1 tablespoon extra-virgin olive oil
2 cups leftover roasted vegetables, such as potatoes, carrots, parsnips and onions
2 cups leftover cheeses, cut into pieces, such as Brie, Parmesan, and/or Gruyere
1/4 pound Canadian bacon or Black Forest ham, chopped
1/2 cup chopped scallions
12 eggs, at room temperature
2 cups milk, at room temperature
1 teaspoon kosher salt
1/2 teaspoon crushed red pepper flakes

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with the olive oil. Spread the vegetables in the bottom, then top with a layer of the cheeses, then the ham, and then the scallions.
  • Whisk together the eggs, milk, salt and red pepper flakes in a medium bowl. Pour the mixture over the layers and bake until lightly golden and the egg is set, about 50 minutes Allow the bake to sit for 5 minutes before cutting and serving.

1/4 cup cream-style cottage cheese
2 ounces cream cheese, softened
1 tablespoon thinly sliced green onion
1 tablespoon chopped green pepper
1 tablespoon sour cream
2 tablespoons grated Parmesan cheese

Steps:

  • Preheat oven to 350°. Cook noodles according to package directions. , Meanwhile, in a large skillet, cook beef and onion until meat is no longer pink; drain. This is a variation on the Greek spinach pie, Spanokopita. Spaghetti is used instead of filo leaves. It's easier to make and tastes great the next day.

1 (1 lb) box thin spaghetti
1 lb spinach, raw or 1 lb frozen spinach
1 tablespoon olive oil
1/2 lemon, juice and rind of
2 tablespoons olive oil
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon pepper
1 1/2 cups coarse diced onions
1 1/2 cups cooked rice
3 tablespoons seedless raisins
1/2 cup water
1 (24 ounce) container cottage cheese, of choice
2 eggs
1/2 teaspoon salt
1/2 teaspoon pepper
3/4 cup breadcrumbs
2 tablespoons melted butter
1/2 teaspoon paprika

Steps:

  • Cook spaghetti al dente, rinse, drain and set aside.
  • Cook spinach til tender; drain and place in bowl. Add 1 tblsp olive oil, lemon juice and rind to spinach; mix well, set aside.
  • Saute onions with spices in the 2 tblsp olive oil until transparent.Stir in rice, water and raisins; heat through; set aside.
  • In separate bowl, stir eggs with salt and pepper. Add cottage cheese and mix well; set aside.
  • Combine bread crumbs, paprika, butter and set aside.
  • In a 13 x 9 oiled pan, layer: 1/2 of the onions, then 1/3 of the spaghetti, next all the spinach, then 1/3 spaghetti, then all the cheese, then remaining onions, then remaining spaghetti.
  • Sprinkle on the topping.Dab on more butter if desired.
  • Bake 350 degrees, for 1/2 hour. Lay a piece of foil over top and continue to bake for another 35 minutes or til done.
  • Allow to cool/set for a half hour before cutting.
  • Top servings with dollops of yogurt if desired.

1/2 cup butter, cubed
1/4 cup all-purpose flour
1 teaspoon garlic salt

2 pounds process cheese (Velveeta), cubed
TOPPING:
1/2 cup dry bread crumbs
2 tablespoons butter, melted

Steps:

  • Cook noodles according to package directions; drain. Meanwhile, in a Dutch oven, melt butter. Stir in the flour, garlic salt and onion salt until smooth; gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Add the cheese; stir until melted. Stir in noodles. , Transfer to two greased shallow 2-qt. baking dishes. A great blend of feta, Muenster and pasta. Some may find it too mild, but we find the cheeses give it a subtle richness.

8 ounces egg noodles
4 tablespoons butter
2 eggs
8 ounces muenster cheese, shredded
6 ounces feta cheese, crumbled
1/4 cup fresh parsley, chopped
kosher salt, to taste

Steps:

  • Preheat oven to 375F; cook noodles according to package directions; drain well. Return to the (still hot) pot in which they were cooked, and toss gently but thoroughly with 2T butter.
  • Place eggs in medium bowl, beat slightly. Add cheeses and salt (if desired) and blend well. Divide in two equal parts; mix parsley into one half.
  • Place 1/2 the noodles in a buttered 9x9x2" baking pan. Spread evenly with 1/2 the cheese& parsley mixture; cover with remaining noodles, sprinkle with remaining cheese mixture (without parsley) over the top. Dot with remaining 2T butter.
  • Bake 45 minutes or until browned; may be served hot or cold.
