MOM'S BRUSCHETTA MEATLOAF

Let's hear it for Mom! The combination of ground beef, stuffing and bruschetta-style ingredients makes this meatloaf comfort food at its most delicious.

1 can (14-1/2 oz.) diced tomatoes, undrained
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 lb. extra-lean ground beef
1 egg
2 green onions, finely chopped
1/2 cup KRAFT Shredded Italian* Five Cheese Blend

Steps:

  • Heat oven to 375°F.
  • Mix tomatoes and stuffing mix. Reserve half for later use. Add meat and egg to remaining stuffing mixture; mix well. Press onto bottom of 8-inch square baking dish.
  • Combine reserved stuffing mixture and onions; spread over meat mixture. Cover.
  • Bake 45 min.; top with cheese. Bake, uncovered, 10 min. or until meatloaf is done (160ºF).

8 roma (plum) tomatoes, diced
⅓ cup chopped fresh basil
¼ cup shredded Parmesan cheese
2 cloves garlic, minced
1 tablespoon balsamic vinegar
1 teaspoon olive oil
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
1 loaf French bread, toasted and sliced

Steps:

  • In a bowl, toss together the tomatoes, basil, Parmesan cheese, and garlic. Mix in the balsamic vinegar, olive oil, kosher salt, and pepper. Serve on toasted bread slices.

1 loaf Italian bread, cut into 1-inch-thick slices on the diagonal
3 tablespoons olive oil, divided
salt and ground black pepper to taste
3 cloves garlic, minced
2 (14 ounce) cans diced tomatoes
6 eggs
¼ cup grated Parmesan cheese
1 tablespoon slivered fresh basil leaves

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Arrange bread slices on a baking sheet. Drizzle 2 tablespoons olive oil on top; season with salt and pepper.
  • Bake in the preheated oven until crisp, about 15 minutes. Remove from oven. Keep oven on.
  • Heat remaining 1 tablespoon olive oil in an oven-safe skillet over medium heat. Cook and stir garlic until fragrant, 3 to 4 minutes. Stir in tomatoes; season with salt and pepper. Simmer, stirring frequently, until breaking down into a sauce, about 10 minutes.
  • Make 6 wells in the tomatoes using a wooden spoon. Crack 1 egg into each well. Sprinkle Parmesan cheese and basil leaves on top.
  • Transfer skillet to the preheated oven; bake until whites are set and yolks are still runny, about 6 minutes.
  • Scoop 1 egg over each slice of bread using a large spoon. Spoon remaining tomatoes over the top.

1 (14 ounce) package grape tomatoes
1 tablespoon chopped garlic
2 teaspoons italian seasoning
1 tablespoon olive oil

Steps:

  • Preheat oven to temperature directed on package and bake bread.
  • Saute chopped garlic and Olive Oil over medium heat.
  • Half the Grape Tomatoes and add to Saute Pan.
  • Add Italian Seasoning
  • Allow mixture to break down to desired consistency.
  • Serve with toasted bread.
