These mini burgers are great fun for parties, or make them bigger and have them for a fun Friday supper

Number Of Ingredients 11

½ a 400g can chickpeas, drained
1 small onion, finely chopped
1 garlic clove, crushed
500g chicken or turkey mince
1small sweet potato (about 100g/4oz), grated
olive oil, for brushing
12 mini bagels
2 tbsp low-fat mayonnaise
1⁄4 iceberg lettuce, shredded
2 tomatoes, sliced
1⁄4 cucumber, sliced

Steps:

  • Heat grill to medium. Whizz the chickpeas in a food processor or mash until well broken up. Put into a bowl with the onion, garlic, mince and sweet potato. Mix well and season. Can be frozen for up to 1 month.
  • Line a baking sheet with foil. Divide the mixture into 12 and shape into mini burgers. Put onto the baking sheet, brush with oil and grill for 10 mins, turning once. Can be chilled and reheated in the microwave on High for 2 mins.
  • Split the bagels and toast under the grill, if you like. Spread the bases with mayonnaise, top with a chicken burger, some shredded lettuce, tomato, cucumber and the bagel tops.

These burgers are great without the bread as well if you are controlling your carb intake.

¼ cup grated Parmesan cheese
2 tablespoons dried basil
½ teaspoon garlic powder

Steps:

  • Combine ground chicken, Parmesan cheese, basil, garlic powder, salt, and pepper in a mixing bowl; mix thoroughly.

1/2 cup chopped onion
1 tablespoon butter
1 egg, lightly beaten
1/4 teaspoon seasoned salt
1/4 teaspoon ground sage
1/4 teaspoon salt
1/8 teaspoon pepper
1 pound lean ground beef (90% lean) or ground beef
40 mini buns, split
8 ounces process American cheese slices, cut into 1-1/2-inch squares, optional
40 dill pickle slices, optional

Steps:

  • In a large skillet, saute onion in butter. Transfer to large bowl; add egg and seasonings. Crumble beef over mixture and mix well. Spread over bottom halves of the buns; replace tops. Place on baking sheets; cover with foil. , Bake at 350° for 20 minutes or until meat is no longer pink. If desired, place a cheese square and pickle on each hamburger; replace tops and foil and return to the oven for 5 minutes.

4 tablespoons salted butter
1/4 cup half-and-half
3 large eggs, beaten
Kosher salt and freshly ground black pepper
4 precooked sausage patties, such as Jimmy Dean
4 mini bagels, split
1/4 cup bottled chipotle mayonnaise
2 slices American cheese, split
2 slices pepper jack cheese, split
1 small tomato, sliced thin
1 small avocado, sliced
1 tablespoon everything seasoning

Steps:

  • Heat a griddle over medium heat.
  • Melt 2 tablespoons of the butter in a nonstick skillet over medium-low heat. Mix the half-and-half, eggs and a good pinch of salt and pepper in a measuring cup. Gently pour the mixture into the skillet. Turn the heat to low, cover and wait until the eggs are set, 4 to 5 minutes.
  • While the eggs cook, add the sausage patties to one half of the griddle and cook until heated through, about 2 minutes per side. Grease the other half of the griddle with the remaining 2 tablespoons butter. Add the bagels, cut-side down, and toast until golden, 1 to 2 minutes. Remove the bagels and sausage to a board.
  • Roll the eggs into an omelet to fit the width of the bagels and cut into 4 pieces.
  • To build, spread 1 tablespoon of chipotle mayonnaise on the bottom half of a bagel. Top with a sausage patty, 1/2 slice of the American and 1/2 slice of the pepper jack cheese. Top with a slice of the rolled omelet, a slice of tomato and a few slices of avocado. Sprinkle some of the everything seasoning over the avocado. Place the other half of the bagel on top. Assemble the other 3 sandwiches, then serve.

These mini burgers are so good! The recipe comes from the Neely's. Everyone I have made these for starts craving them and wants more and more. Try these as the recipe is written for the best results and then change it up if desired. I have to tell you, I don't like mustard and I love cheese. This uses dijon mustard and does not have cheese. I even tried them with the cheese and didn't like them as well. Hope you enjoy!

3 tablespoons mayonnaise
1 tbsp.dijon mustard
1/2 tablespoon cayenne pepper
salt and pepper
1 lb hamburger
1 teaspoon onion powder
1 large red onion, sliced
12 party size hamburger buns

Steps:

  • Mix hamburger, onion powder and salt and pepper to taste. Form into several mini burgers.
  • Put burgers on grill or skillet. Add red onion slices around burgers to allow them to cook in the hamburgers juices.
  • While burgers cook, mix mayo, dijon mustard, cayenne pepper and salt and pepper to taste.
  • Remove burgers and onions when done. Drain grease from skillet. Toast buns in the skillet until they are the desired toastiness.
  • Put mayo mix on bottom bun. Put burger on top of mix and top with onion and top bun.
  • Enjoy.

1 -2 tablespoon extra virgin olive oil

Steps:

  • Place bread crumbs in a small, shallow dish.
  • Mix chicken, garlic, parsley, oregano, basil and lemon juice. Add salt and pepper.
  • Form into 16 patties, each flattened and 2 inches in diameter. Press into bread crumbs to coat each side.
  • In large skillet, heat 1 tablespoon oil over medium heat. Add as many patties as will fit in a single layer and cook, turning once, until each side is brown and patties firm up, about 10 minutes.
  • Repeat with remaining patties, adding more oil if necessary.
  • Serve hot.

2 pounds ground chicken
½ cup dry bread crumbs
¼ cup dry French onion soup mix
4 ounces bacon, roughly chopped
2 tablespoons butter
1 small onion, sliced
1 cup sliced mushrooms
salt and ground black pepper to taste
6 medium croissants croissants, halved and toasted
6 slices Swiss cheese
6 slices bacon, halved and cooked

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Combine ground chicken, bread crumbs, and soup mix in a large mixing bowl.
  • Place 4 ounces bacon in a food processor. Pulse 10 to 12 times and scrape down the sides. Combine the bacon with the ground chicken mixture; form into 6 patties and place on a baking sheet. Place in a freezer to chill for 12 minutes.
  • Bake patties in the preheated oven for 8 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue cooking until browned, no longer pink, and an instant-read thermometer inserted into the center reads at least 165 degrees F (74 degrees C), about 12 minutes more.
  • Meanwhile, set a sauté pan over medium heat. Add butter and once butter is melted, add onion and mushrooms. Allow to soften, about 5 minutes. Sprinkle with salt and pepper.
  • Assemble chicken burgers by adding a chicken patty to each croissant, top with Swiss cheese, bacon, and the onion mushroom mixture. Serve immediately.

1 cup lukewarm water
1 tablespoon active dry yeast
3 tablespoons granulated sugar
3 ½ cups all purpose flour
1 teaspoon kosher salt
2 tablespoons unsalted butter, room temperature
1 large egg
nonstick cooking spray, for greasing
3 tablespoons melted unsalted butter, for finishing

Steps:

  • Add the lukewarm water to a 2-cup liquid measuring cup or medium bowl. Add the yeast and sugar and stir to combine. Let sit for 5-10 minutes, until frothy and doubled in volume.
  • In a large bowl, whisk together the flour and salt. Add the butter, egg, and the yeast mixture and stir with a rubber spatula into a shaggy dough.
  • Turn the dough out onto a clean surface and knead until smooth and soft, about 4 minutes. Place the dough in a clean large bowl lightly greased with nonstick spray and cover with a towel. Let rest until in a warm place until doubled in size, about 1 hour.
  • Preheat the oven to 400°F ( 200°C). Line a baking sheet with parchment paper.
  • Lightly grease a clean surface and place the dough on top. Pat down with your hands to about ¼-inch thick. Use a ¾-inch (2-cm) round cutter to cut out small circles. Place on the prepared baking sheet.

1 large egg

  • Preheat oven to 400°. Place beef in a small bowl; sprinkle with dressing mix and mix lightly but thoroughly.
