BAKED LAMB AND ORZO (ARNI YOUVETSI)



Baked Lamb And Orzo (Arni Youvetsi) image

Number Of Ingredients 11

2 pounds lamb (shank, leg, shoulder roast, top roast, etc.)
Olive oil, for drizzling
1 tablespoon salt
2 tablespoons ground black pepper
1 large onion, diced
3 cloves garlic, minced
2 tablespoons tomato paste
3/4 cup diced tomatoes
3 cups broth or water
8 ounces orzo
Myzithra cheese, feta, Parmesan or good Romano, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Rub the lamb with olive oil and sprinkle very liberally with salt and pepper. Sear the lamb in a heavy bottomed skillet. Transfer to a casserole dish.
  • Add a little olive oil to the skillet, then add the onions. Cook until tender, then stir in the garlic and tomato paste and cook until they start to become incorporated with the onions. Add the diced tomatoes and broth and bring to a boil; season to taste with salt and pepper. Add the liquid to the lamb casserole. Cover it and bake until the lamb is very tender, about 2 hours 30 minutes.
  • Add the orzo and stir. Add some hot water if it starts to look dry and continue to bake, uncovered, until the orzo is cooked, 20 to 30 minutes.
  • Serve pieces of the lamb alongside the orzo and top generously with your choice of cheese.

ARNI PSITO: SPIT ROASTED TRADITIONAL GOAT OR LAMB



Arni Psito: Spit Roasted Traditional Goat or Lamb image

1 leg of lamb or goat
8 small sprigs rosemary
3 cloves garlic, sliced thinly
1/4 cup olive oil
1 tablespoon dry oregano, chopped fine
1 lemon, juiced
2 teaspoons salt
1 teaspoon black pepper
1 tablespoon fresh oregano, chopped fine

Steps:

  • Preheat the oven to 500 degrees F.
  • Make sure the lamb is cleaned well and any hard fat is trimmed off. Make 8 slits in the leg and stuff them with the rosemary sprigs and garlic cloves. Rub the leg with the olive oil, dry oregano, lemon, salt, and pepper. Roast for about 30 minutes.
  • Lower the heat to 375 degrees F. Add water to the pan, if needed. Cook for about 3 1/2 hours. Remove from the pan and let rest. Skim the fat from the pan juices and pour into a bowl with the fresh oregano.

1 small chicken (about 1 1/2 pounds), cut into 8 pieces, skin removed
1 1/2 cups water
1 teaspoon salt
1/2 celery stalk, diced
1 cup all-purpose flour
1/4 cup chopped onion
1 cup all-purpose flour
1 teaspoon baking powder
3/4 teaspoon salt
1 tablespoon vegetable shortening
1/2 cup skim milk

Steps:

  • Chicken:
  • Place chicken in a stockpot or large saucepan. Add water, salt, celery, and onion and simmer over low heat until chicken is fully cooked through. Increase heat to bring chicken and stock to a boil. Add dumplings, cover, and boil gently 8 to 10 minutes or until dumplings and chicken are tender. Ladle into serving bowls.
  • Dumplings:
  • Combine flour, baking powder, and salt in a bowl. Cut in the shortening. Add milk to make a stiff dough and knead until incorporated. Roll dough out to about 1/8-inch thickness and cut into 1-inch strips, squares, or diamonds. Add to chicken and stock as directed above.

4 basil leaves
Sliced black olives
1/2 cup grated Parmesan
1 teaspoon crushed red pepper flakes, optional

Steps:

  • Spread the pizza sauce evenly over the tortillas. Roughly tear the basil leaves over the sauce. Sprinkle black olives over sauce. Divide the cheese and red pepper flakes, if using, evenly over top. Roll tortillas up and then heat in a toaster oven until cheese has melted.

Steps:

  • Cook pasta in large pot of salted, boiling water until al dente. Drain.
  • When pasta is almost done, start slowly melting butter over medium heat until golden. Skim butter solids off top. Toss pasta with butter. Sprinkle with cheese to taste.
