Molasses Snowballs image

A wonderful and delicious change from the traditional snowball cookie, and, with only six ingredients. Easy!!

Number Of Ingredients 6

1 cup shortening
¼ cup molasses
1 teaspoon vanilla extract
2 cups all-purpose flour
2 cups chopped walnuts
½ cup confectioners' sugar

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a medium bowl, cream the shortening, molasses and vanilla until smooth. Stir in the flour and walnuts. Roll dough into 1 inch balls and place them about 2 inches apart on an unprepared cookie sheet.
  • Bake for 20 minutes in the preheated oven. Roll cookies in confectioners' sugar when cool.

1 cup butter or margarine
1/4 cup molasses
2 cups flour
2 cups walnuts -- finely chopped
powdered sugar

Steps:

  • Preheat oven to 325*F. In mixer bowl, beat butter on medium speed of electric mixer for 30 seconds. Add molasses and beat until fluffy. Add flour and beat on low speed until well blended. Stir in nuts. Using 1 tablespoon dough for each cookie, shape dough into 1-inch balls. Place on ungreased baking sheet. Bake at 325*F for 20 minutes. Remove to wire rack to cool. When cookies are cool, gently roll them in powdered sugar to coat.

1/2 teaspoon salt
2 cups chopped walnuts
Confectioners' sugar

Steps:

  • In a bowl, cream butter and molasses. Combine flour and salt; gradually add to creamed mixture. Stir in walnuts. , Roll into 1-in. balls. Place 1 in. apart on greased baking sheets. Bake at 350° for 15 minutes or until set. Remove to wire racks to cool. Roll cooled cookies in confectioners' sugar.

8 tablespoons sweet butter, softened
3 tablespoons honey
1 cup unbleached all-purpose flour
1/2 teaspoon salt
1 tablespoon vanilla extract
1 cup shelled pecans, chopped moderately fine
3/4 cup confectioners' sugar

Steps:

  • Preheat oven to 300 degrees. Grease one or two cookie sheets.
  • Cream butter. Beat in honey; gradually mix in flour and salt, then vanilla. Add pecans. Wrap dough in plastic wrap and chill for 1 hour.
  • Form balls by hand, the size of quarters. Place 2 inches apart on the prepared cookie sheets. Bake for 35 to 40 minutes.
  • Remove from oven; as soon as cool enough to touch, roll in confectioner's sugar. Allow to cool and roll again in sugar.

¼ cup butter, softened
¼ cup peanut butter
½ cup white sugar
¼ cup honey
¼ cup unsulfured molasses
1 egg
1 teaspoon vanilla extract
1 ⅓ cups all-purpose flour
½ teaspoon baking powder
¾ teaspoon baking soda
¼ teaspoon salt
¼ teaspoon ground nutmeg
1 teaspoon ground cinnamon
¼ teaspoon ground ginger
½ cup white sugar

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • In a medium bowl, cream together the butter, peanut butter and 1/2 cup white sugar until smooth. Stir in the honey, molasses, egg and vanilla. Combine the flour, baking powder, baking soda, salt, nutmeg, cinnamon and ginger. Stir the dry ingredients into the molasses mixture until well blended. Roll dough into walnut sized balls and roll the balls in the remaining 1/2 cup of sugar. Place cookies 2 inches apart onto the prepared cookie sheets. Press a criss cross into the top with a fork.
  • Bake for 8 to 10 minutes in the preheated oven. Cool on the baking sheet for 5 minutes before removing to wire racks to cool completely.

I think the concept for these was developed for camping and hiking, but I make these for my kids as a healthier alternative to sweet snacks. There are tons of possibilities for variation on almost all of the ingredient which I like a lot.

2/3 cup peanut butter or 2/3 cup other nut butter
1/3 cup blackstrap molasses, plus
2 tablespoons blackstrap molasses
1/3 cup honey
2 cups oats
3 tablespoons skim milk powder or 3 tablespoons toasted coconut
toasted sesame seeds
other dried fruit (optional) or chopped nuts, etc (optional)

Steps:

  • Thoroughly mix the first three ingredients.
  • Add the oats and coconut plus anything additional and stir to coat.
  • Form into a 1 inch round cylinder using wax paper.
  • Chill for about 30 minutes or longer and cut and roll into golf ball sized or smaller pieces.
  • Roll each ball in a dish of sesame seeds (whole or ground) to coat.
