1 - 1/2 pounds hamburger (uncooked)
1 egg
3 tablespoons Kraft Barbeque Sauce (honey or mild) in the meatloaf mixture
2 slices white bread
6 saltine or round crackers
2 tablespoons Kraft Barbeque Sauce for top when in pan
2 dash es seasoning salt

Steps:

  • Preheat oven to 350 degrees F. Mix ingredients into a large plastic freezer bag (easy on clean-up) mix all ingredients well in bag, add seasoning salt last.
  • Form into a half basketball shape and place in a non sprayed Pyrex metal pan or roaster pan. Add 2 tablespoons of barbeque sauce to the top of the meatloaf and sprinkle seasoning salt over the barbeque sauce. Then add about 1/4-inch water to pan but not over the meatloaf (so you do not wash everything off the meatloaf and take the flavoring off the top).
  • Place in oven. Check water level in about an hour to an hour and a half (especially if you add potatoes, or stuffing with your meatloaf). You want the meatloaf to be cooked so look for the top to be darker. If you choose your meat well done, leave in until the top of meatloaf is darker and crusty. Again make sure there is enough water in pan to keep from burning or getting stuck to the bottom of your pan. You can bump oven temp up to 375°F to get top crusty.

I have tried a lot of recipes and finally with a few additions and subtractions, this is it!

2 eggs beaten
1/4 c milk
1/2 c dry bread crumbs
1/4 c chopped onion
1 tsp salt
1 tsp ground black pepper
1/2 c diced green pepper
1 1/2 lb ground beef
1/2 c ketchup
2 tsp brown sugar
1 tsp dry mustard powder

Steps:

  • 1. Preheat oven to 350. Grease 9x5 loaf pan. In a bowl lightly mix eggs, milk, bread crumbs, onion, green pepper, salt, pepper, until combined.
  • 2. Gently work in the ground beef until mixed. Press the meat into the loaf pan.
  • 3. Bake in oven until loaf is no longer pink inside and juices run clear about 50 minutes. Thermometer inserted should read 160 degrees.
  • 4. While the meatloaf is baking, mix together ketchup, brown sugar, mustard in bowl. Spread on top of meatloaf during last 15 minutes.

1 1/2 cups millet
3 3/4 cups water
1/2 teaspoon salt (or to taste)
1 1/2 cups carrots, finely diced
1 cup celery, finely diced
1 cup onion, finely diced
1 clove garlic, minced
1 tablespoon sesame oil
1 1/2 teaspoons dill weed
1 teaspoon dried thyme
1 cup roasted sunflower seeds (optional)
3 tablespoons whole wheat flour

Steps:

  • Rinse millet and put it in a medium saucepan with the water and 1/2 tsp salt. Cook, lid ajar slightly, over medium heat for about 20 minutes, or until soft; the millet should absorb all the water.
  • Saute the carrots, celery, onions and garlic in sesame oil until onions are translucent. Add the seasonings.
  • Mix the cooked millet and the veggies together, along with the sunflower seeds, if you wish.
  • Add 3 tbsp flour to the millet mixture, blending well.
  • Lightly oil (and flour, optional) 2 loaf pans. Press the millet mixture into the pan, and bake at 400 F for one hour (45 minutes if the millet is still warm when you put it into the pan).
  • Allow the loaf to cool for about 10 minutes before turning it out onto a platter and slicing.
  • Serve with mashed potatoes, green beans and lots of brown gravy. (Recipe #4855 Vegetarian Gravy II makes a good accompaniment).

MILLIONAIRE'S MEATLOAF

This is a meatloaf piled high with spicy shrimp. The chef David Burke created the dish for the Stadium Grill.

1 1/2 tablespoons olive oil
2 medium onions, finely chopped
6 cloves garlic, minced
2 pounds lean ground beef
2 large eggs
1/2 cup milk
1 cup fresh bread crumbs
1/4 cup Dijon mustard
1/4 cup barbecue sauce
1 tablespoon well-drained horseradish
1/4 cup finely chopped flat-leaf parsley
1 teaspoon salt
1 1/2 teaspoons freshly ground black pepper
1 teaspoon minced fresh thyme
2 to 3 cups croutons, bought or homemade (see note)
1 1/2 teaspoons mild or hot chili powder
1 1/2 teaspoons cayenne pepper
1 1/2 teaspoons paprika
1 1/2 tablespoons Wondra flour
4 jumbo shrimp, peeled and deveined
1 teaspoon chili oil
Mashed potatoes, for serving

Steps:

  • For the meatloaf: Preheat oven to 375 degrees. Place a large skillet over medium heat, and add the olive oil, onions and garlic. Sauté until translucent and tender, 3 to 4 minutes. Remove from heat and set aside to cool.
  • In a large mixing bowl, combine ground beef, eggs and milk. Mix well by hand, and add bread crumbs, mustard, barbecue sauce, horseradish, and cooked onions and garlic. Mix again, and add the parsley, salt, pepper and thyme. Mix well until thoroughly combined.
  • Spread the croutons across a shallow 8-inch-square baking dish. Top with the meatloaf mix, patting the surface so it is level. Bake until the internal temperature reads 165 degrees on an instant-read thermometer and the top is nicely browned, about 1 hour. Toward the end of baking, prepare the chili shrimp.
  • For the chili shrimp: In a small mixing bowl, combine the chili powder, cayenne pepper, paprika and flour. Dredge the shrimp in the mixture until well coated. Place a small skillet over medium heat, and add the chili oil. When it is hot, add the shrimp and cook for 2 minutes a side.
  • To finish, cut the meatloaf into 4 slices. Place a slice on each of 4 plates, and top with a chili shrimp. If desired, serve with mashed potatoes.

This is a delicious, moist and flavorful meatloaf, definitely company worthy, and it is our very favorite meatloaf recipe. Sandwiches made the next day are just awesome! My friend, Pattycake, shared this recipe with me, and now I am happy to share it with my JAP friends. Enjoy! Photos are my own.

1 pound lean ground beef
1 pound jimmy dean sage sausage
2 eggs beaten
1/4 cup tomato paste (use rest on top of meatloaf
2 teaspoons kitchen bouquet
1 1/4 teaspoon seasoned salt
1/2 teaspoon black pepper
a few sprinkles garlic powder
a few sprinkles onion powder
1 teaspoon thyme leaf crushed
1/2 red bell pepper chopped fine
1/2 cup celery chopped fine
1/2 cup onions chopped fine
1 1/2 cups freshly toasted plain croutons from french bread, cooled.
spritz of butter spray for top of cooked meatloaf

Steps:

  • 1. In a large mixing bowl, combine eggs, tomato paste, kitchen bouquet.
  • 2. Add all the seasonings and spices.
  • 3. Stir in peppers, onions and celery.
  • 4. Add the ground meat and sage sausage. Mix well. Best mixed with your hands.
  • 5. Stir in the croutons and mix well.
  • 6. Form the loaf and place in a meatloaf pan.
  • 7. "Frost" the top of the meatloaf with the leftover tomato paste as depicted in the photo.
  • 8. Tent the meatloaf loosely. Bake meatloaf in a 350 degree, pre-heated oven for 1 1/2 hours or until it reaches an internal temperature of 175 degrees. (I use a meat thermometer.) Remove tin foil the last 15 minutes. Let meatloaf stand covered loosely for 15 minutes. Spritz with a couple of sprays of butter flavored kitchen spray to give it a glossy appearance, and this is how it looks.
  • 9. Place the meatloaf on a platter and slice it to serve. You can serve it without gravy because it is so moist. That is the way I like it. The guys, of course, have to have their gravy! Enjoy!
