Ingredients

1 (750-ml) bottle dry white wine or 3 cups white grape juice
2 (8-ounce) bottles fresh watermelon juice
1 1/2 cups mixed melon balls, cantaloupe and honeydew
Ice cubes
1 (33.8-ounce) bottle club soda

Steps:

In a large pitcher, combine wine, melon juice, and melon balls. Chill for at least 1 hour. Just before serving, add ice, stir, pour in soda, and stir lightly again.

1/3 cup sugar
1/2 cup packed mint leaves
Lime slices and mint leaves for garnish

Steps:

Combine the lime juice, sugar and mint in a blender. Puree until smooth. Fill two tall glasses halffull with ice cubes. Pour half of the lime juice concentrate in each. Top with sparkling water, garnish with lime and mint and serve.

2 cups lime cordial
2 cups club soda
4 slices lime

Steps:

Reserve 4 mint leaves for garnish. Place the remaining mint leaves and lime cordial into the container of a blender, and process until mint is finely ground. Stir in the club soda. Serve in tall glasses over ice. Garnish with fresh mint leaves and lime slices.

For a teetotaler's version, add a teaspoon of sugar (or more, to taste)) to the blueberries and to the strawberries when blending. The liquor version can be made in advance and kept in the freezer - the alcohol keeps it from freezing solid.

1 cup blueberries
1 cup ice cube
1/2 ounce white rum
1/2 ounce blue curacao (optional)
1 cup fresh pineapple (packed in water) or 1 cup canned crushed pineapple (packed in water)
1 cup ice cube
1/4 cup cream of coconut
1/2 ounce white rum
1 cup strawberry
1 cup ice cube
1/2 ounce white rum
1/2 ounce strawberry liqueur (Bois is one brand)
1 sprig mint (optional) or 1 piece pineapple, for garnish (optional)

Steps:

In a blender or food processor, blend the blueberries, a cup of ice cubes, the rum and the optional blue Curacao until it is smooth and slushy. Divide among two or three large glass goblets.
Repeat with the pineapple, ice cubes, cream of coconut and rum, and then with the strawberries, ice cubes, rum, and strawberry liqueur, making three layers in the goblet.
Garnish with a sprig of mint or a piece of pineapple and serve with a long spoon or straw.
