MINI SWEET CORN CASSEROLES
These easy-to-make mini sweet corn casseroles are made with simple ingredients and a drizzle of honey on top for a sweet caramelized glaze.

Steps:
- Preheat oven to 350 degrees F. Spray ramekins with cooking spray. Place them on baking dish for easy baking. Set aside.
- In a bowl, add whole kernel corn, creamed corn, corn muffin mix, sour cream or yogurt, butter, honey, salt and pepper. Mix until well combined then transfer to the ramekins, filling each one evenly about 3/4 full.*
- Drizzle a bit of honey on top of each ramekins. Bake for 45-55 minutes, or until golden brown. Serve immediately and enjoy!

CORN CASSEROLE BITES
Steps:
- Preheat oven to 350° Fahrenheit.
- In a bowl combine the corn muffin mix, cans of corn, sour cream, and egg.
- In a mini muffin pan, pour the melted butter into the bottom of each tin, just enough to fill the bottom.
- Bake for 25-30 minutes until the top is starting to brown.
- If you like the top of your casserole crisp, turn the broiler on for 2-3 minutes to brown the tops more.
- Let the corn casserole bites cool in the pan for about 10 minutes.
- Take a butter knife and go around the outside of the muffin tin to loosen each bite.
- Let the corn casserole bites cool on a cooling rack or serve hot.
AWESOME AND EASY CREAMY CORN CASSEROLE
This truly is the most delicious stuff! A bit like a cross between corn souffle and a slightly sweet corn pudding! Try it, I know you will love the ease of preparation and especially the taste. Everyone always wants the recipe! Note: The ingredients can be doubled and baked in a 9x13 inch baking dish in almost the same amount of cooking time.

- Preheat oven to 350 degrees F (175 degrees C), and lightly grease a 9x9 inch baking dish.
- In a medium bowl, combine butter, eggs, corn bread mix, whole and creamed corn and sour cream. Spoon mixture into prepared dish.
- Bake for 45 minutes in the preheated oven, or until the top is golden brown.
