2 pounds lean ground beef
8 ounces ground pork
2 cups Italian flavored breadcrumbs
1 cup milk
1/2 cup fresh parsley leaves, finely chopped
4 medium eggs, lightly beaten
2 cloves garlic, minced
1 medium onion, minced
Salt and pepper
Salt and pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl or mixer, thoroughly mix the beef, pork, breadcrumbs, milk, parsley, eggs, garlic, onion and some salt and pepper. Chill in the refrigerator for 30 minutes.
  • Shape into meatballs and place on a foil-lined shallow baking pan. Bake 30 minutes for medium or 25 minutes for bite-size. Stick toothpicks in the finished meatballs to serve as an appetizer.

4 cups canned tomatoes with juice
2 cups fine breadcrumbs
2 eggs
3 1/2 teaspoons salt
1 1/2 teaspoons ground black pepper
1 teaspoon oregano
1 tablespoon finely chopped onion
24 slices bacon
1 1/2 cups sour cream

Steps:

  • Mix together the beef and 2 cups of tomatoes, bread crumbs, eggs, salt, pepper, oregano, and onion. Form into 24 good size meatballs. wrap each meatball with a bacon slice overlapping bacon carefully.
  • Place the meatballs in a large flat baking dish so that the over lapping bacon is on bottom.
  • Bake at 350°F for 45 minutes, or until the bacon is crisp.
  • Remove from oven and pour off the fat.
  • Combine the sour cream and the remaining 2 cups of tomatoes.
  • Pour over the meatballs and return to the oven. Turn off the heat. Serve with rice once the sauce is hot.

1 (12 ounce) package Impossible Burger
½ cup Italian-flavored bread crumbs
¼ cup milk
2 tablespoons Worcestershire sauce, divided
1 tablespoon grated Parmesan cheese
2 teaspoons salt, divided
½ teaspoon ground black pepper
1 tablespoon olive oil
1 (4 ounce) can mushrooms, drained
¾ cup plain Greek yogurt
2 (15 ounce) cans vegetable broth
1 (6 ounce) package egg noodles
½ cup half-and-half
2 teaspoons cornstarch
¼ cup finely chopped fresh parsley

Steps:

  • Combine Impossible Burger, bread crumbs, milk, 1 tablespoon Worcestershire sauce, grated Parmesan, 1 teaspoon salt, and black pepper in a medium bowl. Form into 1- to 2-inch meatballs.
  • Heat oil in a large nonstick skillet and cook meatballs until golden brown, 3 to 5 minutes per side, about 10 minutes total. Rotate as needed and adjust heat if they are cooking too quickly.
  • Add mushrooms to the skillet. Whisk Greek yogurt into the vegetable broth and pour around the meatballs. Cover with a lid and allow to simmer for 10 to 15 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Add egg noodles and cook until tender, 7 to 9 minutes. Drain and set aside.
  • Whisk half-and-half and cornstarch together in a small bowl. Whisk into the broth until evenly combined. Increase heat and bring to a low simmer, stirring occasionally, until sauce thickens. Stir in the remaining Worcestershire and salt. Taste the sauce and adjust seasonings as needed.
  • Stir in the cooked noodles and serve with a sprinkling of fresh parsley over the top.

1 cup dried breadcrumbs
1 small onion, finely chopped
1/2 cup fat-free ricotta cheese
2 small garlic cloves, minced
1 tablespoon fresh lemongrass, minced
2 tablespoons grated parmesan cheese or 2 tablespoons asiago cheese
2 teaspoons yellow mustard
1 teaspoon ketchup
1/2 teaspoon nutmeg
1 teaspoon salt
1 teaspoon fresh ground black pepper
1 tablespoon Italian spices
1 teaspoon dried parsley
olive oil, for pan

Steps:

  • In a large bowl, gently beat one egg. Then add meat and all ingredients.
  • Cover the bottom of a skillet with olive oil and heat using medium to medium-high heat.
  • With your hands, blend all ingredients together. With slightly damp hands, roll about 1 tablespoon of meat mixture into golf ball-sized balls between your hands.
  • Place meatballs in hot skillet and brown on all sides.
  • Once all sides are browned, add to homemade sauce in a slow-cooker and cook on low for about 4-5 hours.
