sift flour, baking powder, salt, cinnamon and nutmeg over the eggnog mixture.
  • Stir until moistened.
  • Mix in nuts and fruit.
  • Turn into greased 9x9x3 loaf pan.
  • Bake at 350 degrees for about 1 hour until an inserted wooden pick comes out clean.
  • Let stand for 20 minutes.
  • Turn out onto rack to cool.
  • Variations: Use measurements above.
  • Pecan and Dried Cranberries.
  • Pineapple and Coconut (drain pineapple).
  • Walnut and Raisin (raisins soaked in Apricot brandy or any other fruity juice and then drained).

12 egg yolks
1 1/2 cups sugar
3/4 cup rye whiskey
12 egg whites
3/4 cup brandy
1/2 cup rum
1 to 2 cups heavy cream, lightly whipped
Garnish: ground nutmeg

Steps:

  • Beat the egg whites until stiff, gradually adding in 3/4 cup sugar. Set aside. Beat the egg yolks until they are thick and pale and add the other 3/4 cup sugar and stir in rye whiskey. Blend well. Fold the egg white mixture into the yolk mixture and add the brandy and the rum. Beat the mixture well. To serve, fold the lightly whipped heavy cream into the eggnog. (If a thinner mixture is desired, add the heavy cream unwhipped.) Sprinkle the top of the eggnog with the nutmeg to taste.

1 (750 ml) bottle brandy
1 (750 ml) bottle Kahlua
nutmeg, ground

Steps:

  • Spoon the softened ice cream into a punch bowl; stir with a spoon until the ice cream is smooth.
  • Pour the brand and Kahlua over the ice cream. Stir gently, just until blended. (Do not overstir, or it will be too foamy.) Sprinkle with nutmeg.
