SKINNY MINI MEAT LOAVES WITH SWEET POTATO COINS

Steps:
- Preheat oven to 350° F and spray the cups in a muffin baking pan with cooking spray; set aside.
- Spray a small skillet with cooking spray and heat over medium-high heat. Add onion to pan; sauté 5 minutes or until lightly browned. Remove from heat; set aside to cool slightly.
- In a large bowl, combine onion, breadcrumbs, seasonings, ground turkey, egg and 1/4 cup ketchup.
- Spoon about 1/2 cup meat mixture into each muffin cup.
- Combine remaining 3 tablespoons ketchup and hot pepper sauce in a small bowl. Brush ketchup mixture over meat loaf tops.
- Bake at 350° for 25-30 minutes and until meat loaves are cooked through. Enjoy!

- Preheat oven to 375 degrees.
- Mix meat, stuffing mix, or bread cubes,water, and seasoning (choose one: italian seasoning, OR chili powder, OR oregano OR garlic powder) until well blended.
- Press evenly into 12 greased muffin tins.
- Make a small indentation in the middle of each with the back of a spoon.
- Fill the indentation with your choice of filling. (Choose one: pasta sauce OR salsa OR roasted red peppers OR BBQ sauce following the version of your choice.).
- Bake for 30 minutes or until loaves are cooked through. Top with the cheese specified in the recipe of your choice and bake 5 minutes or until cheese is melted.
- Let stand 10 minutes before removing from baking pan.
- For OAMC: Remove from baking pan and let cool. Flash freeze on a cookie sheet until frim. Transfer to a labeled ziploc bag. To serve: Defrost overnight, then reheat in oven or microwave until heated through.

- Preheat oven to 350 degrees F.
- In a large mixing bowl (using your hands or a large spoon), combine ground beef, breadcrumbs, onion, 1 Tbsp barbecue sauce, mustard, chili powder, garlic powder, salt, pepper and egg.
- Divide the mixture among the 12 cups in a standard muffin tin, pressing them down to fill the cup. Bake for 15 minutes.
- In the meantime, in a small bowl mix together all of the ingredients for the sauce.
- Remove the meatloaf from oven and use a paper towel to soak up any grease on the meatloaf.
- Generously spoon sauce over each mini meat loaf. Return to oven for an additional 10-15 minutes or until the meat is cooked through.
- Serve with mashed potatoes and any extra sauce.

- Heat oven to 200°F with two racks.
- Line two baking pans with parchment paper, and set aside.
- Slice potato crosswise, as thin as possible.
- Arrange the slices on the prepared sheets, and keep them from touching as much as possible.
- Sprinkle lightly with salt and pepper.
- Cook for 50 minutes.
- Slices will dehydrate and shrink; turn chips over, and rotate baking sheets if needed for even cooking.
- Cook until slices are crisped and fluted around the edges and the centers are still orange, not brown, 30 to 40 more minutes.
- Transfer to cooling racks, and cool chips on baking sheets.
- (Chips will be soft when removed from oven and will crisp as they cool.) Store in an airtight container, at room temperature, up to 3 days.
