Stuffed Mushrooms with Pine Nuts and Golden Raisins image

Mushrooms are stuffed with fontina cheese, pine nuts and golden raisins and then baked until golden brown.

24 large white or cremini mushrooms, wiped clean, stems finely chopped for the filling
2 tablespoons extra-virgin olive oil
Kosher salt
1/4 cup olive oil
1/2 cup finely chopped carrot
1/2 cup finely chopped onion
Kosher salt and freshly ground black pepper
1/2 cup grated fontina cheese
3 tablespoons pine nuts
3 tablespoons chopped golden raisins
2 tablespoons finely chopped fresh flat-leaf parsley
1 cup coarse fresh white breadcrumbs

Steps:

  • Preheat the oven to 425 degrees F.
  • For the mushrooms: If your mushrooms caps are very rounded, trim a very thin slice from the top of the caps to help them sit upright for baking. Toss the mushroom caps with the oil and 1/4 teaspoon salt in a large bowl.
  • For the filling: Heat the olive over medium-high heat. Add the chopped mushroom stems, carrot, and onion and cook, stirring occasionally, until just soft, 6 to 8 minutes. Scrape into a large bowl, season with 3/4 teaspoon salt and a few grinds of pepper and set aside to cool.
  • Add the fontina, pine nuts, raisins and parsley to the cooled mushroom stem mixture. Stir in the breadcrumbs until well moistened.
  • Pack each mushroom with an equal amount of filling and transfer the filled mushrooms to a rimmed baking sheet. Bake until the mushrooms are tender and the filling is brown and crispy on top, about 15 minutes. Let cool 5 minutes before removing from the baking sheet.

Grilled Swordfish Kebabs With Golden Raisin Chimichurri image

Swordfish is the perfect seafood for grilling - the flesh is sturdy and firm, with a mild flavor that readily absorbs the aroma of smoke without losing its own. Most people grill swordfish as steaks; the Miami chef Michael Schwartz cuts it into chunks for kebabs, a format that allows him to intersperse the chunks of fish with lemon slices and bay leaves, and grills them over wood (though you could use charcoal or, if necessary, grill over gas). The tips of the bay leaves char, imparting a fragrant herbal smoke. By way of a sauce, Mr. Schwartz serves a classic Argentine chimichurri with a not-so-classic twist - the addition of yellow raisins, which counter the traditional garlic and vinegar with an unexpected note of sweetness. If swordfish is unavailable, use another sturdy fish, like tuna or mako shark.

2 pounds swordfish steaks (at least 1 1/2 inches thick), skinned and cut into 1 1/2-inch chunks
12 bay leaves (preferably fresh)
2 lemons, halved lengthwise and then cut crosswise into 1/4-inch slices, seeds removed, plus 1 whole lemon for squeezing
Coarse sea salt and ground black pepper
2 tablespoons chopped fresh oregano
Extra-virgin olive oil
1/2 cup golden raisins
1 cup boiling water
3/4 cup plus 2 tablespoons extra-virgin olive oil
1 bunch flat-leaf parsley, washed, shaken dry and stemmed
1/4 cup stemmed fresh oregano
1 tablespoon fresh thyme leaves
2 cloves garlic, minced
3 tablespoons sherry vinegar, or to taste
2 tablespoons fresh lemon juice
1/2 teaspoon red-pepper flakes

Steps:

  • Make the kebabs: Thread the swordfish, bay leaves and lemon slices alternately onto flat bamboo or metal skewers. Arrange in a nonreactive baking dish. Season the kebabs on all sides with salt and pepper. Squeeze the juice from the remaining lemon over them. Sprinkle with oregano and drizzle with olive oil. Turn the kebabs a few times to coat with the flavorings and marinate in the refrigerator for 30 minutes.
  • Meanwhile, make the chimichurri: Place the raisins in a heatproof mixing bowl. Pour boiling water over them and stir in 2 tablespoons olive oil. Let raisins soak for 15 minutes.
  • Finely chop parsley, oregano, thyme and garlic in a food processor. Gradually work in 3/4 cup olive oil, sherry vinegar, lemon juice, red-pepper flakes, salt and pepper to taste; the chimichurri should be highly seasoned.
  • Drain raisins well and add them to the chimichurri. Pulse the processor a few times to mix, but leave the raisins mostly whole. Transfer 3/4 cup of the chimichurri to a small bowl for basting, and transfer the rest to a serving bowl.
  • Meanwhile, build a wood fire in your grill with a hot zone for searing and a medium zone for cooking. (You can do the same with charcoal. If you're using a gas grill, place a few hardwood chunks between the Flavorizer bars or over the burners. Heat one burner on high heat and additional burners on medium heat, adjusting the heat as necessary.) Brush and oil the grill grate.
  • Arrange the kebabs over the hot fire and grill until the fish is browned and sizzling and cooked through, 2 to 3 minutes per side, 8 to 12 minutes in all. Move kebabs to the medium zone if they start to burn. Baste with a little of the reserved chimichurri as the kebabs cook.
  • Serve the kebabs with the remaining chimichurri on the side for spooning over the fish.

This Easter centerpiece looks like a fancy roulade, but it's simply a boneless leg of lamb folded over an aromatic pistachio-scallion stuffing and tied nice and neatly with butcher's twine. This cut is less expensive than a rack and more flavorful-and when roasted with potatoes, it's practically a one-pan meal.

1 bunch scallions, light-and dark-green parts only, cut into 2-inch pieces
1 bunch curly parsley, thick stems removed (2 lightly packed cups), plus more for serving
1 tablespoon finely grated lemon zest (from 2 lemons), plus 2 tablespoons fresh juice
1/2 cup salted roasted pistachios
4 tablespoons extra-virgin olive oil, divided
Kosher salt and freshly ground pepper
2 tablespoons coriander seeds
2 tablespoons cumin seeds
2 tablespoons mustard seeds
3 tablespoons minced garlic (from 1 head)
1 boneless leg of lamb (2 1/2 to 3 pounds)
2 1/2 pounds unpeeled russet or Yukon Gold potatoes, cut into 3/4-inch-thick rounds
1 tablespoon chopped fresh rosemary leaves, plus a few whole sprigs
Flaky sea salt, such as Jacobsen, for serving (optional)

Steps:

  • Combine scallions, parsley, lemon zest, pistachios, and 1 tablespoon oil in the bowl of a food processor; season with kosher salt and pepper. Pulse to a chunky paste.
  • Toast coriander, cumin, and mustard seeds in a small skillet over medium heat until fragrant, 1 to 2 minutes. Transfer to a spice grinder or a mortar and pestle; coarsely grind. Stir together ground spices and garlic.
  • Pound lamb to an even 1-inch thickness and a roughly 8-by-12-inch rectangle. Generously season both sides with kosher salt and pepper, then rub all but 2 tablespoons spice mixture on outside of lamb (side with fat); turn over and spread scallion mixture evenly over other side, leaving a 1/2-inch border.
  • Starting at one long end, fold lamb in half to enclose scallion mixture; secure with twine at approximately 2-inch intervals. Let stand at room temperature at least 30 minutes and up to 2 hours.
  • Preheat oven to 425°F. In a large saucepan, combine potatoes and enough water to cover by at least 1 inch. Bring to a boil; generously season with kosher salt. Boil until potatoes are easily pierced with the tip of a knife but still firm, 5 to 7 minutes. Drain; let cool until no longer steaming, about 10 minutes.
  • Transfer potatoes to a roasting pan. Toss with remaining 3 tablespoons oil and 2 tablespoons spice mixture, and chopped rosemary; season and spread in a single layer. Place lamb on top; scatter rosemary sprigs in pan.
  • Roast 20 minutes. Reduce temperature to 350°F and continue cooking until a thermometer inserted in thickest part of lamb near center of roast registers 140°F, 35 to 45 minutes. Transfer lamb to a cutting board; loosely cover with foil to keep warm.
  • Flip potatoes and return to oven until crisp and golden brown in places, 15 to 20 minutes more. Drizzle potatoes with lemon juice. Slice lamb and serve with potatoes, sprinkled with parsley and flaky salt.

2 tbsp olive oil
70g unsalted butter
3 large onions , finely sliced
3 large garlic cloves , crushed
500g loaf sourdough bread
90g pistachios , roughly chopped
2 tbsp finely chopped sage , plus a few whole leaves
100g dried apricots , finely chopped
5 large eggs , beaten

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Heat the oil and 40g of the butter in a large frying pan over a medium heat. Add the onions and fry for 15-20 mins or until they are golden and caramelised. Add the garlic and cook for 1 min. Remove from the heat, tip into a large mixing bowl and leave to cool down a little.
  • Put half the sourdough into a food processor and blitz to a fine crumb. Tear the remaining bread into small pieces. Add both to the bowl with the onions and mix through 60g pistachios, the chopped sage, apricots and eggs, then season. Tip into a shallow 30 x 20cm baking dish. Will keep in the fridge for up to 24 hrs. Bake for 20 mins or until golden brown and crunchy on top (check after 10 mins and cover if it's already brown).
  • Melt the remaining butter in a frying pan, add the sage leaves and fry until crisp. Pour over the stuffing just before serving. Top with the remaining pistachios.

Add the rice and cook it, stirring, until it is coated with the butter. Add the broth, bring the liquid to a boil, covered, and simmer the mixture for 17 minutes, or until the liquid is absorbed and the rice is tender. Stir in the pistachios, the raisins, the scallion greens, the remaining 1/2 tablespoon butter, and salt and pepper to taste.

1 1/4 pounds lean ground beef
1 1/2 teaspoons dried mint
1/2 teaspoon dried oregano
1/4 teaspoon Maras pepper, or Aleppo
1/2 teaspoon cumin
1 teaspoon kosher salt
2 teaspoons red pepper paste (or harissa)
1 cup pistachios, toasted and ground, plus 2 tablespoons for garnish
1 large egg, separated
2 Markouk bread (Lebanese flat bread), or 3 lavash
1 tablespoon nigella seeds
1 clove garlic
1 tablespoon lemon juice
kosher salt
3/4 cup cucumber, finely chopped, about ½ of an English cucumber
2 scallion, finely chopped (mostly the white part)
2 tablespoons chopped parsley
1 cup whole-milk Greek yogurt
1/2 teaspoon dried mint
1 tablespoon extra-virgin olive oil
1/4 teaspoon freshly ground black pepper
4 leaves romaine, cut into thin ribbons

Steps:

  • Make the kebabs: In a bowl combine ground beef, mint, oregano, maras pepper, cumin, salt, red pepper paste, ground pistachios, and egg white to form a smooth mixture. Divide the mixture in half and each half into three pieces. Form each piece into a sausage shape. Have a bowl of cold water handy to dip hands into if the mixture gets sticky.
  • Wrap the kebabs: Preheat oven to 375 F. Unfold the markouk bread (it will look like a large, thin crepe). Tear away and discard the outer thick edge with your hands or a knife. Cut each markouk in half. Repeat with the remaining two markouk breads so there are 6 pieces. Make an egg wash by whisking two tablespoons of water, a pinch of salt and the egg yolk. Lightly brush a piece of markouk halfway up. Place a kebab at one end and tightly roll it lengthwise so the markout is tightly wrapped around the beef. Trim the edges and brush the seam with more egg wash so it's sealed. Place it on a parchment-lined baking sheet. Repeat with the other kebabs. Lightly brush the tops with egg wash, sprinkle with nigella seeds and bake for 12 minutes until crispy on the outside and firm to the touch. (Note: If Markouk bread gets too dry while wrapping the kebabs, just wet it lightly with water.)
  • Make the yogurt and cucumber sauce (cacik): Mince the garlic by cutting the clove in half and bringing both halves to the edge of the cutting board. Cut the garlic using the dull side of the knife to almost a mash. Then use the sharp side of the knife to continue slicing to a fine mince. Place the garlic into the lemon juice along with a pinch of salt. Chop the cucumber, scallions, and parsley and add them to the garlic. Finish by mixing in the yogurt, dried mint, and olive oil. Season with salt and set aside.
  • Assemble the dish: Slice the kebabs into 3 or 4 pieces (or keep whole). Top with pistachios, cacao, and shredded romaine. Serve.

Made these over the grill Memorial weekend - the burst of sweet-crunch the dab of raisin/nuts give in the center nicely balances the flavorful richness of the meat. They grill fast & are eaten up faster - some folks sprinkled a bit of sea salt on them but most of use thought they were perfect as is - balanced by a Fattoush salad, salty with kalamata olives & feta. Servd as appetizer - need to triple recipe next time - it was that good!

4 tablespoons vegetable oil, divided
2 teaspoons garlic, chopped
1 1/2 teaspoons gingerroot, chopped
1 lb lean ground lamb
1/4 cup panko breadcrumbs
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon curry powder
1 teaspoon paprika
1 large egg, beaten
2 tablespoons raisins (California, of course!)
2 tablespoons pistachios
6 wooden skewers, soaked in warm water (6-inch)

Steps:

  • Heat 1 tablespoon oil in small frypan and sauté garlic and gingerroot until tender.
  • Turn into mixing bowl and mix until thoroughly combined with lamb, bread crumbs, seasonings and egg. Season with salt and pepper. Chill thoroughly.
  • Chop raisins and pistachios; mix together and set aside.
  • With lightly oiled hands, take a walnut-sized piece of lamb mixture and roll into a small ball. Repeat until lamb is all rolled into balls. With little finger, press slight depression into center of each ball. ball. Fill depression with about 1/2 teaspoon of raisin-nut mixture and, then, gently work lamb mixture over raisin-nut mixture to cover completely.
  • Repeat to make 12 balls. Skewer 2 balls on each skewer. Press to elongate and flatten slightly and shape to length of skewer. Chill until ready to put on medium-hot grill.
  • To cook, heat small amount of oil in sautépan or grill over a wood or gas grill. Cook until kebabs are well-browned all over. Serve hot with your favorite chutney or Tzatziki sauce.
