MOM'S CRANBERRY JELL-O® SALAD
Mom made this for every holiday dinner. It goes great with turkey, of course, but also with roast beef or pork.

Steps:
- Blend water, pineapple, gelatin, and sugar together in a blender for 15 seconds. Add cranberries and blend an additional 15 seconds.
- Stir celery, walnuts, chopped orange, apple, and orange zest together in a large bowl. Pour blended pineapple mixture into celery mixture and stir until completely combined. Transfer mixture to a serving bowl, cover the bowl with plastic wrap, and refrigerate until set, 8 hours to overnight.

MOM'S WALDORF SALAD

- Whisk together the buttermilk, mayonnaise, chives, vinegar, sugar, lemon juice and 1/2 teaspoon each salt and pepper in a small bowl. Combine the walnuts, celery and apples in a separate large bowl. Pour three-quarters of the dressing over the celery-apple mixture and toss to coat. Let stand for 5 minutes at room temperature, then toss again. Adjust the seasoning as desired. Add the remaining dressing and toss again. Serve at room temperature.
CRANBERRY-ORANGE BUTTERMILK SCONES
I couldn't find this exact recipe posted, so I am posting ANOTHER cranberry scone recipe. :) My mom makes these and they always turn out moist and flaky. They are especially good if you use dried cranberries that are flavored with orange (I found them at Trader Joe's). Since I don't usually have buttermilk on hand, I combine 1 Tbsp. lemon juice plus enough milk to equal one cup and let it curdle while I am mixing the dry ingredients.

Steps:
- In a bowl, combine the flour, 1/3 cup sugar, baking powder, salt, and baking soda.
- Cut in butter till crumbly.
- Stir in buttermilk gently until just combined.
- Fold in cranberries and orange peel.
- Turn onto a floured surface and divide into two balls.
- Pat each ball into a six inch circle and place on a lightly greased baking sheet.
- Cut each into six wedges, leaving them together on the pan.
- Brush with milk, then sprinkle on the sugar combined with the cinnamon.
- Bake in a 400 degree oven for 15-20 minutes or until golden brown.
- You can also cut them into circles with a round cookie cutter, but the baking time will be less if you place them on the baking sheet not touching each other.

- Mix pineapple and sugar together in a medium saucepan, and bring to a low boil, stirring occasionally. Stir in gelatin until completely dissolved, remove from heat, and cool to room temperature. Add buttermilk, and refrigerate 1 hour, or until partially set.
- Gently fold in whipped topping. Pour mixture into a lightly oiled gelatin mold. Refrigerate 8 hours, or until completely set.

- Preheat oven to 400°F. In a large bowl, stir together all-purpose flour, whole wheat flour, sugar, baking powder, ground ginger, baking soda, and salt. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Make a well in the center of the flour mixture.
- In a small bowl, combine egg product and the 1/3 cup buttermilk; stir in dried cranberries. Add the buttermilk mixture all at once to the flour mixture. Using a fork, stir just until moistened (some of the dough may look dry).
- Turn out dough onto a floured surface. Quickly knead dough by gently folding and pressing for 10 to 12 strokes or until nearly smooth. Pat or lightly roll the dough into an 8-inch circle. Lightly brush top of dough with additional buttermilk or milk; sprinkle with oats, pressing gently into dough. Cut dough circle into 12 wedges.
- Place dough wedges 1 inch apart on an ungreased baking sheet. Bake for 13 to 15 minutes or until edges are lightly browned. Serve warm.
- *To make 1/3 cup sour milk, place 1 teaspoon lemon juice or vinegar in a glass measuring cup. Add enough milk to make 1/3 cup total liquid; stir. Let the mixture stand for 5 minutes before using.

MOM'S RAW CRANBERRY SALAD
We made this every year when I was growing up. I couldn't wait for it to mellow for a few hours; I would just dig in right away. My daughter says she has frozen this with good results. It makes a big batch.

- Wash and pick through cranberries.
- Core and quarter apples.
- Seed and quarter orange.
- Grind in food processor starting with the orange, and then add apples and cranberries. You can do in batches so you don't over process it.
- We used a hand crank grinder to make this when I was a child.
- Add sugar (in the 50's we used 2 cups of sugar, so taste after a couple hours and adjust per your personal preferences).
- Let marinate for at least 6 hours or overnight.

MOM'S CRANBERRY SALAD
This is a favorite recipe at our Thanksgiving table. My mom has made this every year for as long as I can remember. Now I make it for my family. Prep time does not include chilling in the fridge. This makes a beautiful salad. It's also great at Christmas. Put it in a mold before chilling. After plating it, garnish with fresh mint or parsley

- Combine water and sugar in pot and bring to a boil.
- Add cranberries. Cook until cranberries pop open.
- While mixture is hot, add strawberry Jell-o. Stir until combined.
- Add marshmallows. Stir until melted.
- Pour into bowl.
- Chill just until cool but not set. About 30 minutes. Your next step will be to add the rest of the ingredients. You want your apples, celery and pecans to be combined within the salad. You don't want them to sink to the bottom of the bowl. If the Jell-o mixture is too warm the ingredients will sink.
- Add apples, celery and pecans. Stir.
- Pour into mold or bowl. Chill until set.
- We usually fix this the night before so that it is ready to eat at Thanksgiving lunch.
