A traditional Upper Peninsula of Michigan treat! Complete with rutabaga! I am from the UP and this is the real deal! Rub pasties with a little milk for a golden color.

3 ½ cups all-purpose flour, sifted
1 ½ teaspoons salt
1 cup shortening
1 cup cold water
1 pound boneless round or chuck steak, cut into 1-inch cubes
2 potatoes, peeled and cubed
1 onion, chopped
¼ rutabaga, cubed
1 carrots, diced
salt and pepper to taste
6 tablespoons margarine

Steps:

  • In a large bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Stir in water until mixture forms a ball. Shape into a ball. Wrap in plastic and refrigerate.
  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • In a large bowl, combine meat, potatoes, onion, rutabaga and chopped carrots. Season with salt and pepper. Divide dough into six pieces, and shape into balls. On a lightly floured surface, roll each ball into a 6 inch round. Place approximately 1 cup filling on one half of each. Dot each with 1 tablespoon margarine. Draw the other half of the pastry over the filling. Crimp edges to seal in filling. Prick with a fork and place on prepared baking sheet.
  • Bake in preheated oven for 1 hour.

2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 cup shortening or lard
1/2 cup 2% milk
1/2 cup cubed uncooked potatoes
1/2 cup cubed uncooked rutabagas
1/2 cup cubed uncooked carrots
1/4 cup chopped onion
1/2 pound ground beef or diced beef top sirloin steak, browned

Steps:

  • Mix together first 3 ingredients; cut in shortening to form particles the size of large peas. Gradually add milk and mix just enough to make mixture stick together. Lightly shape dough into 4 balls; let stand for 5 minutes. , Meanwhile, combine vegetables and meat. On a lightly floured surface, roll each ball into a circle. Place one-fourth of the vegetable/meat mixture on 1 side of each circle; brush edge of crust with water and fold half the dough over filling. Press edges together to seal. Place on an ungreased baking sheet and prick tops with a fork. Bake at 350° for 1 hour.

This is a traditional Northern family recipe of mine. Fantastic and very flexible as you can pick and choose what you put in your own pasties to fit your tastes. Plus any leftover filling can be used to make a meat pie or be served with rice as leftovers.

1 1/2 lbs ground turkey
2 cups potatoes, chopped
1 cup carrot, sliced thin
1/2 cup onion, chopped
salt
pepper
1 tablespoon butter
assorted spices
3 cups flour
1/3 cup vegetable shortening
1 pinch salt

Steps:

  • Mix cubes of turkey, potatoes, carrot, and onion in a large bowl. Add salt pepper and seasonings.
  • Mix flour, shortening and salt. Gradually mix in 1/3 cup of water using a fork. Pat into a ball.
  • Divide into smaller balls and roll dough out to size of 8 inch pie tin.
  • Place 1 cup mixed filling on half of a rolled crust, fold over, and seal edges. Press edges down with fork.
  • Brush with milk and bake at 475 degrees for 20 minutes.
  • Reduce heat to 375 degrees for an additional 20 minutes.
  • Serve with ketchup or steak sauce.

Frenchy's Pasties image

Number Of Ingredients 11

12 ounces top sirloin steak, cut into 1-inch pieces
3 tablespoons butter
1 cup chopped peeled russet potato
1 cup chopped peeled rutabaga
3/4 cup chopped peeled carrot
1/2 cup chopped onion
1 tablespoon chopped fresh parsley
1 1/2 teaspoons dried thyme
1 large garlic clove, chopped
1/2 cup whipping cream
1 15-ounce package refrigerated pie crusts (2 crusts)

Steps:

  • Using on/off turns, coarsely chop meat in processor. Melt butter in heavy large skillet over medium heat. Add potato, rutabaga, carrot, onion, parsley, thyme and garlic. Sauté until vegetables are just tender, about 12 minutes. Add meat. Sauté until meat browns, about 10 minutes. Mix in cream. Season filling to taste with salt and pepper. Cool filling completely. (Can be prepared 1 day ahead. Cover; refrigerate.)
  • Preheat oven to 425°F. Unfold crusts on work surface. Spoon half of filling onto half of each crust. Fold other half of each crust over filling. Seal edges with fork. Transfer turnovers to baking sheet.
  • Bake turnovers until golden, about 30 minutes. Cut each in half and serve.

8 large potatoes, cube
1 1/2 lbs flank steaks, cut in small pieces
1 lb pork steak, cut in small pieces
1 large onion, diced
3 1/2 teaspoons salt
black pepper, to teaste
2 tablespoons parsley
1/2 cup rutabagas (optional) or 1/2 cup carrot, diced (optional)
4 -5 cups flour
2 cups lard or 2 cups Crisco
1 1/4 teaspoons salt
1 teaspoon sugar
3/4-1 cup water

Steps:

  • Cube all of the above ingredients. The filling including the meat is not cooked. Those of us who are Yoopers (originally from the Upper Penninsula know that the meat is never cooked before baking a Pastie!
  • Mix dough like pie crust.
  • Divide into 8 balls.
  • Roll out like a pie crust.
  • Put filling on half of circle. About 1 cup.
  • Crimp like pie crust. Will look like a half circle.
  • Put on ungreased cookie sheets.
  • Bake at 425 degrees for 20 minutes and 375 for 40 minutes.
  • Put slits in top of crust before baking.
  • Let sit about 1/2 hour after baking.
  • Enjoy!

Number Of Ingredients 7

1 double-crust pie dough, preferably made with shortening
1 1/4 pounds coarsely ground sirloin, flank or chuck steak (or you may chop into 1/4-inch dice)
2 russet potatoes, peeled and thinly sliced
1 large onion, halved and thinly sliced
1 medium rutabaga, peeled and thinly sliced
Salt and pepper to taste
2 tablespoons butter

Steps:

  • Divide the pie dough into 6 equal portions, press each into a flat disc, then stack them on a plate, cover with plastic wrap and refrigerate for 1 hour.
  • Preheat the oven to 400. Line a baking sheet with parchment paper.
  • Combine all the filling ingredients in a large bowl (be liberal with the salt and pepper) and mix well.
  • Roll out each dough disc into a 9-inch circle and brush edges with water. Place about 1/6 of meat-vegetable mixture off-center on each circle, topping each with 1/6 of the butter. Fold the large side of the dough over the filling, then crimp the edges to seal. Place on the prepared pan and cut several slits in the tops.
  • Bake about 15 minutes, then reduce heat to 350 and continue to bake (20 to 30 minutes) until the tip is golden brown. Serve with plenty of ketchup.

PASTIES were a must years ago when men worked the mines in northern Michigan. The housewives made them in the morning and wrapped them tightly in newspaper so they would stay warm until lunch break. 3 cups cubed peeled potatoes
1 cup chopped carrots
1 medium onion, chopped
3/4 teaspoon salt
1/4 teaspoon pepper
1/2 pound ground beef
1/4 pound ground pork
1 tablespoon butter, melted
PASTRY:
4 cups all-purpose flour
1-1/4 teaspoons salt
1 cup shortening
3/4 cup cold water

Steps:

  • In a large bowl, combine the potatoes, carrots, onion, salt and pepper. Crumble beef and pork over potato mixture and mix well. Add butter and toss to coat; set aside. , For pastry, in a large bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Gradually add water, tossing with a fork until a ball forms. , Divide dough into five portions; roll each into a 10-in. circle. Place 1 cup of filling in the center of each circle. Fold pastry over filling and seal edges tightly with a fork; cut slits in the top of each. , Place on a greased baking sheet. Bake at 375° for 50-60 minutes or until golden brown.

  • Remove the chilled dough from the fridge and cut into 6 equal chunks. Roll out individual chunk into a circle slightly larger than your hand on a well-floured surface. Place approximately 1/8 cup each of chunked up ground pork and beef on half of the dough circle. Salt and pepper well. Add small portions of vegetables on top of meat. Add salt and pepper. Sprinkle parsley on top.
