COCONUT-OAT COOKIES

This recipe was inspired by Anzac biscuits, a popular cookie in Australia and New Zealand that is packed with coconut and oats. Oats enhance the nutty flavor and crisp-chewy texture of coconut but to make sure the coconut is the star in these cookies, I added ground and flaked coconut to the batter along with a bit of coconut extract and garnished with a sprinkling of toasted coconut.

Number Of Ingredients 10

1 1/2 cups unsweetened coconut flakes
1/2 cup granulated sugar
1 1/2 sticks (12 tablespoons) unsalted butter
1/4 cup packed dark brown sugar
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon pure coconut extract
1/2 cup rolled oats
1 cup all-purpose flour
2 ounces semisweet chocolate, chopped

Steps:

  • Position racks in the upper and lower thirds of the oven and preheat to 350˚ F. Line 2 baking sheets with parchment paper. Combine 1/2 cup coconut flakes with the granulated sugar in a blender and process until the sugar is finely ground and the coconut is in very small pieces.
  • Put the butter in a large microwave-safe bowl and microwave until melted; let cool slightly. Stir in the coconut-sugar mixture, brown sugar, salt, baking soda and coconut extract, then stir in the oats. Add the flour and 1/2 cup coconut flakes and stir to combine.
  • Scoop heaping tablespoonfuls of dough and gently shape into balls. Arrange about 2 inches apart on the baking sheets. Bake, switching the pans halfway through, until the cookies are set around the edges and the centers are puffy, 16 to 18 minutes. Let cool 3 to 5 minutes on the pans, then remove to a rack to cool completely. (For crunchy cookies, gently flatten the dough balls and bake until browned all over, 18 to 20 minutes.)
  • Put the remaining 1/2 cup coconut flakes in a medium skillet and cook over medium heat, stirring, until toasted, 5 to 7 minutes; let cool. Put the chocolate in a microwave-safe bowl and microwave in 30-second intervals, stirring, until melted and smooth. Transfer to a small resealable plastic bag and snip a corner. Drizzle the chocolate over the cookies, then sprinkle with the toasted coconut. Let the chocolate set, 10 to 15 minutes.

1 ½ cups brown sugar
1 cup white sugar
¾ cup butter, softened
2 eggs
1 tablespoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon baking powder
1 cup oats
1 cup crispy rice cereal (such as Rice Krispies®)
1 cup flaked coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat brown sugar, white sugar, and butter together with an electric mixer in a large bowl until smooth. Add 1 egg one at a time, allowing the first to blend into the butter mixture before adding the next with the vanilla.
  • Stir flour, baking soda, salt, and baking powder together in a bowl. Beat into the butter mixture until just incorporated into a dough. Fold oats, crispy rice cereal, and coconut into the dough; mixing just enough to evenly combine.
  • Drop cookie dough by teaspoonful onto baking sheets.
  • Bake in preheated oven until browned, 8 to 9 minutes. Cool cookies slightly on baking sheets before moving to cooling racks to cool completely.

From an old Tupperware cookbook.This is my family's favorite oatmeal cookie recipe. I have been making this since I was little. I give a favorite uncle this every year for Christmas. He hides them so no one else can have any. You can either sift the flour or not. If you sift it the cookies spread more. My family prefers unsifted, the cookies stay more compact & moist. I changed it a little bit, original recipe made a base cookie mix for 12 dozen cookies.

Number Of Ingredients 10

2 cups sifted flour
1 teaspoon baking soda
1 teaspoon salt
1 1/4 cups granulated sugar
1/2 cup brown sugar
2 cups quick-cooking rolled oats
1 cup shortening
3 eggs
1/2 cup milk, little more than 1/2 cup
3 teaspoons vanilla

Steps:

  • Sift flour, soda, salt & sugar together.
  • Add brown sugar, oats and shortening.
  • Mix together with pastry blender until in fine crumbs.
  • Add eggs, milk and vanilla.
  • Use your imagination. I add 1 cup chopped walnuts, 3/4 cup coconut and sometimes raisins for my hubby. You could add M & M's, chocolate chips or whatever.
  • Drop unto greased cookie sheet. Bake at 375 degrees for 15-18 minutes.

1/3 cup cane sugar
2 teaspoons vanilla extract
1 cup flour
1 cup Old Fashioned Oats
1/2 teaspoon salt
1/2 teaspoon baking soda
3/4 cup shredded sweetened coconut
1/2 cup chopped walnuts
1 1/2 cups milk chocolate chip

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, combine egg, and softened margarine.
  • Mix in the sugars and vanilla.
  • Continue mixing and add flour, old fashioned oats, salt, baking soda, coconut walnuts, and chocolate chips.
  • Scoop into small bowls and place on cookie sheet.
  • Bake for 8-10 minutes or until the edges are golden.

1 cup margarine
3/4 cup brown sugar
3/4 cup sugar
2 egg substitute (I like Ener-G egg replacer)
1 teaspoon vanilla
2 1/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/8 teaspoon baking powder
1 cup chocolate chips (I am a fan of Sunspire and Tropical Source)
1/2 cup rolled oats
1/2 cup shredded coconut
1/2 cup chopped walnuts

Steps:

  • Cream together the softened margarine, sugars, egg replacer, and vanilla.
  • In a separate bowl, mix the flour, salt, baking soda and baking powder.
  • Add this to the creamed mixture.
  • Stir in the remaining ingredients.
  • Drop by spoonful onto an ungreased cookie sheet and bake at 375° for 14 minutes.
  • Turn sheets around halfway through baking (and switch racks too, if baking more than one sheet at a time).
  • Cool well before removing from sheet.

  • In a small bowl, combine the flour, oats, baking powder, cinnamon, and salt. Whisk to combine.
  • In a stand mixer with the paddle attachment (or in a large bowl with a hand mixer) beat the butter with the brown and granulated sugars until light and fluffy at medium speed. Add the eggs one at a time until each is beaten into the mixture. Add the vanilla extract and beat until combined.
  • Reduce speed to low and slowly add the flour mixture a little at a time until incorporated. Add the raisins, coconut, and walnuts and stir until just combined.
  • Scrape the dough off the paddle and put the bowl in the refrigerator to chill 15-30 minutes (see note).
