Recipe COCONUT COOKIES image

This is one of the easiest recipes for Coconut Biscuits that I've ever made. Quick, with simple ingredients, and not costly either.

Yield makes 30 Biscuits

Number Of Ingredients 7

125 gm Butter
1 cup Caster Sugar
2 cups Self-Raising Flour
1 Egg
1 cup Coconut
Pinch Salt
Extra Sugar

Steps:

  • In a large bowl, cream butter & sugar until light and fluffy, then beat in egg.Add sifted flour, salt & coconut, and mix well.Take teaspoonfuls of mixture, roll into balls, & press flat between hands. Dip top of each biscuit in extra sugar.Place biscuits sugar-side up on a greased oven tray, allowing room for spreading. Bake at 180 deg C for 10-15 minutes, until light golden-brown. Cool biscuits on wire rack.

¾ cup packed brown sugar
¼ cup white sugar
1 (3.5 ounce) package instant vanilla pudding mix
2 large eggs
1 teaspoon vanilla extract
2 ¼ cups all-purpose flour
1 teaspoon baking soda
2 cups semisweet chocolate chips

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a mixing bowl, cream butter and sugars. Add pudding mix, eggs and vanilla. Combine flour and baking soda; add to creamed mixture and mix well. Fold in chocolate chips.
  • Drop by teaspoonfuls onto ungreased baking sheets. Bake for 10 to 12 minutes or until lightly browned.

1 ½ cups brown sugar
1 cup white sugar
¾ cup butter, softened
2 eggs
1 tablespoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon baking powder
1 cup oats
1 cup crispy rice cereal (such as Rice Krispies®)
1 cup flaked coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat brown sugar, white sugar, and butter together with an electric mixer in a large bowl until smooth. Add 1 egg one at a time, allowing the first to blend into the butter mixture before adding the next with the vanilla.
  • Stir flour, baking soda, salt, and baking powder together in a bowl. Beat into the butter mixture until just incorporated into a dough. Fold oats, crispy rice cereal, and coconut into the dough; mixing just enough to evenly combine.
  • Drop cookie dough by teaspoonful onto baking sheets.
  • Bake in preheated oven until browned, 8 to 9 minutes. Cool cookies slightly on baking sheets before moving to cooling racks to cool completely.

1 cup butter, softened
1 cup brown sugar
1 cup white sugar
2 large eggs
1 ¾ teaspoons vanilla extract
2 cups all-purpose flour
2 ½ tablespoons all-purpose flour
¼ teaspoon salt
1 ½ teaspoons baking soda
¼ teaspoon baking powder
1 ¾ cups rolled oats
1 ¾ cups corn flake cereal
½ cup flaked coconut

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Beat butter, brown sugar, and white sugar together in a bowl until creamy.
  • Beat in eggs and vanilla extract until smooth.
  • In a separate bowl, whisk together both amounts of flour, salt, baking soda, and baking powder. Mix flour mixture into the liquid ingredients.
  • Gently mix rolled oats, corn flakes, and coconut into the dough until thoroughly combined.
  • Drop the dough by tablespoons onto baking sheets.
  • Bake in the preheated oven until the cookies are light golden brown, 10 to 12 minutes.
  • Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

1 box white cake mix
2 eggs
¼ cup vegetable oil
2 cups chocolate coconut bars, chopped

Steps:

  • Preheat oven to 350F.
  • In a large bowl, combine cake mix, eggs and vegetable oil. Beat until well mixed.
  • Stir chocolate coconut bar pieces into batter.
  • Scoop & drop cookies onto an ungreased cookie sheet.
  • Bake 8-10 minutes for smaller cookies or 10-12 minutes for larger cookies.
  • Once out of the oven, let the cookies cool completely before removing them from the cookie sheet.

1 ½ cups packed brown sugar

2 cups milk chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the butter, white sugar and brown sugar. Beat in the eggs one at a time then stir in the vanilla. Combine the flour, baking powder, baking soda and salt; stir into the creamed mixture until just blended. Finally, mix in the chocolate chips. Shape dough into golf ball sized balls and place them 3 inches apart into ungreased cookie sheets. Flatten slightly.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

1 ½ teaspoons vanilla extract

Steps:

  • In a mixing bowl, cream butter and sugar. Beat in egg and vanilla. Combine the flour, baking powder and salt; gradually add to the creamed mixture. Stir in coconut. Shape into two 3-1/2-in. rolls; wrap each in plastic wrap. Refrigerate for 2 hours or until firm. Unwrap and cut into 1/8-in. slices. Place 2 in. apart on ungreased baking sheets.
