Smoked pork butt is a versatile piece of meat that can be cooked with potatoes and cabbage, and the leftovers can be turned into many different meals.

3 pounds boneless smoked pork butt
Water (enough to cover the pork butt)
3 tablespoons brown sugar
1 medium to large cabbage (cut into 8 pieces)
5 black peppercorns
6 medium potatoes (peeled but left whole)

Steps:

  • Gather the ingredients.
  • Place smoked pork butt in a Dutch oven or stockpot. Add water to cover and add brown sugar. Cover pot and bring to a boil.
  • Reduce heat and simmer, partially covered, for 2 hours. (A pork butt requires about 40 minutes per pound.)
  • Halfway through the cooking process (after 1 hour), add the cabbage and peppercorns. Bring back to a boil, reduce the heat, and continue to simmer.
  • About 30 minutes before the cooking time is up, add the whole potatoes. Return to a boil, reduce the heat, and continue to simmer, partially covered, until the potatoes and meat are tender.
  • Transfer the meat to a cutting board and slice. Arrange on a platter with cabbage wedges and whole potatoes.

1 smoked boneless pork shoulder butt roast (2 to 2-1/2 pounds)
1 pound fresh carrots, sliced lengthwise and halved
8 medium red potatoes. peeled and halved
2 medium onions, cut into quarters
1 large head cabbage, cut into quarters
1 large turnip, peeled and cut into quarters
1 large rutabaga, peeled, halved and sliced

Steps:

  • Place pork roast in a large Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and simmer for 1 hour. , Add the remaining ingredients; return to a boil. Reduce the heat. Cover and simmer for 1 hour or until the vegetables are tender; drain.

This is more of a traditional Irish meal than Corned Beef, likely because of beef being a more expensive dish. Pork is and always has been more prevalent.

5-7 lb Smoked Pork Shoulder
1 lb Carrot (peeled cut in 1 inch chunks)
1 each turnip (yellow, peeled and cut into 1" chunks)
1 each Head of Cabbage (cut into 6 or 8 wedges depending on size)
2 lbs. Red Bliss Potatoes (cut in ½)
1 Onion (large, cut in ¼'s)

Steps:

  • In Large stock pot, place shoulder, cover with water
  • Bring to a boil and reduce to a simmer, simmer for 2 - 3 hours with lid on, in 1 gallon water to 1lb meat. 5 lbs meat, 5 gallons of water, or cook for 1.5 hours, dump water and begin again
  • Once the meat is tender, or an internal temperature of 195, remove the meat, add vegetables. Another method is to time the cooking of meat and add vegetables towards the finishing of the meat. Remove the meat and vegetables, add cabbage to the pot because this takes up too much space to cook with everything else.
  • Cook until tender Remove vegetables, place on platter for service
  • Serve Sliced shoulder with vegetables and sauce or with whole grain mustard

New England boiled dinner is often made with a smoked ham shoulder, and that's the way we always had it at my house growing up. The flavor is incredible and makes for a DELICIOUS meal! Some people like their vegetables firm and some like them soft and tender, so cook your veggies accordingly. The cooking time for this particular recipe is 4 hrs. for an 8 lb. ham, or 5 hrs. for a 10 lb. ham. Another way of cooking veggies is, wait until ham is cooked and removed from water, then cook your veggies in the water in the kettle to the desired doneness. Sometimes I use boneless ham and add turnip and beets, just like in the photo I posted. Yummy!!

1 (8 -10 lb) smoked ham, shoulder any size (I use an 8-10 lb. ham for this amount of vegetables and cook 4-5 hrs.)
3 onions, peeled, and left whole
1 -2 cabbage, each cut into 6 wedges
8 large potatoes, peeled, and cut in half
1 lb carrot, peeled, and cut in half

Steps:

  • Place ham in a large dutch oven style kettle.
  • Cover with cold water, and fill to about 2" above top of ham. Cover kettle, and bring to a boil using high heat.
  • Turn down to med-high and let boil a few minutes, then drain water, and refill with water 2" above ham, and bring to a boil again over high heat. This method is used to make the ham less salty. (Or you may refrigerate ham overnight in water, and change water several times before cooking instead).
  • Once water comes to a boil, turn heat down to med. to med-high making sure it keeps boiling. Keep cover on kettle while cooking.
  • Add peeled onions to the kettle.
  • Cook ham 1/2 hour per pound of ham.
  • Add some water to the kettle, when it starts getting low.
  • Peel and cut potatoes and carrots.
  • Wash and core cabbage, then cut into wedges.
  • Add vegetables during the last 30-40 minutes of cooking time. Serve when veggies are tender, or to your liking.

6 cloves garlic
½ head cabbage, cut into 6 wedges
2 cups low-sodium chicken broth, as needed
12 pearl onions

Steps:

  • Place turkey ham flat-side down over a bed of baby carrots and red potatoes in a slow cooker. Drop the garlic in and place the cabbage wedges over the turkey ham. Pour enough chicken broth to cover.
  • Cook on Low for 8 hours, then stir in the pearl onions, cooking until the onions are tender, about 30 more minutes.

Originally from my mother-in-law and based on a New England dish. I've modified it over the years to fit my family's taste. The amount of vegetables can certainly be varied according to your own preference.

2 lbs pork sirloin roast or 2 lbs roast
2 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon instant garlic (not garlic salt) or 1 teaspoon garlic powder (not garlic salt)
1/4 cup dry white wine (or water)
32 ounces low sodium chicken broth
6 medium potatoes, peeled and cut in half
6 medium carrots, peeled and cut in half
2 large onions, peeled and cut in half
1 medium head of cabbage, cored

Steps:

  • Cut pork into 2 or 3 large chunks and trim extra fat. In large stock pot, saute pork in olive oil until browned on all sides. Sprinkle pork with thyme and garlic; remove to plate.
  • Deglaze pan with white wine, stirring to bring up browned bits; return pork to pot.
  • Add all other ingredients except cabbage. Bring to a boil; lower heat, cover and keep on low boil for about 2 hours or until pork starts to fall apart. This can take longer if pork simmers at a lower temperature. This is a good dish to make on cold winter days; the pork can simmer along for many hours if you'd like to hold it longer.
  • About 15 minutes prior to serving, cut cabbage into large shreds; stir into pot. (If it looks like too much, add half now and stir in more after first addition starts to wilt.) Bring to a boil and cook until cabbage wilts and is soft.
  • This makes a soupy roast, not a thickened gravy. Serve in large bowls with good bread to sop up the au jus. It's even better the second day.
  • This can be made in a crock pot, but needs to be adjusted: use less broth (only a cup or two); transfer everything to a pot when ready to add the cabbage in order to boil it down (hence, "boiled dinner"). You can skip the browning, but the flavor is not as good.

2 -3 lb rolled smoked pork butt, in casing
1 cabbage
1 pkg carrots, cleaned
6 potatoes, peeled
4 turnips or rutabaga..or both
melted butter
finely chopped parsely or finely chopped baby dill

Steps:

  • 1. Have a large soup pan of boiling water.
  • 2. Take the pork butt out of the plastic wrap and carefully remove the paper casing. Carefully place the pork butt in the boiling water and boil on low heat for about an hour.
  • 3. Place the potatoes, turnips (or Rutabaga) and carrots in. When they are almost done cooking, place cabbage in. When the potatoes, turnips or rutabaga, carrots and cabbage are finished cooking take them all out of the pan. Take the pork butt out and slice it in not too thick slices. But about 1/3". Place on serving plater, place the vegetables around the pork and pour a little melted butter and chopped parsely or chopped dill on top of the vegetables. Serve hot!
  • 4. Save the water to make a bean soup or chowder with.
  • 5. Rose Packing Co. in Illinios sells both kinds of Smoked Pork Butt, rolled or square. I call them and spoke to Rick who is here in California. It is the exact recipe they used for making the Dainty brand my Grandmother, Mom and I used. They can have a case of it sent to their supplier here and I will pick it up next Friday. I am one happy camper!
