KRISTEN'S AWESOME OATMEAL COOKIES
This is my mothers recipe and it really is awesome! They are somewhat crispy but not cakey. You can add raisins, chocolate chips or coconut to this recipe too.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a medium bowl, cream together the shortening, brown sugar and white sugar. Stir in the egg, water and vanilla. Combine the flour, salt, baking soda and cinnamon, stir into the creamed mixture. Finally, stir in the rolled oats. Drop by rounded spoonfuls onto the prepared cookie sheets.
- Bake for 12 to 15 minutes in the preheated oven. Cool on baking sheets for a couple of minutes before removing to cool on wire racks.

- Cream lard and butter with sugar.
- Add eggs.
- Add vanilla, baking powder and baking soda.
- Add sour cream.
- Add flour.
- Add oatmeal.
- Add raisins.
- Let stand 1 hour.
- Drop by teaspoonful on baking sheet sprayed with Pam.
- Bake 10 minutes in 350° degree oven or until golden.

- Preheat the oven to 350 degrees F (175 degrees C). Line a cookie sheet with parchment paper.
- Mix bananas, oats, oat cereal, chocolate chips, cranberries, and coconut in a bowl, adding more oats or cereal as needed to make a soft dough. Roll into 12 equal balls. Arrange balls on the prepared cookie sheet and gently flatten.
- Bake on the middle rack of the preheated oven until golden brown, 15 to 20 minutes. Remove from the oven and cool on a wire rack.

Mildred was a neighbor of mine growing up. I was always bugging her to make her famous cookies. I miss her. Mom came across her recipe in an old box of recipes. Thank you Mildred!!

This is our family recipe for shortbread oatmeal cookies, handed down through the Scottish side of the family. There is nothing better. They are definitely not low in fat.

- Preheat oven to 375 degrees F (190 degrees C).
- Dissolve the baking soda in the water.
- Combine the oats, flour and brown sugar. Cut in the butter until the mixture resembles coarse crumbs. Stir in the baking soda mixture and form dough into a ball. Either roll dough out to 1/4 inch thick and cut with cookie cutters or press dough into the bottom of one 9x13 inch baking pan.

MRS. FIELD'S OATMEAL COOKIES
I've been searching for a good Oatmeal Cookie recipe for a while but the ones I came across always had some ingredient that I was allergic to. I got this recipe from one of my students when I gave them a gag homework assignment. They were to find me an oatmeal cookie recipe that doesn't have nuts or shortening as I am allergic to both. Who knew that it would be one of the few assignment they completed that week (smile). I got many entries but, if I was grading this assignment, this child would definetly get an A+ but, how could you loose with a recipe from Mrs. Fields? This recipe makes a lot of cookies.

Steps:
- Pre-heat over to 350 degrees.
- Cream sugars, butter and vanilla together until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Sift flour, baking soda and baking powder together.
- Add dry ingredients to wet ingredients; combine until dry ingredients are moist.
- Stir in oatmeal.
- Add raisins, chocolate chips, nuts, if desired. They are great on their own.
- Drop by rounded teaspoonful on ungreased cookie sheets.

- Position racks in the top and bottom thirds of the oven, and preheat to 350 degrees F (175 degrees C). Line 2 cookie sheets with silicone liners (such as Silpat®).
- Whisk flour, baking soda, cinnamon, and salt together in a medium bowl.
- Combine butter, brown sugar, and white sugar in a large bowl. Beat with an electric mixer on medium-high speed, stopping occasionally to scrape down the sides of the bowl, until creamy, about 2 minutes. Add eggs and vanilla and beat until blended, about 1 minutes, scraping the sides as needed. Add dry ingredients and mix on low speed just until blended. Mix in oats, raisins, and pecans on low speed just to blend.
- With a 2-inch cookie scoop, scoop dough onto the prepared cookie sheets, spacing about 2 inches apart.
- Bake in the preheated oven, rotating sheets halfway through, until cookies are light golden brown, 10 to 12 minutes. Transfer to a wire rack to cool completely, about 30 minutes.
- While the cookies are cooking, whisk powdered sugar, butter, and 1 tablespoon apple juice together in a bowl until smooth. Add more juice if needed for a good drizzling consistency.
- Drizzle icing over cooled cookies. Let icing set before serving, about 30 minutes.

Do you really need another meatloaf recipe? Better make room for this one because you won't want to miss out on this vegetable-studded gem. From "Mrs. Rowe's Restaurant Cookbook: A Lifetime of Recipes from the Shenandoah Valley". I diced a whole small onion, omitted the green pepper, and baked in a 9" x 13" pan for 45 minutes. Makes a great cold meatloaf sandwich. Add 1/2 cup diced cooked carrots for color if you like. TIP: Try placing slices of stale bread in the bottom of the pan, under the meat mixture, to absorb grease. Discard bread after baking.
