BAY SCALLOP CHOWDER

Excellent chowder for the holidays. This recipe can also be made with other seafood.

Number Of Ingredients 15

3 cups chicken broth
1 carrot, chopped
1 stalk celery, chopped
1 onion, chopped
3 potatoes, cubed
½ teaspoon dried thyme
2 tablespoons dried parsley
½ teaspoon salt
¼ teaspoon ground black pepper
1 pound fresh mushrooms, sliced
1 pound bay scallops
2 tablespoons margarine
½ cup white wine
1 egg yolk
1 cup heavy whipping cream

Steps:

  • In a large pot over high heat, combine the chicken broth, carrot, celery, onion, potatoes, thyme, parsley, salt and ground black pepper and bring to a boil. Reduce heat to medium low and simmer for 10 to 15 minutes. Transfer mixture to a food processor or blender, puree until smooth and set aside.
  • In the same pot over medium heat, saute the mushrooms and scallops in the butter or margarine for 2 to 3 minutes. Add the wine and reserved puree mixture to the pot, reduce heat to low and allow to simmer.
  • In a separate small bowl, combine the egg yolk and heavy cream. Mix well and add to the soup. Continue simmering over low heat, stirring occasionally for 10 to 15 minutes.

Every once in a while I make a dish that no matter how great it tastes, I just can't get past how it looks, and that was the case with this very easy, incredibly delicious scallop chowder. If you do make it, and want a thicker, more traditional chowder base, simply mash some of your potatoes into the mixture.

2 teaspoons olive oil
2 slices bacon, cut into small pieces
½ yellow onion, diced
1 rib celery, diced
2 cloves garlic, minced
1 (8 ounce) bottle clam juice
1 cup low-sodium chicken broth
1 cup cubed Yukon Gold potatoes
1 pinch cayenne pepper, or to taste
freshly ground black pepper to taste
½ cup heavy whipping cream
1 red Fresno chile pepper, diced
1 teaspoon lemon zest
salt to taste
1 pound bay scallops
1 tablespoon chopped fresh tarragon

Steps:

  • Heat olive oil in a skillet over medium heat; cook and stir until fat renders and bacon is slightly browned, 3 to 5 minutes. Add onion to bacon; cook and stir until soft and translucent, 3 to 5 minutes. Stir celery and garlic into onion mixture, cook until fragrant, 1 minute.
  • Pour clam juice, chicken broth, potato, cayenne pepper, and black pepper into bacon mixture; bring to a simmer, reduce heat to medium low, and cook until potatoes are almost tender, 12 to 15 minutes. Stir cream and chile pepper into potato mixture; bring to a simmer and cook until potatoes are completely tender and chowder flavors combine, about 5 minutes. Season with lemon zest and salt.
  • Stir scallops into chowder and cook over medium heat until scallops are tender and white, 1 to 3 minutes. Remove from heat; stir in tarragon.

2 slices bacon, chopped
12 ounces bay scallops, thawed if frozen
1 onion, chopped
1 cup diced peeled potato
1/4 cup chopped celery
1 cup fish stock or 1 cup chicken stock
1/4 cup flour
1/8 teaspoon white pepper
1/4 teaspoon dried marjoram
2 1/2 cups milk
12 ounces corn, drained

Steps:

  • In large stockpot, cook bacon until crisp; remove from pan, drain on paper towels, crumble, and set aside.
  • In drippings, place scallops and cook for 3-4 minutes until opaque (8-9 minutes for sea scallops).
  • Remove scallops from pot and set aside.
  • In drippings in pot, add onion, potatoes and celery and cook for 3-4 minutes.
  • Add fish stock and bring to a boil; reduce heat, cover, and simmer for 8-10 minutes until potatoes are tender.
  • In medium bowl, combine flour, marjoram, pepper, and milk and mix with wire whisk until blended.
  • Add to pot along with drained corn and bring to a simmer.
  • Cook over medium heat for 12 minutes, stirring often, until soup has thickened and vegetables are tender.
  • Add cooked scallops and simmer for 3-4 minutes until scallops are thoroughly heated.

BAY SCALLOP CHOWDER WITH BACON AND CABBAGE

4-ounce slab (unsliced) smoked bacon, rind removed, small dice (1/3-inch)
2 tablespoons unsalted butter
1 large onion (10 to 12 ounces), large dice (3/4-inch)
2 to 3 sprigs fresh thyme, leaves chopped (1 teaspoon)
1 dried bay leaf
1 1/2 pounds Yukon gold, Maine, PEI or other all-purpose potato, peeled, large dice (3/4-inch)
5 cups fish stock, chicken stock, or either in combination with water to make 5 cups total liquid
8 ounces Savoy cabbage, large dice (3/4-inch)
Kosher or sea salt
Freshly ground pepper
1 1/2 pounds medium bay scallops-left whole, or large sea scallops, cut down to large (3/4-inch) pieces, strap removed
1 1/2 cups heavy cream (up to 2 cups)
2 or 3 scallions, very thinly sliced

Steps:

  • Heat a 6 or 8-quart heavy bottomed soup or sauce pot over a low heat and add the bacon. Once it has rendered a few tablespoons of fat, increase the heat to medium and cook the bacon until crisp golden brown. Leave the bacon pieces and the fat in the pan. Add the butter, onion, thyme and bay leaf. Saute them for about 8 minutes over a medium heat, stirring occasionally, until the onions are softened, but not browned. Add the potatoes and fish stock. The stock should just barely cover the potatoes. If it doesn't add enough water to cover them. Turn up the heat and bring to a boil. Cover the pot and cook the potatoes vigorously for about 8 minutes. Add the diced cabbage, reduce heat to medium, and simmer for 5 more minutes. Season with salt and pepper. The potatoes should be firm in the center and soft on the outside. If the broth hasn't thickened, lightly smash a few potatoes against the side of the pot and simmer 1 or 2 minutes longer to release their starches. Remove the pot from the heat. Stir in the scallops and let sit for 5 minutes. Add the cream and let sit 10 more minutes while the scallops finish their slow cooking. Retaste the chowder and adjust the salt and pepper. If you are not serving the chowder within the hour, let it cool a bit then refrigerate. Cover the chowder after it has completely chilled. Otherwise, let it sit for up to an hour, allowing the flavors to meld. When ready to serve, reheat over a low heat and don't let the chowder boil. Use a slotted spoon to mound the pieces of scallop, potato, cabbage and bacon in the center of large soup plates or shallow bowls and ladle the creamy broth around. Sprinkle generously with sliced scallions.

2 pounds fresh cranberry beans (shell beans) in the pod
4-ounce slab (unsliced) bacon, rind removed and cut into 1/3-inch dice
1 clove garlic, finely chopped (1 teaspoon)
1 large onion (12 ounces), cut into 1/2-inch dice
2 to 3 sprigs fresh thyme, leaves removed and chopped (1 teaspoon)
1 dried bay leaf
5 cups chicken stock, chicken broth, or water
1 pound ripe tomatoes, peeled and cut into 1/2-inch dice, with their juice, or 1 1/2 cups diced (1/2-inch) canned tomatoes with their juices
2 tablespoons dark molasses
Kosher or sea salt and freshly ground black pepper
3 scallions, thinly sliced, for garnish

Steps:

  • Shuck the beans and discard any that are soft or blemished. You should have about 3 cups.
  • Heat a 3 to 4-quart heavy pot over low heat and add the diced bacon. Once it has rendered a few tablespoons of fat, increase the heat to medium and cook until the bacon is crisp and golden brown.
  • Add the garlic and cook for 30 seconds. Add the onion, thyme, and bay leaf and saute, stirring occasionally with a wooden spoon, for about 8 minutes, until the onion is tender but not browned.
  • Add the beans and stock. Partially cover the pot and bring to a simmer. Cook the beans at a steady simmer over medium heat for 20 to 25 minutes, until they are tender. Reduce the heat to low.
  • Remove 2 cups of the chowder from the pot and puree in a food mill held over the pot so it falls directly back into the chowder, or puree in a food processor and return to the chowder. Add the tomatoes and their juices, along with the molasses, and let the chowder simmer slowly for another 15 minutes. Remove from the heat and season with salt and pepper. If you are not serving the chowder within the hour, let it cool a bit, then refrigerate; cover the chowder after it has chilled completely. Otherwise, let it sit at room temperature for up to an hour, allowing the flavors to meld.
  • When ready to serve, reheat the chowder over low heat, stirring occasionally so it doesn't stick. Ladle the chowder into cups and sprinkle with the slice scallions.
  • Variation Dried Bean Chowder:
  • Substitute 8 ounces dried shell beans, limas, or other white bean for the fresh shell beans. Soak them overnight in enough water to cover generously; drain. Depending on the bean you choose, the cooking time may be doubled or even longer. Follow the recipe and simmer until the beans are tender, adding water as necessary (about 1 cup) to compensate for the evaporation during the longer cooking time.
  • Variation Cider and Bean Chowder:
  • This idea also comes from the Shakers, who used sweet apple cider as the liquid in several of their soups. It adds a new dimension to the sweet-and-sour flavor of this chowder. Cider is pressed from late August through November, so you can try this in either the fresh or dried bean versions. Substitute 3 cups apple cider for 3 cups of the chicken stock (you will still use 2 cups of chicken stock).

1/2 cup dry white wine
1 cup heavy cream

Steps:

  • 1. Put the potatoes, carrot, onion, broth, bay leaf, pepper, and thyme in a large pot and bring to a boil. Reduce the heat to low and simmer, covered, until the vegetables are very tender, about 20 minutes. Remove the bay leaf and transfer the mixture to a blender. Blend until smooth. Return to the cooking pot. 2. While the vegetables cook, heat the butter in a large skillet and cook the mushrooms, stirring, until they release their juices, 3 to 4 minutes. Add the scallops and wine. Bring to a boil, and cook 1 minute. Stir in the cream and add to the vegetable mixture. Heat through completely. 3 cups whole milk
1 cup whipping cream
2 medium sized potatoes, peeled and diced to 1/2-inch
1 lb bay scallop (or use sea scallops, quartered)

Steps:

  • In a large, heavy soup pot, melt 3 Tbsp of the butter. Add onions. Turn heat to low. Cook 5 minutes, or until soft and translucent, but not brown.
  • Pour in the milk and cream. Simmer 15 minutes.
  • Meanwhile, cook potatoes in lightly salted boiling water to cover until tender, about 15 minutes. Drain. Keep hot in heat-proof serving dish.
  • Melt 2 Tbsp butter in heavy skillet. Add the scallops. Saute over high heat until opaque, about 1 minute. Add to the potatoes.
  • Add potatoes and scallops to the onion-cream mixture. Heat to serving temerature. (Add salt as needed.) Sprinkle each bowl with paprika if desired.

2 cups 2 percent milk
2 potatoes, peeled and diced
1/8 tsp cayenne pepper
1 lb (about 2 cups) bay scallops
2 cups fat-free half-and-half
3/4 cup all-purpose flour
Olive- or vegetable-oil cooking spray
4 thin slices prosciutto
Fresh chives and basil, chopped

Steps:

  • Simmer cobs in clam juice in a large pot over medium heat for 5 minutes. Remove cobs and set liquid aside. Put oil in the same pot and cook leeks and celery on low for 15 minutes. Stir in garlic, clam-and-cob liquid, milk, potatoes, and cayenne. Simmer 5 minutes; add corn kernels and scallops. Whisk together half-and-half and flour to form a smooth slurry; add to pot. Steps:

  • In 2 qt stock pot melt 1 stick butter. Add onion, shallot, and celery and saute until translucent. Dredge scallops in flour. In separate saute pan, melt 2-4 TB butter and add scallops. Cook over medium heat approximately 5 minutes or until scallops have a golden coating. Add scallops to onion/celery mix. Add 4 cups stock/broth to pot Add 1 cup white wine Add 1 c milk Add white beans and over medium heat cook soup approx 10 minutes. Add corn and continue cooking approximately 5-8 more minutes. Turn heat down to low, add tomatoes, and continue cooking 10 minutes.
