4 ½ teaspoons lime zest, grated
½ cup lime juice, 3-4 limes
14 fl oz sweetened condensed milk
11 crackers graham cracker
3 tablespoons granulated sugar
5 tablespoons unsalted butter, melted
¾ cup heavy cream
¼ cup confectioners sugar
1 tablespoon lime zest

Steps:

  • Preheat the oven to 325°F (170°C).
  • Make the filling: Whisk the egg yolks and lime zest in a medium bowl until tinted light green, about 2 minutes.
  • Beat in the lime juice and condensed milk, then set aside at room temperature to thicken.
  • Make the crust: Crush the graham crackers in a zip-top bag, then mix in the sugar and butter. Divide the crumbs between a 6-cup muffin tin and press down to form crusts.
  • Bake for 8 minutes or until golden brown. Let cool for 15 minutes.
  • Pour filling into the crusts, then bake until the center is slightly jiggly, 15-17 minutes.

One 14-ounce can sweetened condensed milk
1 tablespoon fresh key lime zest
1/2 cup fresh key lime juice
1 premade graham cracker pie crust
1/2 cup confectioners' sugar
Curled lime slices, for garnish, optional

Steps:

  • Beat 1 cup of the heavy cream into stiff peaks in a large bowl. In a separate bowl, whisk together the sweetened condensed milk, 2 teaspoons of the lime zest and lime juice. Fold the lime juice/sweetened condensed mixture into the whipped cream.
  • Spoon the filling into the pie crust and spread out evenly. Place in the freezer until solid and set, 3 to 4 hours.
  • Take the remaining 1 1/2 cups of whipping cream and add the confectioners' sugar. Whip until soft peaks. Spoon the whipped cream over the frozen pie. Garnish with the remaining key lime zest and some curled lime slices if desired.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place mini graham cracker crusts onto a baking sheet.

1 (9 inch) graham cracker crust
2 (14 ounce) cans condensed milk (not evaporated or canned milk)
4 egg yolks, beaten
3/4 cup fresh key lime juice (about 10-20 key limes)
1 tablespoon grated lime zest (key-lime zest, from about 5 key limes)
1 pint whipping cream, whipped
mint leaf
8 slices key limes, thin

Steps:

  • Mix condensed milk with egg yolks, key lime juice and key lime zest.
  • Pour into graham cracker pie crust.
  • Bake for 5 minutes in a 300 degree (F) oven.
  • Remove pie from oven, cool about 5 minutes. Then refrigerate pie for 1 hour.
  • Cover pie filling with whipped cream.
  • To serve, slice pie and garnish each pie slice with 1 key lime slice and a fresh mint leaf.

4 ounces granulated sugar
1 teaspoon ground cinnamon
1 stick (8 tablespoons) unsalted butter, melted
7 large egg yolks
28 ounces sweetened condensed milk
2/3 cup freshly squeezed key lime juice
1 teaspoon cornstarch

Steps:

  • For the crust: Combine the graham cracker crumbs, sugar and cinnamon in the bowl of an electric mixer. Mix on low, slowly adding the melted butter. Mix for 1 minute.
  • Remove from the mixer and, with your hands, press into an 8-inch pie plate to form a pie shell. Cool in the refrigerator for 30 minutes.
  • Preheat the oven to 250 degrees F.
  • Whip the egg yolks in the bowl of an eclectic mixer until just stiff, then add the sweetened condensed milk. Whip for 2 more minutes.
  • In a small bowl, whisk together the lime juice and cornstarch, making sure not leave any lumps: The mixture should be nice and smooth. Fold the lime mixture into the egg yolk mixture. Pour the mixture into the pie shell.
  • Bake until set, about 30 minutes.

Steps:

  • Whip the heavy cream in a blender until a whipped cream consistency.
  • Add the condensed milk, lime juice, grated lime peel and half of the whipped cream into the blender. Blend until smooth.
  • Pour the contents of the blender into the pie shell, then gently stir in the remaining whipped cream.
  • Put it in the freezer for about 30 minutes or the fridge for an hour.
