If you like pineapple, add a ray of sunshine to your week with a cheeky Hawaiian pizza. It's easy to make your own pizza dough - though you'll need to allow time for it to rise - and so much tastier than ready-made pizza bases.

200g/7oz strong white flour, plus extra for dusting
200g/7oz '00' flour
5g/⅛oz fast-action dried yeast
1 tsp caster sugar
1 tsp salt
2 tbsp extra virgin olive oil, plus extra for greasing
250-300ml/7-10fl oz tepid water
250g/9oz passata
pinch garlic granules
good pinch dried oregano
pinch dried chilli flakes
pinch caster sugar
125g/4½oz mozzarella, drained and torn into pieces about the size of a large olive
6 slices ham, cut into 2cm/¾in wide strips
4 tinned pineapple slices, drained and cut into chunks
1 green chilli, seeds removed and thinly sliced (optional)
salt and freshly ground black pepper

Steps:

  • To make the pizza dough, tip both flours into a large bowl (or a stand mixer fitted with a dough hook). Add the yeast, sugar and salt and mix well. Make a well in the middle and add the olive oil and 250ml/9fl oz tepid water; mix well, adding a little more water if the mixture looks too dry - it should be soft and slightly sticky. Knead until smooth and elastic.
  • Shape the dough into a ball and place in a large oiled bowl, cover with cling film and leave at room temperature for 45 minutes-1 hour, or until doubled in size.
  • Meanwhile, prepare the topping. Pour the passata into a small saucepan, add the garlic granules, oregano and chilli flakes and season well with salt and pepper. Mix well, bring to the boil, reduce to a simmer and cook for about 4 minutes, until reduced and thickened slightly. Taste and add a pinch of sugar if needed. Remove from the heat and leave to cool.
  • Preheat the oven to 220C/200C Fan/Gas 7 and place a pizza stone or a large, heavy baking tray in the oven to heat up.
  • Dust the work surface with flour, turn the dough out of the bowl and divide in half. Shape each half into a neat ball, dust with flour and leave to rest for 5 minutes.
  • Using floured hands or a rolling pin, shape one ball of dough into a neat circle about 25cm/10in in diameter, with a slightly thicker edge. Place on a large sheet of baking paper. Spread with half of the passata, leaving a 1-2cm/½-¾in border all around. Scatter with half of the mozzarella and half of the ham and pineapple. Top with green chilli, if using, and season with pepper.
  • Slide the pizza on the baking paper onto the hot pizza stone and cook for 10-12 minutes, or until the crust is golden and the toppings are bubbling. While the first pizza is cooking, prepare the second in the same way.

1 can of pineapple or fresh pineapple
1 pck tofu firm or 80 g coconut flakes or ready-made smoked tofu (nothing else needed)
3 tbsp soy sauce
1 tsp smoked paprika

Steps:

  • First you prepare your pizza dough and your pizza sauce as well as the cheese sauce. You will also need to prepare the coconut bacon. Mix the ingredients and bake it for around 7-10 min at 350°F (180°C). Make sure it doesn't burn. Next, roll out the pizza dough and spread the pizza sauce on it and then spread the cheese sauce. Now take the pineapple and cut it into pieces. Spread them on the pizza and sprinkle them with coconut bacon or diced smoked tofu. Bake the pizza at 400°F (200°C) for about 20 minutes or until the desired degree of browning is reached

2 teaspoons minced peeled ginger
2 teaspoons canola oil
Kosher salt
1/2 cup tomato puree
1 pound pizza dough (or one 10-to-12-inch prepared crust)
All-purpose flour, for dusting
Cornmeal, for dusting
1 cup shredded cheese blend (mozzarella, provolone, cheddar and/or parmesan)
1/2 cup sliced pepperoni
1/2 cup chopped pineapple
1 fresh red chile pepper, thinly sliced
Fresh mint and Sriracha (hot Asian chili sauce), for topping

Steps:

  • Put a pizza stone or upside-down baking sheet in the oven; preheat to 500 degrees F. Pulse the garlic, ginger, canola oil and a pinch of salt in a food processor until smooth. Mix 1 teaspoon of the garlic-ginger paste with the tomato puree. Stretch the pizza dough into a 12-inch round on a floured surface. Put on a cornmeal-dusted pizza peel or upside-down baking sheet; slide onto the hot pizza stone or baking sheet and cook 5 minutes. (If you're using a prepared crust, skip this step.) Slide the crust back onto the peel. Spread with the tomato puree, then top with the cheese, pepperoni, pineapple and chile pepper. 1 pound pizza dough (or homemade dough)
olive oil (for greasing baking sheet and brushing)
cornmeal (for sprinkling baking sheet (optional))
½ cup pizza sauce (or homemade marinara sauce)
1 cup mozzarella cheese (shredded)
4 ounces Canadian bacon (about 4 to 5 slices)
½ cup diced pineapple (100g, 3 ½ ounces, fresh or canned)
¼ cup chopped bacon (cooked, ¼-inch dice, about 4 slices)
oregano (fresh or dried, for sprinkling (optional))

Steps:

  • Set the oven rack to the lower position. Preheat to 500ºF (260ºC).
  • Allow the pizza dough to sit at room temperature for 30 minutes.
  • Lightly brush a large baking sheet with olive oil. Evenly sprinkle cornmeal on the pan if desired.
  • On a lightly floured surface, stretch and shape the dough into a 10-inch circle.
  • Transfer dough to the baking sheet. Use fingers to press into a 12-inch circle. Leave the edges slightly thicker, about ½-inch tall and wide.
  • Brush some olive oil on the edges of the dough to make the crust crispier when baked.
  • Spread the sauce on top, followed by the cheese, ham, pineapple, and bacon. Sprinkle the oregano on top.
  • Bake the pizza on the lowest oven rack until the crust is golden brown, and the cheese is melted and bubbly, about 10 to 12 minutes.
  • Slice and serve pizza immediately when still hot.

4 cups All-purpose flour
1 1/2 tsp Salt
1 tsp Instant dry yeast
1 1/2 cup Water warm
1 tbsp Olive oil
1 tbsp Sugar
1 Garlic (sliced)
1/4 Onion (sliced)
1 can Tomatoes crushed
1 sprig Basil fresh
4 tbsp Tomato paste
1 tbsp Italian seasoning
1 tbsp Brown sugar
1/4 tsp Salt
1/4 tsp Pepper
2 tbsp Olive oil
1 1/2 cup Ham (cut into cubes)
9 slices Pineapple (large, cut into pieces)
1/2 cups Parmesan cheese
1 1/2 cup Mozzarella

Steps:

  • In a bowl, combine flour and salt - and set aside.
  • In a measuring cup - measure the warm water, add olive oil, sugar, and yeast. Combine well.
  • Add the yeast mixture to the flour mixture.
  • Use a wooden spoon or spatula to combine it well making sure no dry flour is left on the bottom.
  • This is a very wet dough, so don't try touching it with your hand.
  • Cover with a clean kitchen cloth or plastic wrap.
  • Let on the countertop for an hour.
  • Then, place in the fridge for 4 hours - up to 12 hours. I like to leave it overnight.
  • Tip - Make sure the dough is well covered with plastic wrap so it does not dry out in the fridge.
  • Preheat oven with pizza stone for at 200 C / 390 F for about 30 minutes.
  • Remove the dough from the fridge.
  • The dough will have become three times its size but still be very soft, sticky, and elastic with lots of air pockets.
  • Dust your work surface generously with flour.
  • Remove the dough on to the floured work surface. It is best to use a bench scraper or spatula.
  • Divide the dough with a bench scraper. This dough makes three (for 3 x 12-inch thin-crust pizzas).
  • Tip - Let the dough rest again for 10 to 15 minutes.
  • Using a rolling pin, roll one piece of dough to about 12 inches (see video).
  • Transfer pizza to a pizza peel, pizza pan, or baking tray. The video below uses a pizza peel.
  • Tip - Place parchment paper on a pizza peel (parchment is less messy than cornmeal or flour).
  • Tip - Let the base rest for 5 to 10 minutes - this will proof the base just a little which makes those edges puffy. (optional)
  • Add all ingredients in a blender until smooth.
  • Pour into a saucepan and cook on high for 2 minutes.
  • You want the excess moisture to evaporate (see video).
  • Let cool then use it on your favorite pizza.
  • Tip - Brush the edges of the pizza with olive oil (this will give a nice golden crisp crust).
  • Spread pizza sauce.
  • Scatter the pineapple and ham chunks all over.
  • Now, sprinkle the parmesan, followed by the mozzarella.
  • Transfer the pizza to the preheated oven.
  • Bake for about 10 to 12 minutes until the edges are crisp and golden and the cheese is melted beautifully.
