MINI SWEET CORN CASSEROLES



Mini Sweet Corn Casseroles image

These easy-to-make mini sweet corn casseroles are made with simple ingredients and a drizzle of honey on top for a sweet caramelized glaze.

1 can whole kernel sweet corn (drained (15 oz))
1 can cream-style sweet corn (14 oz)
1 1/2 cups cornbread and/or corn muffin mix (8 oz)
1/2 cup sour cream ((sub for plain yogurt))
1/4 cup melted unsalted butter ((1/2 stick; 4 tablespoons))
2 tablespoons raw honey plus more for drizzling on top
Salt and pepper to taste
Optional

Steps:

  • Preheat oven to 350 degrees F. Spray ramekins with cooking spray. Place them on baking dish for easy baking. Set aside.
  • In a bowl, add whole kernel corn, creamed corn, corn muffin mix, sour cream or yogurt, butter, honey, salt and pepper. Mix until well combined then transfer to the ramekins, filling each one evenly about 3/4 full.*
  • Drizzle a bit of honey on top of each ramekins. Bake for 45-55 minutes, or until golden brown. Serve immediately and enjoy!

Corn Casserole Bites are mini corn cakes filled with fresh corn. They are great as a side dish or served as an appetizer.

1 can corn (drained)
1 can cream-style corn
1 box Jiffy Corn Bread Mix
1 egg
8 ounces sour cream
1 ½ sticks butter (melted)

Steps:

  • Preheat oven to 350° Fahrenheit.
  • In a bowl combine the corn muffin mix, cans of corn, sour cream, and egg.
  • In a mini muffin pan, pour the melted butter into the bottom of each tin, just enough to fill the bottom.
  • Bake for 25-30 minutes until the top is starting to brown.
  • If you like the top of your casserole crisp, turn the broiler on for 2-3 minutes to brown the tops more.
  • Let the corn casserole bites cool in the pan for about 10 minutes.
  • Take a butter knife and go around the outside of the muffin tin to loosen each bite.
  • Let the corn casserole bites cool on a cooling rack or serve hot.

2 eggs, beaten
1 (8.5 ounce) package dry corn bread mix
1 (15 ounce) can whole kernel corn, drained
1 (14.75 ounce) can creamed corn
1 cup sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C), and lightly grease a 9x9 inch baking dish.
  • In a medium bowl, combine butter, eggs, corn bread mix, whole and creamed corn and sour cream. Spoon mixture into prepared dish.
  • Bake for 45 minutes in the preheated oven, or until the top is golden brown.
