2 cups water
1 cup white sugar
1 bunch fresh rosemary, chopped
ice cubes
3 fluid ounces bourbon
1 ½ fluid ounces orange liqueur
1 ½ fluid ounces amaro liqueur (such as Fernet Branca®)
½ lemon, juiced
2 dashes aromatic bitters (such as Angostura®)
2 sprigs fresh rosemary
2 orange peel strips

Steps:

  • Combine water, sugar, and rosemary in a microwave-safe glass jar. Microwave and bring to a boil, about 2 minutes, watching carefully to ensure it doesn't boil over.
  • Allow to sit for 10 minutes; bring to a boil again. Let syrup sit until cooled, 15 to 20 minutes. Strain out the spent rosemary.
  • Measure 3 fluid ounces of rosemary simple syrup, ice, bourbon, orange liqueur, amaro liqueur, and lemon juice into a cocktail shaker and mix. Pour into glasses, add bitters to each, and top with a sprig of rosemary and an orange peel strip.

In our cold-weather version of the mojito we sub out white rum for rich, brooding blackstrap and mint for muddled rosemary.

1 large sprig rosemary
¾ ounce simple syrup or winter herb syrup
2 ounces blackstrap rum
1 ounce freshly squeezed lime juice
Soda water, to top
Garnish lime wheel and rosemary sprig
Simple syrup:
1 cup cane sugar
1 cup water
Winter herb syrup:
2 large sprigs rosemary
2 bunches thyme
5 sage leaves
1 cup sugar
1 cup water

Steps:

  • Make simple syrup:
  • Combine the sugar and water in a saucepan over low heat. Stir until the sugar dissolves, about 5 minutes. Remove from the heat and let the mixture cool. Store in a glass jar in the fridge for up to 1 month. Makes 1 1/2 cups.
  • Make winter herb syrup:
  • Wash the herbs and set them aside to dry. Combine the sugar and water in a saucepan over low heat. Add the herbs and stir until the sugar dissolves, about 3 minutes. Remove the pan from the heat and let the mixture cool and macerate for 1 hour. Strain through a cheesecloth into a glass jar and store in the fridge for up to 1 month. Makes 1 1/2 cups.
  • Make Mojito:
  • Remove the stem from the sprig of the rosemary and combine with the simple syrup in a cocktail shaker. Use a muddler to lightly crush the rosemary and let sit for a few minutes. Add the rum and lime juice. Add ice, shake, and pour through a fine-mesh strainer into a collins glass over ice. Top with soda and garnish with a lime wheel and a sprig of rosemary.

1 cup white grape juice
1 bottle (750 milliliters) dry rose wine
2 cups sliced fresh strawberries
Ice cubes
Fresh mint or rosemary sprigs

Steps:

  • In a small saucepan, combine raspberries and juice. Bring to a boil; reduce heat. Cook and stir over medium heat until liquid is almost evaporated, about 30 minutes. Remove from the heat. Press through a fine-mesh strainer into a bowl; discard seeds. Transfer puree to a pitcher. Stir in wine and strawberries. Refrigerate, covered, until chilled. Serve with ice; garnish with mint.

½ cup water
½ cup sugar
1 cup strawberry, chopped
ice, for shaking
4 oz vodka
2 tablespoons fresh lemon juice
1 teaspoon rosewater
4 oz dry sparkling wine
club soda, for topping
dried rose petal, for garnish

Steps:

  • Chill 2 champagne flutes in the freezer for about an hour prior to serving.
  • Make the strawberry simple syrup: In a small saucepan, combine the water and sugar and bring to a simmer over medium-high heat, stirring until the sugar dissolves.
  • Reduce the heat to medium-low and add the strawberries. Simmer for 10-15 minutes, muddling to break down the strawberries, until the syrup is bright red and the strawberries start to lose their color. Remove the pot from the heat and let the syrup cool to room temperature.
  • Strain the syrup through a fine-mesh sieve, discarding the leftover solids. The syrup will keep in an airtight container in the refrigerator for up to 10 days.
  • Make the cocktail: Fill a cocktail shaker halfway with ice. Add the vodka, lemon juice, rosewater, and 1 ounce strawberry simple syrup. Close the shaker to seal and shake vigorously for about 30 seconds.
  • Strain the cocktail into the chilled champagne flutes, dividing evenly. Top each glass with 2 ounces of sparkling wine, then fill almost to the brims with club soda. Top with rose dried petals and serve immediately.
