- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Make the topping by mixing together 1/4 cup brown sugar, 1/4 cup white sugar, chopped walnuts and 1/2 teaspoon cinnamon. Set aside.
- In large bowl, mix together 1 cup white sugar, 1/2 cup brown sugar, flour, salt, baking soda and cinnamon. Make a well in the center, and pour in the oil, eggs and sour milk. Beat until smooth, then fold in chopped apples.
- Pour batter into prepared pan. Sprinkle with topping mixture. Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.

MAMA'S APPLE CRUMB CAKE
Apple crumb cake: a divine, four layer cake straight out of my mom's kitchen.

- Peel and grate apples. Squeeze them in batches to get the juice out, and then transfer to a medium sized bowl. Grind walnuts.
- In a large bowl, combine egg yolks and sugar. Mix with a hand mixer until completely integrated. Add lemon zest and mix again. At this point turn off hand mixer, take up a wooden spatula and start adding in flour and baking soda to the mix while integrating everything together. When it toughens, sprinkle some flour on your working area, and transfer the dough onto it. Work your dough, and add the butter in until you get a smooth, tough but soft mass. Divide into two parts.
- Take the first half of your dough and roll it out with a rolling pin until it fits the bottom of your baking pan (approximately 8.5inches x 12 inches in size). Sprinkle the pan with a little bit of flour, and transfer the dough into it. Spread grated apples over the dough evenly.
- Make the filling by mixing egg whites until stiff. Add sugar, ground walnuts, marmalade, and vanilla extract. Continue mixing until integrated. When done, pour evenly over grated apples.
- Heat oven to 350°F. Take the other half of your dough and grate over your cake. Place the baking pan in the oven and bake for 50 minutes. Turn around about half-way through. If it starts blushing, cover with foil and add a little bit of baking time at the end.
MOM'S APPLE CRUMB CAKE
I always remember my mom making this when we were having company. It's one of those cakes that tastes even better the longer it sits. She would cut it into squares and place it on a pretty plate and sprinkle it with powdered sugar. It was always one of my favorites. As a matter of fact, I'm having some friends over next week...I think I'll make this!!!! ;-)

- To make the batter:
- In a large mixing bowl, cream the butter, sugar, eggs and vanilla.
- In a separate bowl, combine the flour, salt, and baking powder.
- Alternate the dry ingredients and milk into butter mixture until well blended.
- Spread batter into greased 10 x 13 inch baking pan.
- Spread two cans of apple pie filling over batter and sprinkle with the cinnamon.
- To make the crumb topping:
- Mix flour, butter, brown sugar and cinnamon with hands and shape into a ball. Pull pieces from ball and place on top of cake. Should be enough crumbs to cover the entire top of the cake. The crumbs don't need to be perfect.
- Bake for 1 hour at 350 degrees.
- Let cool in the oven.
- Cool completely before cutting into squares. Sprinkle with powdered sugar just before serving.

- Preheat oven to 350 degrees. Grease a tube pan. Peel, core and chop apples into chunks. Toss with cinnamon and sugar and set aside. Stir together flour, baking powder and salt in a large mixing bowl. In a separate bowl, whisk together oil, orange juice, sugar and vanilla. Mix wet ingredients into the dry ones, then add eggs, one at a time. Scrape down the bowl to ensure all ingredients are incorporated. Pour half of batter into prepared pan. Spread half of apples over it. Pour the remaining batter over the apples and arrange the remaining apples on top. Bake for about 1 1/2 hours, or until a tester comes out clean.
MOM'S APPLE-CINNAMON BUNDT® CAKE
This is a heavy Bundt® cake that is not too sweet, but sweet enough to hit the spot. This my husband's all-time favorite recipe straight from his mother. I like to use baking apples sliced very thin.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a fluted tube pan (such as Bundt®).
- Mix 5 tablespoons sugar and cinnamon together in a bowl. Add apples and toss to coat.
- Mix flour, 2 cups sugar, vegetable oil, eggs, orange juice, baking powder, and vanilla extract together in a large bowl until moist and thick. Pour a little batter into the prepared pan to cover the bottom and layer with sugared apple slices. Repeat layers of batter and apples, finishing with batter on top.

MOM'S APPLE CAKE
This is the only cake my mom ever baked - she was the daughter of a confectioner and taught me nearly everything about making cakes and tarts, but she never baked anything except this cake, because it was my favorite apple cake. She also made it with plums, but you can use any fruit you like. This cake maybe is not what you expect a cake to be - in Germany it is called a baking tray - cake which means that you spread the batter onto a baking tray which makes a flat cake, more like what you would call a "bar", I suppose, with a crisp bottom.

- Peel, core and slice apples or wash, pit and half plums.
- Preheat oven to 350 ° F.
- Keep 1 tablespoon of the margarine and two tablespoons sugar.
- Knead flour, the rest of the margarine and sugar, egg, salt and baking powder until you get a soft dough.
- Spread 2/3 of the dough onto a well greased or paper lined baking tray.
- Layer with sliced apples or halved plums (they have to overlap).

MY MOM'S APPLE CAKE
When I was a kid, this was the cake that my Mom made for every potluck in my Dad's office. I remember seeing this glistening can on the cut crystal plate when Dad would go off to work and I wished that there were leftovers for me. As an adult, I make this cake for special occasions. My husband and I had a two day wedding celebration and this is the cake I gave to the restaurant to serve for dessert after the first dinner.

- Preheat oven to 325°. Well grease a baking pan. I double this recipe and use a bundt pan and grease it with shortening since it has a higher melting point. Then flour the pan.
- Get your buttermilk caramel sauce ingredients ready so the caramel is ready to be poured over the cake after you let it cool for 15 min after baking. If you're doubling the cake recipe to use a larger pan, be sure to double the buttermilk caramel sauce recipe.
- Into a very large saucepan with high sides add your buttermilk sauce ingredients. The mixture will foam a lot before it becomes caramel and cleaning this off your stove is a pain in the foot! Trust me, I'm speaking from experience. It's easier to clean a gigantic pot than the stove top.
- Sift together flour, baking soda, and cinnamon in a small bowl.
- Combine sugar, eggs, oil, vanilla extract, and OJ in a large bowl. Beat until well blended.
- Stir in flour mixture into the wet mixture and mix well.
- Fold in walnuts and apples.
- Spoon into prepared pan.
- Bake on 325° for 90 min or until the top springs back when pressed. If using more than 2 cups of apples bake longer. Right before you're ready to take the cake out of the oven, put your caramel sauce on to cook on medium-low on the stove.
- Remove cake and cool in pan for 15 minute.
- While cake is cooling for the 15 min, turn on your burner under the pot where you already prepared your buttermilk caramel sauce ingredients. Turn the burner on medium low. You're about to be in for a work-out.
- Continuously stir the ingredients as they melt and foam and come together into a really loose sauce. You don't want this to thicken a great deal. It should NOT resemble caramel like you put on ice cream. It should be more of the consistency of pancake batter. It will take approximately 15 minute See what we did there? The cake cools for 15 min while the caramel cooks!
- Poor your buttermilk caramel sauce over the cake. Poke some holes in the cake with a meat fork to help the caramel sauce get down into the cake. If you cooked the caramel too long it won't go down into the cake. It will just sit on top of the cake. Then you have to start over! But you can still eat the ruined cake over the sink. The calories don't count that way. Don't worry, we won't tell anyone.
