CHEESEBURGER-STUFFED ONION RINGS



Cheeseburger-Stuffed Onion Rings image

Doughnut + cheeseburger + onion ring. With special sauce for dipping. Make so many people happy with these puffy golden cheeseburger-surprise onion rings.

1/4 cup ketchup
1/4 cup mayonnaise
2 tablespoons yellow mustard
1 dill pickle, chopped
2 large yellow onions
8 ounces ground beef
1/3 cup shredded sharp Cheddar
Kosher salt and freshly ground black pepper
1 cup milk
1?4 cup vegetable oil, plus more for frying
1 teaspoon baking powder
1 teaspoon onion powder
1 large egg
1 1/2 cups all-purpose flour
1 tablespoon sesame seeds

Steps:

  • Whisk together the ketchup, mayonnaise, mustard and pickle in a small bowl (this is the special sauce).
  • Cut a 3/4-inch-thick slice off the ends of each onion. Peel and slice the onions into 1/2-inch-thick rounds. Separate the rings and set aside the 8 largest rings. Set aside another 8 rings that are about 1 inch smaller in diameter. (Reserve the remaining onion for another use.) Mix together the beef, cheese, 1/4 cup special sauce, 1 1/2 teaspoons salt and 1/4 teaspoon pepper in a medium bowl until combined.
  • Put the large onion rings on a parchment-lined baking sheet. Pack a teaspoon of the meat mixture evenly around the inside of each ring, leaving a hole in the middle. Nest a smaller ring in the middle of each to create the shape of a doughnut. Freeze until completely hard, about 1 hour.
  • Whisk together the milk, oil, baking powder, onion powder, egg, 1 cup flour and 1/2 teaspoon salt in a small bowl until smooth. Put the remaining 1/2 cup flour in another small bowl.
  • Fill a large pot with 3 inches of oil and attach a deep-frying thermometer to the side. Heat the oil to 375 degrees F. Working in batches, dredge each stuffed ring into the flour, shaking off the excess. Then dip into the batter, letting any excess drip back into the bowl. Sprinkle with sesame seeds and carefully slip into the hot oil. Fry, turning once, until the crust is golden brown, puffed and crisp, 2 to 3 minutes per side. Return the oil to 375 degrees F after each batch.
  • Transfer the cheeseburger onion rings to a paper towel-lined baking sheet. Serve with the remaining special sauce for dipping.

These are enormous, stick-to-your-ribs kind of burgers with a surprise in the center. A real family favorite. I like to serve them on a bun topped with sauteed mushrooms and Swiss cheese. Use extra lean or lean ground beef instead of medium because the bacon adds to the fat content of the meat.

1 small onion, chopped
4 slices bacon, chopped
fresh-ground black pepper
2 pounds lean ground beef
1 (1 ounce) envelope dry onion soup mix
4 hamburger buns

Steps:

  • Prepare a grill for medium heat. When hot, lightly oil the grate.
  • Fry the bacon in a skillet over medium heat for about 5 minutes, stirring frequently. Add onions to the pan; cook and stir until bacon is browned, but not crisp and onion is soft. Remove from the pan and drain on a paper towel-lined plate. Season to taste with black pepper.
  • In a large bowl, mix together the ground beef and onion soup mix. Divide into 8 balls and then flatten into thin patties. Place a quarter of the bacon mixture onto each of four patties. Top with the remaining patties and press the edges together to seal.
  • Grill the burgers for about 15 minutes, turning once, until well done. Serve on buns with your favorite condiments.

My mom made these fairly often when I was growing up. They are easy, cheap, and customizable. Recipe is easily doubled and leftovers freeze well.

1/2 pound(s) ground beef
1/2 medium onion, diced
1 pinch(es) garlic salt or seasoning salt
1 pinch(es) ground pepper
1 pinch(es) savory
2 tablespoon(s) chives
1 - pillsbury crescent sheet or roll of crescents
1 cup(s) shredded cheese
4 slice(s) bacon, cooked and chopped (optional)

Steps:

  • Preheat oven to 375*. Line baking sheet with parchment.
  • Brown ground beef and onion in a skillet. Drain.
  • If using a seamless Crescent sheet, cut dough into quarters. If using Crescent rolls, put two rolls together to form a rectangle.
  • Lightly press dough to flatten and widen. Spoon 1/4 of the beef mixture onto dough, top with 1/4 of the cheese. Fold corners and sides up to form a packet. Place folded side down on parchment covered baking sheet. Repeat with remaining ingredients.
  • Bake for 20 minutes, or until golden brown.
  • I have substituted pie crust, pizza dough, and raw bread dough (like Rhodes rolls) will equal success. OPTIONAL: The meat filling may be changed with taco seasoning, cream of mushroom soup, or any ingredients of your choice.

  • Divide the ground beef into four portions, and form patties around pineapple rings so that none of the pineapple is showing. In a small saucepan, mix together the ketchup, brown sugar, and mustard. Heat until sugar is dissolved. Set aside.

The secret is the breadcrumbs, adds that special something. Easy to cook, kids love it, and it's one of those foods that somehow tastes even better as leftovers.

1 -2 lb ground beef
garlic powder (to taste)
salt and pepper (to taste)
1 small onion (chopped)
1 medium green pepper (chopped)
2 packages kraft macaroni shells and cheese
1/4 cup butter
1/2-1 cup Italian style breadcrumbs

Steps:

  • In large skillet, cook ground beef, onion, and green pepper together, adding garlic powder, salt and pepper to taste,until beef is brown and pepper is tender.
  • Drain fat.
  • Separately, cook Shells and Cheese as per package instructions.
  • In microwave, melt butter (about 30-40 sec.).
  • Add bread crumbs, stir until well coated.
  • In med.

1/2-3/4 cup nonfat milk
8 ounces Velveeta cheese

1 green pepper, minced
1/2 medium onion, minced
1 (14 1/2 ounce) can diced tomatoes, drained
garlic salt (optional)

Steps:

  • Cook the pasta per directions.
  • Drain noodles and set heat to low.
  • Add butter and melt.
  • Add milk and stir, being sure sure it's not too hot because your milk could curdle in the heat.
  • Add cheese and stir until it melts, salt and pepper to taste. Keep on low.
  • In a separate dish, combine ground beef, pepper, onion, and garlic salt, and cook until meat is brown.
  • Turn on low and cover until pepper/onion starts to soften.
  • Add the tomatoes, cover, and let simmer for 10 minutes, stirring occasionally.

18 oz (about 2 1/2 cups) ground beef
2 teaspoons tomato ketchup
1 tablespoon teriyaki sauce
4 scallions, finely chopped
1 egg, lightly beaten
4 oz Cheddar cheese, cut into 8 small pieces
flour for dusting
vegetable oil for brushing
8 small part-baked bread rolls
tomato salsa for serving
8 romaine lettuce leaves

Steps:

  • Mix together the beef, sauces, scallions, and egg in a large bowl. With damp hands, divide the mixture into 8 balls, then shape into flat patties.
  • Insert a piece of cheese in the center of each patty. Wrap the meat around the cheese and shape into a burger. Place on a lightly floured plate and chill for 30 minutes.
  • Brush the burgers with oil and cook on a cast-iron grill-pan or under a hot broiler for 5-8 minutes on each side.
  • Meanwhile, bake the rolls according to the manufacturer's instructions. Split them in half and top the bottoms with the cooked burgers, tomato salsa, and a lettuce leaf.
  • If you are cooking on a barbecue, place the burgers on a lightly oiled barbecue grill over medium heat, so they do not burn on the outside before being cooked through. Cook for 5-8 minutes on each side.
