MY MOM'S HOLIDAY SAUSAGE HOLIDAY BALLS

- For the applesauce: Preheat the oven to 375 degrees F.
- Peel the apples, then thinly slice around the core. Place in a microwave-safe bowl and cover with plastic wrap. Microwave until the apples are tender, about 5 minutes. Place in a blender with the butter and puree. Set aside.
- For the sausage balls: Grease a rimmed baking sheet with the oil. Combine the sausage, cheese, pancake mix, chives, a big pinch of salt and a few grinds of black pepper in a large bowl and mix well. Roll into 1 1/2-inch balls (about the size of a Ping-Pong ball). Place on the prepared baking sheet in an even layer, leaving 1 inch between balls. Bake until cooked through and browned, 20 to 25 minutes. Serve with the applesauce.

- Place a sheet of waxed paper on the kitchen counter.
- Place the butter and 32 of the marshmallows in a 3-quart saucepan. Heat over low heat, stirring constantly, until the mixture is smooth. Remove the saucepan from the heat.
- Stir in the food color and vanilla until the mixture is evenly colored. Stir in the cereal until it is evenly coated.
- Lightly spray your hands with cooking spray. For each ball, shape about 1/2 cup cereal mixture into a ball around 1 of the remaining marshmallows. Press the gumdrop pieces into the balls to decorate. Cool completely, about 1 hour. Store the balls in a loosely covered container.

- Mix cream cheese and cookie crumbs until blended.
- Shape into 40 (1-inch) balls; place in single layer in shallow waxed paper-lined pan. Freeze 10 min. Mix melted chocolate and food coloring until blended. Dip cookie balls, 1 at a time, in chocolate; return to prepared pan. Top with sprinkles.
- Refrigerate 1 hour or until firm.

HOLIDAY M&M'S POPCORN BALLS
Found this recipe in the Paula Deen's Holiday Baking Magazine and wanted to keep the recipe for christmas treats and gifts. The recipe is for using the microwave but this can also be made on stove top.

Steps:
- Pop the kettle corn in the microwave as directed on package. Remove unpopped kernels.
- Microwave Method:.
- In a large bowl, combine marshmallows and butter. Microwave on high in 30 second intervals, stirring between each until marshmallows are melted and smooth (about 2 minutes)
- Add popcorn, stirring to coat.
- Cool 5 minutes.
- Stir in M&M's. Let set for 5 minutes.
- Dip hands in cold water and form mixture into 10 balls.
- Store popcorn balls in individual plastic bags at room temperature.
- Stove Top Method:.
- Melt butter in a large pot and add marshmallows.
- Stir until smooth and all melted.
- Add popcorn to a large bowl and pour the melted butter marshmallow mixture over top of popcorn. Stir well to coat popcorn.
- Let cool 5 minutes.
- Add M&M's and stir well. Let stand for 5 minutes.
- Dip hands in cold water and form mixture into 10 balls.
- Store popcorn in individual plastic bags at room temperature.

- Preheat oven to 325°. In a large bowl, cream butter and confectioners' sugar until light and fluffy. Beat in water and extract. Gradually beat flour into creamed mixture. Stir in 1/4 cup crushed mints., Shape into 1-in. balls. Place 2 in. apart on ungreased baking sheets; flatten slightly. Bake until bottoms are lightly browned, 12-15 minutes., Coat warm cookies with remaining crushed mints. Cool on wire racks.

I saw this recipe on a news station segment by Mr. Food in celebration of the Run for the Roses Kentucky Derby. This will definately be on my next Christmas cookie platter. Since this contains alcohol, it is a treat only for adults who are not sensitive to alcohol.

- In a large bowl, combine wafer crumbs, 1 cup powdered sugar, cocoa and nuts and mix well.
