1 lb. extra-lean ground beef
1 pkg. (6 oz.) STOVE TOP Stuffing Mix
1 cup hot water
2 tsp. chili powder
3/4 cup TACO BELL® Thick & Chunky Salsa
3/4 cup KRAFT Mexican Style Finely Shredded Four Cheese

Steps:

  • Heat oven to 375°F.
  • Mix first 4 ingredients just until blended; press into 12 muffin pan cups sprayed with cooking spray.
  • Use back of spoon to make indentation in center of each meatloaf; fill with salsa.
  • Bake 30 min. or until meatloaves are done (160ºF). Top with cheese; bake 5 min. or until melted.

These tiny Mexican Meatloaf portions are packed with flavor and the perfect size for kids - mix up your regular meatloaf with this fresh new recipe!

1 pound turkey, ground
1 tablespoon diced green chilies, canned
3/4 cup bread crumbs, seasoned
3 clove garlic
4 teaspoon oregano, dried
1 1/2 teaspoon chili powder
1 1/2 tablespoon cumin, ground
1 teaspoon salt
2 medium tomato, red
1 medium onion
2 sprigs cilantro
1 stalk green onion
1/2 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon black pepper, ground
1 cup yogurt, plain

Steps:

  • Preheat oven to 350 degrees F. Spray a muffin tin with nonstick cooking spray.
  • Mix ground turkey, chilies, bread crumbs, garlic, oregano, chili powder, cumin and salt in a medium bowl until well blended. Add the turkey mixture to the muffin tins. Bake for 25-30 minutes until lightly browned and cooked through.
  • Meanwhile, dice tomatoes, finely chop onion, cilantro and green onion. Place in a mixing bowl and season with garlic powder, salt and pepper. Cover and place in the refrigerator until ready to serve.
  • Top turkey meatloaves with pico de gallo and plain yogurt.

1 egg, lightly beaten
3/4 cup canned diced tomatoes, drained
1/2 cup crushed tortilla chips
1/4 cup shredded cheddar cheese
1/4 cup salsa
2 tablespoons taco seasoning
2 tablespoons diced onion
2 tablespoons diced ripe avocado
1/8 teaspoon salt, optional
1/8 teaspoon pepper
1/2 pound lean ground beef

Steps:

  • In a small bowl, combine the first 10 ingredients. Crumble beef over mixture and mix well. , Shape into two loaves; place in an 8-in. square baking dish coated with cooking spray. Bake at 350° for 30-40 minutes or until meat is no longer pink and a thermometer reads 160°.

1-1/2 cups KRAFT Mexican Style Shredded Four Cheese with a TOUCH OF PHILADELPHIA, divided
1 cup TACO BELL® Thick & Chunky Salsa, divided
2 eggs
4 cloves garlic, minced
2 Tbsp. brown sugar

Steps:

  • Heat oven to 375ºF.
  • Mix meat, stuffing mix, tomatoes, 1-1/4 cups cheese, 3/4 cup salsa, eggs and garlic until blended. Shape into 2 loaves in 13x9-inch baking dish.
  • Bake 50 min. Meanwhile, mix remaining salsa and sugar.
  • Spread salsa mixture over meatloaves; top with remaining cheese. Bake 10 min. or until meatloaves are done (160ºF).
