NESTLE TOLL HOUSE MINI MORSEL COOKIES

This is a recipe I have had for years, and I don't remember ever making them. The ingredients sound basically the same as chocolate chip cookies, with the exception of the mini morsels. I thought I'd pass it on to everyone and maybe someone would like to try it and crytique it for us!!

Number Of Ingredients 10

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
2 cups nestle toll house miniature semisweet chocolate chips
1 cup chopped nuts

Steps:

  • Combine flour, baking soda and salt in small bowl.
  • Beat butter, sugars, and vanilla in large mixer bowl until creamy. Add eggs one at a time, beating well after each addition; gradually beat in flour mixture.
  • Stir in morsels and nuts.
  • Drop by rounded tablespoon onto ungreased baking sheets.
  • Bake in preheated 375F oven for 9-11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
  • FOR PAN COOKIE VARIATION: Prepare dough as above. Spread into greased 15x10-inch jelly roll pan. Bake in preheated 375F oven for 20-25 minutes or until golden brown. Cool in pan on wire rack. Makes 4 dozen bars.
  • FOR HIGH ALTITUDES (5200 feet): Increase flour to 2 1/2 cups. Add 2 teaspoons water with the flour and reduce both granulated sugar and brown sugar to 2/3 cup each. Bake at 375°F Bake drop cookies for 8-10 minutes and pan cookies for 17-19 minutes.

4 c. flour
1/3 c. sugar
2 tbsp. baking powder
1/2 tsp. salt
1/2 c. cold butter, cut into small pieces
6 oz. chocolate mini morsels
4 eggs, divided
1 c. undiluted Carnation evaporated milk
1 1/2 tsp. vanilla
2 tbsp. milk

Steps:

  • Combine flour, sugar, baking powder and salt in large bowl. With pastry blender, cut in butter until mixture resembles coarse crumbs. Stir in morsels. Beat 3 eggs, milk and vanilla in medium bowl. Add to flour mixture all at once; stir with fork to form a soft dough. Turn dough onto well-floured surface. Knead 6 to 8 times. Pat dough to 3/4" thickness. cut with floured 2 1/2" biscuit cutter. Transfer to lightly greased baking sheets. Beat remaining egg and milk in small bowl; brush over biscuits. Bake in preheated 400 degree oven for 14 to 16 minutes or until golden brown. Remove to wire racks; serve warm.

4 large egg whites
1/2 teaspoon salt
1/2 teaspoon cream of tartar
1 cup granulated sugar
2 cups nestle toll house miniature semisweet chocolate chips

Steps:

  • Preheat oven to 300°F Grease baking sheets.
  • Beat egg whites, salt and cream of tartar in small mixer bowl until soft peaks form. Gradually add sugar; beat until stiff peaks form. Gently fold in morsels 1/3 cup at a time.
  • Drop by level tablespoon onto prepared baking sheets.
  • Bake for 20-25 minutes or until meringues are dry and crisp. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Store in airtight containers.

2 cups all-purpose flour
4 teaspoons baking powder
1 teaspoon salt
1/4 cup shortening or 1/4 cup margarine
1 cup milk or 1 cup buttermilk

Steps:

  • Mix together flour, baking powder and salt.
  • Cut in shortening with 2 knives or a pastry blender, until mixture is the consistency of coarse cornmeal.
  • Make a well in the centre of these ingredients, add liquid slowly.
  • When all the liquid has been added, stir dough rather vigoroursly until it comes freely from the side of the bowl.
  • Turn dough onto lightly floured board and knead lightly for a few minutes.
  • Roll or pat out to desired thickness, about 1/2 inch.
  • Cut dough with 2 inch floured biscuit cutter, or floured open end of glass, place on ungreased baking sheet.
  • Bake in a hot oven 450 degrees for 12 to 15 minutes.

1 can mandarin oranges, drained and juice reserved
1/2 cup sugar
1 cup butter
2 eggs
1 TBSP vanilla
4 cups all purpose flour
3 TBSP baking powder
1 cup partridgeberries, fresh or frozen
Egg Wash: 1 egg and 1 TBSP water, mixed together and beaten with a fork to combine.

Steps:

  • Preheat oven to 400 degrees. Drain mandarin oranges. Set juice aside to use later in recipe. Mash mandarin oranges. Set aside. Cream sugar and butter until smooth. Add vanilla and eggs. Mix until combined. Stir in reserved mandarin juice and mashed mandarin oranges. In separate bowl, whisk together the flour and baking powder. Gently mix into wet ingredients until just combined. Add partridgeberries and combine. DO NOT OVERMIX! On a floured surface, gently roll out dough to 1 inch thickness. Cut into shapes and place on parchment lined cookie sheet. Brush with egg wash. Cook at 400 degrees for 12 minutes, until brown on the bottom and cooked through. Serve with butter or just as is! Enjoy ? Makes 24 Biscuits.
