MOM'S HASH BROWN POTATO CASSEROLE
My mother's famous hash brown potato casserole. Easy to make one dish casserole that creamy and delicious comfort food.

- Mix together thawed bag of hash brown potatoes, ½ cup butter, salt, pepper, onions, cream of chicken soup, sour cream and cheddar cheese together. Spread into greased 9 by 13 inch casserole dish. Mix ¼ cup butter with the corn flakes, and sprinkle over potatoes. Sprinkle with paprika. Bake 350℉ (180℃) for 1 hour.

- Preheat the oven to 350 degrees F (175 degrees C).
- Mix hash browns, cream of chicken soup, Cheddar cheese, sour cream, butter, onion, salt, and pepper together in a bowl. Arrange in a 9x13-inch baking dish. Sprinkle on top. Drizzle butter over the cornflakes.
- Bake in the preheated oven until the sauce is bubbly and the top is golden brown, 1 to 1 1/2 hours.

Hash browns are usually a breakfast thing--crispy and served with eggs. I love what happens when I combine them with other ingredients and bake into a casserole, mixing all the flavors and textures into one delicious cheesy, crispy and creamy bite!

- Preheat oven to 400 degrees F. Grease a 9-by-9-inch casserole dish with the butter and set aside.
- Add the hash browns, 7 ounces (about 3 1/2 cups) of the Cheddar, the sour cream, onion, egg, paprika, cayenne and 1/4 cup of the chopped chives to a large bowl. Season with salt and pepper and stir until combined. Pour into the prepared casserole dish and top with the remaining 1 ounce (1/2 cup) Cheddar.
- Bake for 45 minutes until the casserole is heated through, browned on top and the sides become crispy. Let cool for 5 minutes. Cut into slices and dollop with more sour cream and the remaining 2 tablespoons chives.
MOM'S EASY HASH BROWNS CASSEROLE
This is a very simple and delicious recipe that is a must have at each family holiday. Mom always make two pans so we don't run out.

- Melt the butter and mix with the milk, half and half, and salt in a measuring cup.
- Spread out the hash browns in a greased 9 x 13 pan.
- Pour the liquid mixture even over the hash browns.
- Sprinkle the parmesan cheese on the top.
- Add more cheese if you want, I do!
- Bake at 350 for 60 minutes.
- Cover with foil if it gets too brown.
- Add more milk if it gets too dry.
- The number of servings depends on how much you serve, they get pretty big at our house.

- Preheat oven to 350 degrees.
- Mix everything together in a large bowl, except ingredients for the topping. Place mixture in a 9 x 13inch casserole dish.
- Melt stick of butter on medium heat and crumble crackers into a bowl. Pour in melted butter and mix until crackers are saturated with the melted butter.
- Spread butter and cracker mixture evenly ontop of hashbrown mixture.
- Cook for 40-50 mins, or until centre of casserole bubbles.
