MOM'S LEGENDARY STUFFED HAMBURGERS



Mom's Legendary Stuffed Hamburgers image

These are enormous, stick-to-your-ribs kind of burgers with a surprise in the center. A real family favorite. I like to serve them on a bun topped with sauteed mushrooms and Swiss cheese. Use extra lean or lean ground beef instead of medium because the bacon adds to the fat content of the meat.

1 small onion, chopped
4 slices bacon, chopped
fresh-ground black pepper
2 pounds lean ground beef
1 (1 ounce) envelope dry onion soup mix
4 hamburger buns

Steps:

  • Prepare a grill for medium heat. When hot, lightly oil the grate.
  • Fry the bacon in a skillet over medium heat for about 5 minutes, stirring frequently. Add onions to the pan; cook and stir until bacon is browned, but not crisp and onion is soft. Remove from the pan and drain on a paper towel-lined plate. Season to taste with black pepper.
  • In a large bowl, mix together the ground beef and onion soup mix. Divide into 8 balls and then flatten into thin patties. Place a quarter of the bacon mixture onto each of four patties. Top with the remaining patties and press the edges together to seal.
  • Grill the burgers for about 15 minutes, turning once, until well done. Serve on buns with your favorite condiments.

1 pound ground beef
2 teaspoons reduced-sodium soy sauce
2 teaspoons Worcestershire sauce
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 tablespoon butter
1/2 cup sliced green olives with pimientos, drained
1/4 cup Miracle Whip
1 tablespoon stone-ground mustard
4 hamburger buns, toasted
1/4 cup crumbled feta cheese, optional
Bibb lettuce leaves, optional

Steps:

  • In a large bowl, combine beef, soy sauce, Worcestershire, garlic powder and onion powder, mixing lightly but thoroughly. Shape into four 1/2-in.-thick patties, indenting the center slightly., Melt butter in a large nonstick skillet; cook burgers over medium heat until a thermometer reads 160°, 4-6 minutes on each side., Meanwhile, in a small bowl combine olives, Miracle Whip and mustard. Serve burgers on buns with olive mixture. If desired, top with feta cheese and lettuce.

I made these with leftover quinoa and some vegetables I had in the fridge. Super easy! Great on a multigrain bun with some tomatoes, spinach, and your favorite spread! My 2 1/2-year-old said, I love it Mommy! If necessary, while frying, flatten the burgers with the back of your spatula (but don't make them too thin).

1 ½ cups water
¾ cup dry quinoa
2 tablespoons olive oil, divided
¼ cup chopped onion
2 tablespoons chopped celery
½ cup chopped zucchini
¼ cup chopped yellow bell pepper
¼ cup chopped red bell pepper
1 teaspoon finely chopped garlic
3 tablespoons whole wheat flour, or more if needed
1 egg
salt and ground black pepper to taste
1 dash cayenne pepper
½ cup shredded mozzarella cheese

Steps:

  • Bring water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender, 15 to 20 minutes. Set aside to cool slightly, about 15 minutes.
  • Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add onion and celery; saute for 1 minute. Add zucchini, yellow bell pepper, and red bell pepper; saute until tender, 5 to 7 minutes more. Set aside to cool, about 10 minutes.
  • Mix quinoa, zucchini-pepper mixture, and garlic together in a bowl. Stir in flour; stir in egg. Season with salt, pepper, and cayenne. Mix in mozzarella cheese. Form into about 6 equal-size patties; place on a plate.
  • Heat 1 tablespoon oil in a skillet over medium heat. Fry patties until heated through and browned, 5 minutes per side.

Brisket is delicious, & this recipe takes the cake. You should have your butcher grind the brisket, if you don't have a meat grinder. Also, you can freeze any leftover brisket you have.

1 garlic cloves, minced or 1 finely sliced garlic
3 tablespoons Worcestershire sauce
tony chachere's creole seasoning, to taste

Steps:

  • Combine brisket, garlic, & Worcestershire sauce.
  • Form into 4-6 large patties. (FREEZE ANY LEFTOVERS).
  • Sprinkle patties generously with creole seasoning.
  • Grill or pan-grill until cooked through, adding more creole seasoning if desired.
  • Serve between hamburger buns with desired toppings.
