SPICED NUTS



Spiced Nuts image

Number Of Ingredients 8

1 egg white
1/4 cup sugar
1 1/2 teaspoons ras el hanout (Moroccan spice blend)
1 teaspoon kosher salt
3/4 cup cashews
3/4 cup pecan halves
3/4 cup pistachios
3/4 cup walnut halves

Steps:

  • Preheat the oven to 250 degrees F.
  • In a bowl, whisk the egg white until thick and frothy. Add the sugar, ras el hanout and salt and stir to combine. Add the cashews, pecans, pistachios and walnuts and stir to coat with the egg white mixture.
  • Using a slotted spoon, transfer the nuts to two baking sheets. Bake until golden brown and crunchy, 25 to 30 minutes, stirring halfway. Cool and store in an airtight container for up to two weeks.

This is a good version to make with ingredients you can keep on hand. Serve with a rotisserie chicken or your own cooked chicken to give it an entirely different flavor. Rice and/or tortillas plus salad greens, sliced avocado, and chopped tomatoes round out a simple but special meal.

2 teaspoons vegetable oil
¼ cup finely chopped onion
1 tablespoon unsweetened cocoa powder
1 teaspoon ground cumin
1 teaspoon dried cilantro
⅛ tablespoon dried minced garlic
1 (10.75 ounce) can condensed tomato soup
1 (4 ounce) can diced green chile peppers

Steps:

  • Heat the oil in a medium saucepan over medium heat, and cook the onion until tender. Mix in cocoa powder, cumin, cilantro, and garlic. Stir in the tomato soup and green chile peppers. Bring to a boil, reduce heat to low, cover, and simmer 10 minutes. Transfer to a gravy boat or pour directly over food to serve.

Number Of Ingredients 8

1 large egg white
1/4 cup sugar
1 teaspoon salt
1/2 teaspoon chili powder
1/4 teaspoon ground allspice
1/2 teaspoon ground cumin
1 3/4 teaspoons cayenne pepper
2 1/2 cups pecan halves, or assorted nuts, such as cashews, walnuts, or almonds

Steps:

  • Preheat oven to 300 degrees. Beat egg white until soft and foamy. Combine all remaining ingredients except pecans; whisk into egg white. Stir in pecans until well coated; spread mixture in single layer onto an ungreased baking pan.
  • Bake pecans for 15 minutes, then remove from oven. Using a metal spatula, toss, stir, and separate nuts. Reduce oven to 250 degrees and return nuts to bake until medium brown, about 10 minutes. Remove from oven; toss, and stir again. Place baking pan on wire rack to cool (they will crisp as they cool). Break up any that stick together.

1 cup pecan halves
1 cup unblanched almonds
1 cup unsalted dry roasted peanuts
3 tablespoons butter, melted
4-1/2 teaspoons Worcestershire sauce
1 teaspoon chili powder
1/2 teaspoon garlic salt
1/4 teaspoon cayenne pepper

Steps:

  • In a large bowl, combine the pecans, almonds and peanuts. Combine butter and Worcestershire sauce; pour over nuts and toss to coat., Spread in a single layer in an ungreased 15x10x1-in. baking pan. Bake at 300° until browned, about 30 minutes, stirring occasionally., Transfer warm nuts to a bowl. Combine the chili powder, garlic salt and cayenne; sprinkle over nuts and stir to coat. Serve warm, or allow to cool before storing in an airtight container.

1 1/2 teaspoons chili powder
1 teaspoon cocoa powder
1/4 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
1/3 cup sweetened dried cherries
1/4 cup semi-sweet chocolate chips or 1/4 cup dark semisweet chocolate chunk

Steps:

  • Preheat oven to 300 degrees. Line a 9-by-13 inch baking dish with parchment and set aside. In a mixing bowl, combine the A1 sauce, walnuts, and peanuts, tossing until evenly coated with the sauce. In a small bowl, stir together the brown sugar, chili powder, cocoa powder, cinnamon, cayenne, and salt; sprinkle this spice mixture over the nuts and toss to coat evenly with the spices.
  • Transfer spiced nuts to prepared baking dish and spread out into an even layer. Roast nuts in oven for 20-25 minutes, tossing nuts every 5 minutes to ensure even roasting - when done, nuts will be golden and aromatic and sauce will be almost dry.
