MOM'S DATE BALLS
I can't decide if I like my mom's date ball or her date bars the best- It's a toss up. You decide. Check out both.

Steps:
- 1. Mix the first 5 ingredients in a saucepan and cook slowly over medium-low heat until thick , about 10 minutes. Remove from heat; add vanilla and cereal, mix well and let cool until you can handle it with buttered or sprayed hands. Pinch off small pieces and roll into balls and then roll into the coconut. Set aside to set. Store lightly covered.
DATE BALLS
A holiday tradition. My mother made these date balls every year at Christmas time. They may be stored in a plastic or glass container. If the weather is warm, keep them in the refrigerator. Make sure balls are cooled thoroughly before storing.

- Cook and stir dates, sugar, and margarine in a large saucepan over low heat until sugar dissolves; remove from heat. Fold crispy rice cereal, pecans, and vanilla extract into the date mixture until evenly mixed.
- Grease your hands with margarine. Roll date mixture into 1-inch balls.
- Spread confectioners' sugar into a shallow dish; roll date balls in confectioners' sugar to coat.

MY MOM'S HOLIDAY SAUSAGE HOLIDAY BALLS

- For the applesauce: Preheat the oven to 375 degrees F.
- Peel the apples, then thinly slice around the core. Place in a microwave-safe bowl and cover with plastic wrap. Microwave until the apples are tender, about 5 minutes. Place in a blender with the butter and puree. Set aside.
- For the sausage balls: Grease a rimmed baking sheet with the oil. Combine the sausage, cheese, pancake mix, chives, a big pinch of salt and a few grinds of black pepper in a large bowl and mix well. Roll into 1 1/2-inch balls (about the size of a Ping-Pong ball). Place on the prepared baking sheet in an even layer, leaving 1 inch between balls. Bake until cooked through and browned, 20 to 25 minutes. Serve with the applesauce.

- Melt butter in a medium saucepan over medium heat. Add sugar, salt and dates. Cook, stirring constantly, until mixture is smooth and thick. Remove from heat and stir in pecans, cereal and extract. Set mixture aside to cool. When cool, form into one-inch balls and roll in powdered sugar. Store in an airtight container. Big and roomy, vintage bags are terrific tag-sale finds. COCONUT DATE BALLS
There are a few classic recipes I absolutely have to pull out every Christmas, and this is one of those. These chewy balls are surprisingly crunchy and they look so pretty on a holiday candy tray.

- In a saucepan, melt butter over low heat. Stir in the dates, sugar and eggs. Cook and stir over low heat for 10-15 minutes or until thermometer reads 160°. Remove from the heat; stir in the pecans, cereal and vanilla. When cool enough to handle, shape into 1-in. balls; roll in coconut. Place on waxed paper-lined baking sheets. Refrigerate for 1-2 hours or until firm. Store in an airtight container in the refrigerator.

- 1. Mix together in skillet - Dates, butter, brown sugar and water. Cook over medium heat for 10 - 12 minutes or until thickened to a paste.
- 2. Remove from heat and add 1 tsp. vanilla
- 3. Mix in 2 cups of the rice crispies. Allow to cool to touch then roll into small balls. Roll in coconut or powdered sugar. Serving size depends on how big the balls are.
