MINCED BEEF COBBLER

Minced beef cobbler image

A hearty yet healthy dish that's perfect for a rainy evening, and it's low-fat too

Provided by Good Food team

Categories     Dinner, Main course

Time 1h10m

Number Of Ingredients 10

500g pack extra-lean beef mince
1 onion , finely chopped
140g baby chestnut mushroom , halved
2 tbsp plain flour
500ml beef stock
few shakes Worcestershire sauce
140g self-raising flour
1 tbsp chopped thyme
4 tbsp low-fat natural yogurt
140g frozen peas

Steps:

  • Heat oven to 180C/160C fan/gas 4. Dry-fry the mince and onion in a large non-stick frying pan over a high heat. Stir frequently to break up the mince, until well browned. Add the mushrooms and plain flour, followed by the stock and Worcestershire sauce. Bring to a simmer, then gently cook for 10 mins.
  • Meanwhile, to make the cobbles, mix the self-raising flour and thyme together in a bowl. Stir in the yogurt with enough cold water to form a scone-like dough. On a lightly floured surface, roll out to the thickness of about 1.5cm and use a cutter to stamp out 12 x 5cm rounds.
  • Stir the peas into the mince mixture, then transfer to a baking dish. Randomly place the cobbles on top of the mince, then bake for 20-25 mins, until cobbles are risen and golden brown. This is good served with horseradish sauce.

What is mince beef cobbler?
This savoury mince beef cobbler is a simple recipe that you can make in time for tea. The word "mince" is British. In the United States, it's known as ground beef. I had this dish for the first time when I was at school, it was one of my favourite school dinners.
How do you make beef cobbler?
Brimming with soft and tasty vegetables and minced beef with a light cobbler topping, this homely beef cobbler is full of hearty flavour. Heat oil in your casserole dish, brown mince well then set aside, reserving any fat. Place all diced veg and garlic in the same pot and cook until soft and turning golden brown.
How do you cook mince for Christmas dinner?
Return mince to the pan with tomatoes, stock, bay leaves, and seasoning. Bring to the boil, then simmer for 60 -75 minutes, stirring occasionally. For the cobbler topping, place flour, seasoning and mustard in a bowl, rub in the butter and mix in the thyme. Add milk to make a stiff dough. Knead lightly and roll to 1cm thick.
What to serve with mince cobbler?
My lot would quite happily gobble a bowl of mince cobbler on it's own though. It's most definitely a keeper in this house! Up the veggies by adding peppers, mushrooms and courgettes to the mince, or whatever veggies you have to hand. I like to serve this cobbler with easy roast sweet potatoes and steamed seasonal vegetables.
