MIKE'S CHUNKY MONKEY BREAD PUDDING

This is to die for! I found this on Ben & Jerry's website a few months ago. Now that I've tasted it I can't believe I waited that long to try it. I'm adding it to my list of all-time favorite comfort foods. Brought it to work and it disappeared in 10 minutes flat! I omitted the sugar the recipe calls for because it was sweet enough for me. I also used the regular sized semisweet chocolate chips instead of the miniature ones and added about 1/2 cup coarsely broken walnuts. An easy way to melt the ice cream is to put the unopened pints in the fridge overnight to thaw out. This would be a great brunch recipe. Enjoy!

5 cups bread cubes (use stale French bread cut into 1" cubes)
3 eggs, lightly beaten
2 pints Ben & Jerry chunky monkey ice cream, melted
1 1/2 teaspoons granulated sugar
1/2 teaspoon salt
1 large ripe banana, sliced
1/2 cup miniature dark chocolate chips
1 teaspoon vanilla extract

Steps:

  • Lightly grease a 9 x 13-inch cake pan and preheat oven to 350 degrees.
  • Place bread cubes in an even layer in bottom of pan.
  • Sprinkle sliced bananas and chocolate chips evenly over bread cubes.
  • Stir together the eggs, melted ice cream, sugar, salt and vanilla.
  • Pour this mixture evenly over bread cubes.
  • Bake for 27- 30 minutes or until pudding is set.
  • Pudding should still appear moist on top.
  • DO NOT OVERBAKE.
  • Place on cooling rack.
  • Serve warm or at room temperature.

I love monkey bread, so when I saw this muffin variation in our grocery store circular, I knew I had to try them! Delicious, flavorful and oooohhhhh so good!

1 (16 ounce) package jumbo flakey biscuit dough
1/2 cup packed brown sugar
1 (3 1/2 ounce) package instant butterscotch pudding mix
1/2 cup granulated sugar
1 teaspoon ground cinnamon
1/2 cup butter, melted

Steps:

  • Preheat oven to 350 degrees and grease and prepare muffin tin.
  • Separate tube of dough into 8 biscuits. Cut each into quarters.
  • In a medium bowl, combine brown sugar, pudding mix, granulated sugar and cinnamon. Mix well.
  • Coat each quarter in melted butter. Roll each quarter in the brown sugar mixture.
  • Divide pieces evenly among 12 greased muffin cups. Pour remaining brown sugar mixture over each filled muffin cup.
  • Bake 15 to 18 minutes. Using a spoon, carefully remove each muffin from muffin pan.
  • Serve warm.

24 ounces frozen yeast dinner roll dough
1 cup brown sugar, packed
1 (3 1/2 ounce) package instant butterscotch pudding mix
1/4 cup white sugar
2 teaspoons ground cinnamon
1/2 cup pecans or 1/2 cup walnuts
1/2 cup butter, melted

Steps:

  • The night or several hours before you want to serve, spray a non-stick bundt or tube pan with non-stick spray. Mix brown sugar, pudding mix, white sugar and cinnamon together.
  • Place frozen dough in pan a layer at a time. Sprinkle butterscotch mixture, then nuts and top with some butter. Repeat layers until all ingredients have been used.
  • Place on counter over night or for several hours to rise. Do not cover. When your ready, place bread in a preheated 350 degree oven for approximately 30 minutes. Let stand for 5 minutes and then invert onto serving tray.

3 (16 ounce) cans refrigerated biscuits
1 cup sugar
1 teaspoon cinnamon
1/2 cup margarine
1 cup of packed brown sugar

Steps:

  • Separate biscuits; cut each biscuit into 4 pieces.
  • Mix cinnamon and sugar in a bowl coat each piece of biscuit and pile into a bundt or tube pan.
  • Heat margarine and brown sugar until it is melted; pour over the biscuits.
  • Bake at 350°F for about 20 minutes.
  • When it has cooled, unmold onto plate.
  • Pull apart to eat.

3/4 cup sugar
3 teaspoons ground cinnamon
1/2 cup finely chopped pecans, optional
1/2 cup butter, melted
3 tubes (10 ounces each) refrigerated biscuits

Steps:

  • Preheat oven to 350°. Combine pudding mix, sugar, cinnamon and, if desired, pecans. Pour butter into a shallow bowl; quarter biscuits. Dip several pieces into butter; place in pudding mixture and toss to coat. , Arrange in a greased 10-in. fluted tube pan. Repeat until all biscuit pieces are coated.
